1 teaspoon olive oil
2 teaspoons honey
1/4 teaspoon salt
6 cups broccoli florets, cut into bite-size pieces
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb uncooked chicken breast tenders (not breaded)
2 cloves garlic, finely chopped
1/4 cup reduced-sodium chicken broth
2 tablespoons lemon juice
1 tablespoon fresh thyme leaves

Steps:

  • Arrange oven racks in upper and lower thirds of oven. Heat oven to 375° F.
  • In large bowl, mix 1 teaspoon olive oil, 2 teaspoons honey and 1/4 teaspoon salt. Add broccoli; toss until evenly coated. Place on ungreased 15 x 10 x 1-inch pan; place in oven. Immediately reduce heat to 325° F. Bake 20 to 25 minutes or until tender when pierced with knife.
  • Meanwhile, in medium bowl, mix 1 teaspoon olive oil, 1/4 teaspoon salt and the pepper. Add chicken; toss to coat.
  • Heat 12-inch ovenproof skillet over medium-high heat. Sear tenders in skillet 4 to 5 minutes or until browned on bottom. Turn over tenders, top with garlic and chicken broth; transfer to oven. Roast 10 to 15 minutes or until instant-read thermometer inserted into thickest part of chicken reads 165° F. Carefully remove pan from oven, being mindful of hot handle.
  • Divide broccoli and chicken among 4 plates. Spoon pan juices and garlic over chicken and broccoli; drizzle lemon juice on top. Sprinkle with fresh thyme.

1 tablespoon extra-virgin olive oil
1 tablespoon chopped garlic
1 ½ teaspoon lemon juice
½ teaspoon lemon zest
rounded ¼ teaspoon salt
Freshly ground pepper to taste

Steps:

  • Bring 1 to 2 inches of water to a boil in a large saucepan fitted with a steamer attachment. Add broccoli, cover and steam until crisp tender, 3 ½ to 4 1/2 minutes.
  • Meanwhile, heat oil and garlic in a medium skillet over medium heat, stirring occasionally. Cook until the garlic is fragrant and just starting to brown, 30 to 90 seconds. Scrape garlic mixture into a large bowl. Immediately add lemon juice. Add lemon zest, salt and pepper.
  • Stir broccoli into the lemon mixture and stir to coat. Serve hot.

2 teaspoons fresh lemon juice
2 tablespoons water
3 tablespoons butter
2 cloves garlic, minced

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
  • While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. 1/4 cup low sodium soy sauce (or use gf soy sauce*)
1/2 cup chicken broth*
1 tablespoon cornstarch
2 tablespoons mirin
1 tablespoon sugar
2 teaspoons sesame oil
1/4 teaspoon white pepper
1 tablespoon canola oil (divided)
1 tablespoon minced garlic
1 tablespoon minced ginger
1 pound chicken breast (sliced very thinly)
2 cups broccoli florets
sesame seeds as garnish (if desired)

Steps:

  • In a large measuring cup or bowl add the soy sauce, chicken broth, cornstarch, mirin, sugar, sesame oil and white pepper and whisk until everything is completely dissolved.
  • In a large skillet add one teaspoon canola oil on medium high heat and cook half the chicken until just cooked through, about 2-3 minutes on each side.
  • Repeat with the second half of the chicken and an additional teaspoon of oil.
  • Remove the chicken to a plate.
  • Add in the remaining oil, garlic and ginger and cook for 30-45 seconds until very fragrant but not browned.
  • Stir the garlic and ginger well and add in the sauce, whisking well.
  • Add in the broccoli and let the sauce cook for 2-3 minutes until thickened.
  • Add in the chicken and stir well to coat.
  • Garnish with sesame seeds if desired.

Salt and pepper
1 tablespoon oil
4 cloves garlic, finely minced or pressed
1/2 teaspoon dried basil
2 1/2 cups water
2 cups low-sodium chicken broth
Zest of two lemons, about 1 tablespoons
1/3 cup freshly squeezed lemon juice (from about 2 lemons, use the same ones you just zested)
12 ounces penne pasta (see note)
2-3 cups chopped fresh broccoli florets
3/4 cup milk
1 tablespoon cornstarch
1/2 cup freshly grated Parmesan cheese

Steps:

  • 1.Pat the chicken dry with a paper towel and season well with salt and pepper. Heat the oil in a large, 12-inch nonstick skillet over medium heat until the oil is hot and rippling. Add the chicken and saute, stirring frequently, until the chicken is browned and cooked through. Remove the chicken to a plate, keeping as much oil/liquid in the skillet as possible. 2.Keep the skillet on medium heat and add another teaspoon of oil if needed. Add the garlic and basil and stir constantly for about 30 seconds. Add the water, broth, lemon juice and pasta. Stir to combine. 3.Bring the mixture to a simmer and cook, stirring occasionally just to keep the pasta from sticking, for 10-12 minutes until the pasta is tender - it will cook for a few more minutes in the next step. 2 teaspoon olive oil
1 pound chicken breasts, cut into bite-size pieces (boneless, skinless)
Juice of 1 lemon
6 cups broccoli, cut into florets, I used a (12 oz) bag
1 (12oz) bag broccoli slaw, see shopping tips
1 cup snap peas or Chinese pea pods, sliced
1 cup red bell pepper, chopped
1 cup scallions, sliced
3 tablespoons water
2 tablespoons ginger (from a jar), see shopping tips
2 tablespoons fresh garlic, chopped
¼ teaspoon crushed red pepper flakes
¼ cup reduced-sodium soy sauce (for gluten-free, use Tamari soy sauce)
3 tablespoons brown sugar (for Paleo, leave out sugar and add a little honey or stevia )
¼ cup rice vinegar, see shopping tips

Steps:

  • Coat a large nonstick pan or wok with cooking spray. Add 1 teaspoon oil. Add chicken and squeeze the juice of 1 lemon over the top. Cook over medium-high heat, stirring often until chicken is completely cooked, about 4 minutes. Remove from pan and add to a plate. Set aside.
  • Coat the same nonstick pan with more cooking spray. Heat 2 teaspoons oil in pan. Add all the veggies and water. Stir-fry for about 3 minutes until broccoli softens. I use regular olive oil as I haven't found the "O Olive Oil" called for in the recipe yet - but posted it as written. Also like to sprinkle with a little (light) bit of freshly shredded/grated Parmesan cheese for a nice twist.
