MADE-OVER BLACKENED CAJUN SKILLET FRIES

3 medium russet potatoes
1 tablespoon olive oil
1 teaspoon Cajun seasoning
3 tablespoons nonfat Greek yogurt
1 tablespoon Creole mustard
Kosher salt

Steps:

  • Preheat the oven to 425 degrees F. Cut the potatoes into long wedges about 1-inch thick. Toss the potatoes with the olive oil and Cajun seasoning. Heat an ovenproof large nonstick skillet over medium-high heat and add the potatoes in a single layer. Cook, turning, until browned on all sides, about 15 minutes. Slowly add 1/4 cup water to the skillet and transfer the entire skillet to the oven.
  • Continue to cook the potatoes, turning once, until the potatoes are tender and the outsides are crisped, about 20 more minutes. Meanwhile, mix the yogurt with the mustard and a pinch salt. Serve the potatoes warm with the mustard dipping sauce.

2/3 cup sour cream
1/3 cup buttermilk
2 tablespoons distilled white or apple cider vinegar
1 medium clove garlic, minced
1 bunch dill, chopped
1 bunch chives, chopped
1/3 cup packed parsley leaves and tender stems, chopped
Kosher salt and freshly ground black pepper
1 1/2 pounds baby waxy potatoes, such as baby red bliss and/or baby Yukon Golds
1 1/2 teaspoons smoked paprika
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon brown sugar
Pinch cayenne pepper
1 tablespoon unsalted butter
2 tablespoons canola or vegetable oil

Steps:

  • In a medium bowl, stir together sour cream, buttermilk, vinegar, garlic, and two-thirds each of the dill, chives, and parsley. Season with salt and pepper. Cover and refrigerate until ready to use.
  • Boil the potatoes in salted water until fork-tender. Drain and pat dry.
  • In a small bowl, mix the smoked paprika, cumin, garlic powder, onion powder, oregano, brown sugar, cayenne pepper, and 1/2 teaspoon salt.
  • Heat butter and canola oil in a medium heavy-bottomed skillet over medium-high heat until foaming. Add potatoes to the skillet and cook, stirring, occasionally, until the skins are lightly browned and crisp, about 4 minutes. Sprinkle potatoes with the spice mixture and continue to cook, stirring, until the spices begin to blacken, about 2 minutes. Remove from heat. Season with salt, if necessary.

4 slices bacon
2 peeled and diced potatoes
⅛ teaspoon garlic salt
⅛ teaspoon seasoning salt
⅛ teaspoon black pepper
3 eggs, beaten
¼ cup shredded Cheddar cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Remove bacon slices, reserving grease. Crumble bacon and set aside.
  • Add potatoes to bacon grease and season with garlic salt, seasoned salt and black pepper. Cook until potatoes are soft.
  • When potatoes are tender, add crumbled bacon. Pour eggs over potatoes and cook until firm. Spread with cheese and cover with lid until melted.
