NEWFOUNDLAND COD CAKES

Newfoundland Cod Cakes image

A dear "Newfie" friend used to make these for me and I love them. Cut back on the oil in the skillet for a skinny version. To be really authentic serve these cod cakes with baked beans. You may use left over mashed potatoes but they will produce a softer pattie. Just boil your potatoes and mash them with nothing added.

HEALTHY BAKED BEANS (VEGAN)

HEALTHY BAKED BEANS (VEGAN) image

Healthy baked beans made with simple ingredients right in your Instant Pot or Slow Cooker. It's a no-fuss recipe, just throw the ingredients in and let the cooker do the work!

Provided by Julie | The Simple Veganista

Categories     Side

Time 1h25m

Number Of Ingredients 16

1/4 cup water
1 medium onion, diced
2 teaspoons smoked paprika
1 teaspoon EACH garlic + onion powder
1 1b. dried small white beans (navy or great northern) (2 cups), rinsed and odd beans removed (not soaked)
4 cups low-sodium vegetable broth (or half water + broth)
1/3 cup pure maple syrup
1/4 cup tomato paste (use a 6oz. can for extra tomato flavor)
1/4 cup apple cider vinegar
2 tablespoons mustard (regular, dijon or whole grain)
1/2 teaspoon fresh ground pepper
2 bay leaves
1/2 - 1 teaspoon mineral salt, or to taste
Small jalapeno, seeds removed and diced (add a few seeds for extra heat)
Small green bell pepper, cored and diced
2 - 4 tablespoons unsulfured blackstrap molasses

Steps:

  • Press the SAUTE setting on your Instant Pot and add 1/4 cup water. When hot, add onion and saute for 4 minutes. Add the smoked paprika and garlic powder, cook for 1 minute, or until fragrant, stirring frequently.
  • Next add the beans, broth, tomato paste, maple syrup, apple cider vinegar, mustard, bay leaves, ground pepper and salt, gently stir until the tomato paste is dissolved completely and everything is well combined.
  • Attach the lid, and make sure the vent is in the SEALED position. Push the PRESSURE COOKER button, and manually set at HIGH for 75 minutes. When done, let the steam vent for 20 minutes. Move the vent to open, careful not to burn yourself as there may still be a little steam left. Remove lid and let cool a bit, add salt to taste. Remove bay leaves and taste for seasoning. Transfer beans to a serving dish.
  • Beans will thicken once cooled. If too thick, add 2 tablespoons of water at a time, mix well, and repeat until desired consistency.
  • In bottom of slow cooker, add the onion, beans, maple syrup, vinegar, 4 cups water/broth, tomato paste, smoked paprika, garlic powder, mustard, pepper, and bay leaves. Gently stir, until the tomato paste has broken up and dissolved.
  • Cook on HIGH for 8 - 10 hours. Check periodically, adding up to 1/2 cup more water as needed (I've used up to 1 + 1/2 cups for 8 hours). You will also want to check for doneness towards the end so the beans don't overcook. Add salt to taste.

When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. BAKED BROWN BEANS (LIGHT)

Baked Brown Beans (Light) image

Don't tell anyone about the "light" word in the title here; they won't know or care, these home baked beans are so darn good. Even people who have grown up expecting baked beans to taste like certain canned brands smack their lips over these beans. These are very little work to make aside from chopping an onion. All the time is in the cooking time, which doesn't involve you, anyway. It's just nice to know that food that is supposed to be good for you actually is. The total yield of the recipe is 6 cups (1.5 litres.)

Provided by CooksInfo

Categories     Skinny Food     Vegetables

Time 5h20m

Number Of Ingredients 12

2 cups Navy Beans (dried)
3 Bay Leaves
10 cups Water
1 teaspoon Oil
1 Onion (medium, chopped finely)
4 tablespoons Tomato Paste (low-sodium)
1 tablespoon Worcestershire Sauce
1 teaspoon Mustard Powder
1 teaspoon Salt
1 teaspoon Ground Pepper
1 teaspoon Stevia (liquid)
2 teaspoons Kitchen Bouquet

Steps:

  • Rinse the navy beans. No need to presoak for either cooking method below.
  • 1a) Pressure cooker (recommended): Put them in a pressure cooker along with the 10 cups of water, oil, and bay leaves. Put them right in -- as in, not in a steamer basket. Cook on high for 35 minutes. (In a Nutricook™, use the starch setting.) If the beans aren't soft after 35 minutes, bring them back up to pressure for another 5 minutes or so.
  • OR
  • 1b) If you don't have a pressure cooker, put the dried beans in a pot on stove with the water and bay leaves (omit oil), cover, bring to a boil, then reduce to a slow simmer. Let cook for around 2 hours until the beans are soft.
  • When the beans are cooked, right away reserve 2 cups (500 ml) of the cooking water. Drain the beans. You can freeze the rest of the broth in a tub as a rich tasting, healthy stock for future cooking (recommended), or discard.
  • Assemble in your slow cooker the 2 cups (500 ml) of bean stock, and all the remaining ingredients from the onion down to and including the Kitchen Bouquet. Stir to mix, then add the drained beans. Cook on low for 4 to 6 hours, or on high for 2 hours.

Time 8h10m

Number Of Ingredients 11

1 pound dry beans (navy, great Northern...) (2-1/3 cups)
water for soaking and precooking
1 medium onion
¼ cup pure maple syrup
⅓ cup brown sugar
2 tablespoons unsulfured molasses
2 tablespoons tomato paste (in a pinch I have substituted with ketchup)
2 teaspoons dry mustard
3 cups water (for cooking)
1 teaspoon salt
pepper to taste

Steps:

  • Rinse and sort the beans; remove any pebbles or debris.
  • Place the beans in a large bowl.
  • Fill with water to submerge the beans with at least two inches of water.
  • Soak overnight (8-12 hours).
  • The next day, transfer the drained and rinsed beans again to a large pot.
  • Re-fill with water and bring to a boil.
  • Turn down the heat and simmer for about 45 minutes.
  • Remove from heat and rinse again.
  • Transfer the rinsed precooked beans to your slow cooker.
  • Add the rest of the ingredients, stir together and place the whole onion in the center.
