3 cups cheddar cheese (grated)
1 1/2 cups homemade cream of chicken soup (or 1 (10-ounce) can, storebought)
2 cups sour cream
6 tablespoons butter (melted)
1 bunch green onions (sliced)
1 1/2 teaspoons Stone House Seasoning
2 - 3 cups Corn Flakes, Ritz Crackers or Panko
1/2 cup melted butter

Steps:

  • Preheat the oven to 400º F. Lightly butter a 9x13 baking dish or spray with nonstick cooking spray.
  • Stir together the diced potatoes, half of the cheddar cheese, cream of chicken soup, sour cream, melted butter, onion, salt, pepper, and garlic in a large mixing bowl. Spread into the prepared baking dish.
  • Bake until the potatoes are fork tender, about 30 minutes and then top the hashbrown casserole with the remaining cheddar cheese. Return the hashbrown casserole to the oven until the cheese has melted.
  • Serve warm.

8 medium green onions, sliced (1/2 cup)
1 cup shredded Cheddar cheese (4 ounces)

Steps:

  • Heat oven to 350°F. Grease bottom and side of rectangular baking dish, 13x9x2 inches, with shortening.
  • In very large bowl, mix soups, sour cream, milk and pepper. Stir in potatoes and onions. Spoon into baking dish.
  • Bake uncovered 30 minutes. Sprinkle with cheese. Bake 15 to 20 minutes longer or until golden brown on top and bubbly around edges.

6 tablespoons unsalted butter (may sub half olive oil)
1/3 cup all-purpose flour
2 cups milk
2 cups low sodium chicken broth
1 tablespoon cornstarch
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
2 tablespoons chopped fresh chives (or 2 tsps dried)
2 tsp EACH chicken bouillon, dried parsley
1 1/2 teaspoons salt
1 tsp EACH onion powder, garlic powder
1/2 teaspoon pepper
2 cups freshly shredded sharp cheddar cheese
3 oz. (1 packed cup) freshly shredded Gruyere cheese ((may sub 1/2 cup Parm))
1 cup sour cream
1 cup freshly shredded sharp cheddar cheese
3 tablespoons unsalted butter (melted )
1 sleeve Ritz crackers (crushed )

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray; set aside.
  • Melt butter in a very large skillet or Dutch over medium heat (something that can fit all ingredients). Whisk in flour then cook, while stirring for 2 minutes. Reduce heat to low then gradually whisk in milk and 1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and add to skillet followed by Dijon, Worcestershire sauce, chicken bouillon and all spices/seasonings.
  • Bring sauce to a simmer, whisking constantly, until thickened. Remove from heat and whisk in cheddar until melted followed by Gruyere cheese until melted. Whisk in sour cream until blended. Stir in defrosted hash browns until completely combined.
  • Transfer hash browns to prepared baking pan and spread into an even layer. Evenly top with 1 cup shredded cheddar. Combine Ritz with melted butter and stir with a spatula until evenly coated. Sprinkle evenly over cheese.
  • Cover casserole with foil and bake at 350 degrees for 40 minutes, uncover and bake an additional 15 minutes or until hot and bubbly and cheese is melted. Turn oven to broil (without moving pan) and broil until topping is golden, 1-2 minutes, watching closely it doesn't burn.

1 (30-ounce) package frozen shredded hashbrowns
1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

Steps:

  • In a large mixing bowl, add 1/2 cup melted butter, sour cream, cream of chicken soup, salt, pepper, onion powder, garlic powder and smoked paprika. Stir well.
  • Add in thawed hash brown potatoes and the cheddar cheese and stir well to combine.
  • Transfer to prepared baking dish, and sprinkle with mozzarella cheese.

My family loves this and I make it on regular rotation, it's so easy to make just mix everything in one large bowl then bake, you may prepare the complete casserole and refrigerate until ready to bake, which makes this a perfect potluck dish! --- I have even made this using frozen french fries that I cut up into small pieces when I had no hash browns on hand and can also be made using cooked cubed potatoes --- cream of chicken soup may be used in place of mushroom soup, you may even throw in some chopped cooked ham or chicken also, I most always increase this by using two cans of soup, 1-1/2 cups sour cream and using half a 5-pound bag of hash browns --- you will love this! :)

  • Adjust oven rack to middle position and spray a 13x9-inch casserole dish with nonstick cooking spray.
  • Cook bacon over medium-low heat until crisp. Pour off all except 1-tablespoon bacon drippings, and reserve the drippings, in an airtight container, in the fridge for future use.
  • Cook the diced onions in the tablespoon of bacon drippings still in the pan over medium-low heat until translucent and softened.

Don't feel like peeling potatoes to make hash browns for breakfast? No problem, make them ahead of time and freeze until you're ready to use them. A great way to always have homemade hash browns on hand.

Steps:

  • Peel and dice potatoes. In a large bowl, toss with olive oil (just enough to lightly coat) and season with salt and pepper. Place on a baking sheet so the cubes are all in a single layer. Bake at 425 degrees F for 20-25 minutes. Stir occasionally so the potatoes brown on all sides. Make sure to keep them in a single layer while cooking, however. Remove the baking sheet from the oven and let cool. Place the baking sheet in the freezer (or transfer potatoes to two smaller baking sheets or piece of parchment if your baking sheet won't fit in the freezer). Flash freeze until frozen solid, about 30-45 minutes, then place in a zip-top plastic bag. Press out as much air as possible and zip closed. Can be kept frozen for 3-4 months. To reheat: heat oven to 350 degrees F. Place frozen potatoes on baking sheet in a single layer and cook for 10 minutes, stirring occasionally, or until heated through.
