4 center-cut pork chops
Salt and pepper, to taste
2 tablespoons canola oil
1 1/2 cups apple cider
2 tablespoons packed brown sugar
1 tablespoon whole-grain mustard

Steps:

  • Pat 4 center-cut pork chops dry with paper towel; sprinkle both sides with salt and pepper. In 10-inch skillet, heat 2 tablespoons canola oil over medium-high heat until shimmering. Cook pork chops in oil about 4 minutes on each side, or until golden brown. Remove from skillet.
  • In same skillet, add 1 1/2 cups apple cider and 2 tablespoons packed brown sugar; cook to a thick, syrupy glaze and until reduced by about half. Stir in 1 tablespoon whole-grain mustard; season with salt and pepper.
  • Pour glaze over pork chops for serving.

You only need one pan, 5 ingredients and about 30 minutes for these Stovetop Pork Chops with Apple Cider Gravy!

4 thick-cut boneless pork chops ((about 2 lbs. total))
2 teaspoons minced garlic
½ cup apple cider ((or sub with apple juice))
1 tablespoon Dijon mustard
1/3 cup heavy cream, at room temperature
Optional garnish: fresh rosemary

Steps:

  • Season pork chops liberally with salt and pepper on both sides.
  • Heat about 2 teaspoons of olive oil in a large skillet over medium-high heat for 1-2 minutes. Swirl to coat the pan. Add garlic and cook, stirring constantly, for about 1 minute.
  • Add chops to the skillet and cook for 7-9 minutes per side, or until golden brown and cooked through. The chops are done when they reach an internal temperature of 145 degrees F. Remove chops to a plate and set aside.
  • Reduce heat to low, and pour cider into the same pan. Let the cider simmer for about 1 minute, scraping the bits from the bottom of the pan as you stir. Add mustard and stir in cream.
  • Cook sauce for about 3 more minutes, stirring frequently, until thickened slightly. Spoon over chops and garnish with fresh rosemary, if desired.

4 pork chops ((approximately 8 ounces each))
salt
black pepper
2 Tablespoons vegetable oil
1/3 cup red onion (finely diced)
3 Tablespoons apple cider vinegar
1 Tablespoon cornstarch
1 1/2 cups apple cider
3 Tablespoons unsalted butter (chilled)
2 Tablespoons fresh parsley (chopped (or 1 Tablespoon dried))
2 teaspoons dijon mustard ((or spicy, brown, or stone ground))

Steps:

  • In a large, deep skillet, heat the oil over medium high heat.
  • Sprinkle both sides of the pork chops with salt and black pepper.
  • When the oil is hot, add the pork chops. Sear until browned, approximately 3 minutes.
  • Flip the pork chops and continue cooking until cooked all the way through, reaching the temperature of at least 145F in the middle.
  • Remove the pork chops. Set aside and cover.
  • In the same skillet, add oil if needed to have a total of 2 Tablespoons of oil. Adjust heat to medium.
  • When the oil is hot, add 1/2 teaspoon salt and the red onion and cook until just softened, approximately 2 minutes. While the onions are cooking, combine the apple cider vinegar and cornstarch in a small bowl to make a slurry.
  • Add the cornstarch/vinegar mixture and apple cider to the skillet. Stir and cook until the sauce is thickened, approximately 5-8 minutes.
  • Adjust the heat to low. Stir in the chilled butter until incorporated. Add the parsley and stir to combine. Season as desired with additional salt, black pepper, mustard, or cider. If too thick, add additional cider, water, or stock.
  • Add the pork chops and any juices back to the skillet. Heat the pork chops through if needed for a few minutes and serve immediately.

6 (6 ounce) boneless center-cut pork chops
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 tablespoon butter
3 cloves garlic, minced
¼ cup apple cider vinegar
2 cups apple cider
1 teaspoon Dijon mustard
1 teaspoon minced rosemary
1 pinch red pepper flakes

Steps:

  • Season pork chops with salt and black pepper.
  • Heat oil and butter in a heavy skillet over medium-high heat. Cook pork chops in the hot oil mixture until browned on both sides and pork is slightly pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pan from the heat; transfer pork chops to a plate.
  • Stir garlic into the pan and place over medium-high heat; cook and stir for 30 seconds. Pour in vinegar and scrape up any browned bits from the bottom of the pan. Add apple cider and Dijon mustard, bring mixture to a boil, and cook until sauce is reduced and thick, 3 to 4 minutes. Stir in rosemary and red pepper flakes; season with salt and black pepper to taste.
  • Return pork chops to the pan to warm slightly, 1 to 2 minutes per side.
