Steps:
- 1. In a small saucepan, whisk together glaze ingredients and bring to a boil. Simmer for about 10 minutes, then cool. It will thicken some as it cools.
- 2. Preheat oven to 350 degree F. Grease a baking dish or small roaster. In a large bowl, mix all ham loaf ingredients until thoroughly blended.
- 3. Pour out meat mixture into prepared baking dish and shape into a loaf as you would a meatloaf. Brush the top of loaf with glaze. Place in oven and bake for 1 hour and 10 minutes, glazing several times during baking process.
- 4. Remove from oven. sprinkle on the pineapple if using and drizzle with glaze. Place back into oven for another 10 - 15 minutes. I broiled the last 5 minutes.
- 5. Place onto a serving platter and slice. Serve with remaining glaze.

The holidays are deadly to a diet because of things like this! You can just keep popping one into your mouth every time you pass by till you have accidental eaten them all. I got this from a friend in Sweden. *Using the coarsest grating disc of the food processor for the ham works perfectly. After you have grated the ham use it for the cheese.

- Heat oven to 350 farenheit.
- Lightly grease jelly roll pan, 15 1/2 x 10 1/2 inch.
- Mix thoroughly the Bisquick, finely chopped, fully cooked ham, and remaining ingredients.

- Place ham on a rack in a shallow roasting pan.
- Bake at 325°F for 1 1/4 to 2 hours or until a meat thermometer reads 140°F and ham is heated through.
- Meanwhile, in a saucepan, combine 1/4 cup water, brown sugar, soy sauce, ketchup, mustard, and pineapple.
- Bring to a boil; reduce heat, cover and simmer for 10 minutes.
- Combine cornstarch and remaining water until smooth; stir into pineapple sauce.
- Bring to a boil; cook and stir for 2 minutes or until thickened.
- Serve with the ham.

Now THIS is Lancaster County cooking! This is an Amish/Mennonite specialty dish! You will NOT be disappointed! Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! - In a bowl, combine ham, pork, bread crumbs, eggs and pepper and mix well. Chill. Form into 10 balls; set aside. Drain pineapple, reserving 1/2 cup of juice. Place juice in a saucepan with sugar, vinegar and dry mustard; cook and stir over low heat until sugar is dissolved. Arrange pineapple slices in the bottom of an ungreased 13-in. x 9-in. baking dish.
