3 tablespoons vegetable or canola oil
4 cloves garlic, minced
3 Thai chiles, such as prik kee noo, or 3 serrano chiles, stemmed and thinly sliced* (See Cook's Note)
1 pound flank steak, very thinly sliced
3 shallots, thinly sliced
1 red bell pepper, stemmed, cored, seeded and cut into 1/8-inch thick slices
1/4 cup fish sauce*
2 tablespoons sweet soy sauce*
2 tablespoons black soy sauce*
1 tablespoon chili paste in soy bean oil*
1 1/2 cups chopped fresh Thai basil leaves*
1 cup whole fresh mint leaves
Serving suggestion: sticky or steamed white rice

Steps:

  • In a large skillet, heat the oil over medium-high heat. Add the garlic and chiles and cook until aromatic, about 30 seconds. Add the steak and cook, stirring frequently, for 2 minutes. Add the shallots and bell pepper and cook for 1 minute. Add the fish sauce, sweet soy sauce, black soy sauce and chili paste. Bring the mixture to a low simmer and cook, stirring frequently until the meat is cooked through and the vegetables are tender, about 3 minutes. Remove the skillet from the heat and stir in the basil and mint until wilted. Transfer to a serving dish and serve over steamed white rice.

1 red bell pepper, cut into 1/8-inch-thick slices
1/4 cup fish sauce
2 tablespoons sweet soy sauce
2 tablespoons black soy sauce
1 tablespoon chili paste in soybean oil
1 1/2 cups chopped fresh Thai basil leaves (or regular basil)
1 cup whole fresh mint leaves
White rice, for serving

Steps:

  • In a large skillet, heat the oil over medium-high heat. Add the garlic and chiles and cook until aromatic, about 30 seconds. Add the steak and cook, stirring frequently, 2 minutes. Add the shallots and bell pepper and cook 1 minute. Add the fish sauce, sweet soy sauce, black soy sauce and chili paste. Bring the mixture to a low simmer and cook, stirring frequently, until the meat is cooked through and the vegetables are tender, about 3 minutes.
  • Remove the skillet from the heat and stir in the basil and mint until wilted. Serve over rice.

1 lb ground lamb
1/2 lb ground chuck
1 large onion, minced
3/4 cup chopped flat leaf parsley
1 clove garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 1/2 teaspoons salt
1 teaspoon pepper
1 cup plain yogurt
1/2 cucumber, peeled,seeded,and diced
1/2 cup chopped fresh mint leaves
1/2 teaspoon salt
2 cloves garlic, minced
4 pita bread or 4 nane lavash bread, warmed

Steps:

  • Mix together yogurt, cucumber, mint, salt, and garlic for the cucumber-mint sauce in a small bowl and keep chilled while preparing kebabs.
  • Combine ingredients for kebabs in a bowl and mix together, squeezing with fingers to incorporate until smooth.
  • Shape the meat into 8 flat torpedo shapes, about 5-inches long by 2-inches wide.
  • Prepare grill or heat skillet.
  • Cook kebabs for 6-8 minutes, turning to cook all sides.
  • Serve 2 kebabs on each pita or lavash with cucumber-mint sauce.

1 cup fat-free plain Greek yogurt
1 cup finely chopped peeled cucumber
1 tablespoon minced fresh mint
2 garlic cloves, minced
2 teaspoons snipped fresh dill
2 teaspoons lemon juice
1/4 teaspoon salt
PITAS:
1 pound lean ground beef (90% lean)
1 small onion, chopped
1 medium Golden Delicious apple, finely chopped
1/4 cup raisins
2 teaspoons curry powder
1/4 teaspoon salt
8 whole wheat pita pocket halves

Steps:

  • In a small bowl, mix the first seven ingredients. Refrigerate until serving., In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink; crumble beef; drain. Add apple, raisins, curry powder and salt; cook until apple is tender, stirring occasionally. Serve in pita halves with sauce.

large pack mint , leaves picked, plus extra, to serve
1 garlic clove
small piece of ginger , peeled
100g natural yogurt

Steps:

  • Peel the cucumber and coarsely grate the sides, discarding the seeds. Season generously with salt. Tip into a colander or sieve and leave for 10 mins to drain, then squeeze out as much liquid as you can and tip into a bowl.
  • Tip the remaining ingredients into a mini chopper or food processor and blitz. Pour the sauce over the cucumber and stir, then chill until needed. Serve scattered with mint.

Steps:

  • For sauce: In a small bowl, stir together yogurt and cucumber. Cover and chill until serving time.
  • In a medium bowl, combine onion, jalapeño pepper, mint, cumin, garlic, and salt. Add ground beef; mix well. Form beef mixture into two 3/4-inch-thick patties.
