GRILLED PIZZA
Steps:
- In a medium bowl combine the flour, baking powder and salt and whisk well.
- Add the yogurt and mix with a fork or spatula until well combined, it will look like small crumbles.
- Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 20 turns (it should not leave dough on your hand when you pull away).
- Clean and preheat the grill on high heat, covered.
- Working one at a time, divide into 4 equal balls about 3-3/8 oz each.
- Sprinkle a work surface and rolling pin with a little flour roll the dough out into thin ovals.
- Oil the grates of the grill then add the pizza dough directly to the grill.
- Cook, covered 1 to 1 1/2 minutes on each side until grill marks appear on both sides.
- Spread 1 tablespoon pizza sauce over each crust. Top each with 1 ounce of cheese.
- Put it back on the grill covered until the cheese is melted and bubbling, about 1 minute.
- Top with fresh arugula, salt and pepper and eat right away.
- To make this in the oven, bake the dough 450F 10 to 12 minutes turning halfway before adding the sauce and cheese.

- In medium bowl, dissolve yeast in warm water. Stir in flour, sugar, salt and oil. Stir with fork until dough forms. Turn dough onto lightly floured surface; knead 12 times. Return to bowl. Cover; let rest 20 minutes.
- Heat oven to 425°F. Spray large cookie sheet with cooking spray; sprinkle with the cornmeal. Gently push fist into dough to deflate. Spray hands with cooking spray; press dough into 15x10-inch rectangle on cookie sheet.
- Bake 8 minutes. Spread pizza sauce over partially baked crust to within 1/2 inch of edge. Top with mozzarella cheese, chicken, tomatoes, olives and feta cheese.
- Bake 10 to 15 minutes longer, or until cheese is melted and edges of crust are golden brown. Sprinkle with basil.

- Greek Marinade: Whisk together all of the Greek Marinade ingredients in a large freezer bag and add chicken. Marinate 4 hours up to overnight.
- Blender Tzatziki Sauce: Meanwhile, slice cucumber in half lengthwise and scrape out the seeds using a teaspoon. Roughly chop cucumber and add to blender along with all remaining Tzatziki Sauce ingredients and blend until smooth. Add milk, a teaspoon at a time if needed to reach desired consistency. Refrigerate. (Best if chilled at least 1 hour.)
- Chicken: When ready to make Flatbread Pizzas, remove chicken from fridge and let sit at room temperature 20-30 minutes (you can prep your toppings during this time). Heat one tablespoon olive oil in a large non-stick skillet over medium high heat. Once very hot, drain chicken from marinade, pat dry and add to skillet. Cook undisturbed for 3-4 minutes, or until nicely browned on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 5-7 more minutes (depending on thickness of chicken), or until chicken is cooked through. Remove to cutting board and let rest 5 minutes before chopping into bite size pieces.
- Bake and Assemble: Meanwhile, heat oven to 375 degrees F. Place 2 Flatout Flatbreads on a cookie sheet and bake for 2 minutes. Remove from oven.
