Time 1h

Yield 4 to 6 servings

Number Of Ingredients 22

1 tablespoon olive oil
1 yellow onion, chopped
1 red bell pepper, chopped
1 poblano pepper, chopped
1 1/2 pounds ground turkey or chicken
2 tablespoons chili powder
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon paprika
1/4 teaspoon ground cayenne
One 14.5-ounce can fire-roasted tomatoes
1 cup frozen corn kernels
1/2 cup cooked black beans, drained and rinsed
1 1/2 cups Mexican-blend shredded cheese
1 ripe avocado, pitted, peeled and sliced
5 scallions, white and light green parts only, sliced on the diagonal
3 to 4 tablespoons chopped fresh cilantro
Tortilla chips, for serving

Steps:

  • Heat the oil in a large cast-iron skillet over medium-high heat. Add the onion, red pepper and poblano and cook until softened, about 5 minutes. Add the ground turkey and cook, breaking apart with the back of a wooden spoon, until no pink remains, about 10 minutes. Add the chili powder, salt, garlic powder, onion powder, oregano, cumin, red pepper flakes, paprika and cayenne and stir to combine. Add the fire-roasted tomatoes, corn and black beans and bring to a simmer, then reduce the heat to low and simmer until the liquid has reduced slightly, about 10 minutes.
  • Sprinkle the cheese over the top of the skillet, then cover and turn the heat off. Let sit for a few minutes for the cheese to melt from the residual heat.
  • Serve right from the skillet with garnishes of avocado, scallions and cilantro and with tortilla chips alongside.

SKILLET TACO SUPREME

Skillet Taco Supreme image

Here's a great go-to recipe for you! It's surely one for me! Especially with the hurried holiday shopping and cold evenings, this will warm you and your family and you can be home in plenty of time to fix dinner. This doubles and triples nicely. Feel free to use a mixture of beef and pork. I sometimes roll this up in a tortilla and sometimes I leave out the broken chips and use WHOLE chips to scoop up the goodness.

Provided by FLUFFSTER

Categories     Pork

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 lb lean pork or 1 lb beef, cut into cubes
1 tablespoon olive oil
1 (16 ounce) can refried beans
1 cup salsa (home made or your favorite bottled)
1 (4 ounce) can diced green chilies
2 large tomatoes, diced
2 cups broken tortilla chips
1 cup grated cheddar cheese
2 cups iceberg lettuce, shredded
1/2 cup sour cream
1/2 cup black olives

Steps:

  • Using a large skillet, cook the cubed pork over medium-high heat for 8-10 minutes in olive oil, until browned and partially cooked.
  • Add refried beans, green chiles, and salsa, stirring until blended. Cook until mixture reaches a near boil, then lower heat and simmer, stirring frequently to keep pork from sticking to the skillet.
  • Check the pork for doneness in 6-10 minutes(there should be no pink in the center of the cubed meat).
  • Remove from heat. Add tomatoes, chips and cheese, in that order. Cover just long enough to melt the cheese. Top with sour cream, lettuce and olives. Serve immediately.

TACO BELL STYLE CRUNCH WRAP SUPREME

Taco Bell Style Crunch Wrap Supreme image

This is a copycat recipe of Taco Bell's Crunch Wrap Supreme that is so outrageous, you have to try it.

Provided by Member 610488

Categories     One Dish Meal

Time 35m

Yield 6 serving(s)

Number Of Ingredients 19

1 lb ground beef
2 tablespoons onion flakes
1 teaspoon beef bouillon, powdered
1 teaspoon garlic powder
1 tablespoon cornstarch
1 teaspoon cumin powder
1 teaspoon mild paprika
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon cayenne powder
1/4 teaspoon sugar
3/4 cup water
6 (10 inch) flour tortillas
6 tostadas, shells warmed
1 cup sour cream
2 tomatoes, chopped
2 cups lettuce, shredded
cooking spray, for frying
1 (15 ounce) jar queso sauce (Taco Bell Salsa Con Queso Cheese Dip)

Steps:

  • In a large skillet over medium-high heat, brown the ground beef until halfway cooked. Use the spoon only to break the ground beef into chunks.
  • Remove the semi-cooked meat from the skillet and add to a food processor. Pulse until the meat is a finely ground consistency. Drain the pan of the grease that has already cooked out of the meat.
  • Add the meat back to the skillet and bring it to medium heat. Add the onion flakes, garlic powder, cornstarch, cumin, paprika, chili powder, salt, cayenne powder and sugar.
  • Cook for two minutes, stirring to evenly distribute the add-ins and then pour the water over the meat. Simmer uncovered until the meat is cooked through (10 minutes).
  • While meat is simmering, transfer eight to ten tbsp (depends on how much cheese sauce you want) of salsa con queso cheese dip into a bowl. Quickly zap in the microwave until it is liquid hot. Keep warm.
  • When ready to serve, lay out one flour tortilla and add a spoonful of the meat mixture to the center then top with a similar size spoonful of cheese dip. Top the meat and cheese mixture with a tostada shell and plop down one tablespoon of sour cream on top.
  • Add some of the tomatoes and shredded lettuce over the sour cream and then, working counter clockwise, fold the edges of the flour tortilla up over the meat, cheese, tostada, tomato, and lettuce pile. Continue to fold until it is completely wrapped and in the shape of a hexagon.
  • Heat another medium skillet over high heat and grease with some cooking spray. Fry the flour tortilla on each side until it gets a nice golden brown crust (1-2 minutes per side). While one is frying, make another wrap. Serve with a copycat Taco Bell Sauce, like red sauce, fire sauce or green sauce.

  • Heat the olive oil in a large, ovenproof skillet or Dutch oven with a tight-fitting lid over medium-high heat. Once hot and shimmering, swirl to coat the pan, then add the beef, onion, and bell pepper. Cook for 3 to 5 minutes, until the beef is browned and cooked through and the onion is beginning to soften.
  • Add the chili powder, garlic powder, cumin, oregano, salt, and pepper. Stir to coat the beef and cook 30 seconds. Add the black beans and rice. Stir to coat once more.
  • Add the salsa and 1 1/2 cups water. Stir to combine the ingredients. Bring to a gentle boil, cover, then reduce the heat and let simmer 30 minutes. Remove the lid and stir, scraping up any rice that has started to stick to the bottom of the pot. Recover and continue to let simmer with the lid on until the rice is tender, 10 to 20 additional minutes, stirring the pot every 10 minutes or so to prevent sticking. If the rice begins to dry out, splash in the remaining 1/2 cup water as needed.
  • Towards the end of the cooking time, place a rack in the upper third of the oven (about 6 inches from the top) and turn the oven to broil. Once the skillet is finished cooking on the stove, sprinkle the cheese on top, then transfer to the oven. Broil just until the cheese is melted, about 2 minutes (watch it carefully so it doesn’t burn). Serve hot with any desired toppings or spoon inside tortillas to make tacos, burritos, or quesadillas.
