CLASSIC LO MEIN (NOODLES)

I love this deceptively simple dish. If you have all the ingredients, you can have a plate of delicious noodles on the table within 15 to 20 minutes, with prep included. There really isn't such a thing as a "lo mein" noodle, so don't try to find it on the shelf. You want to buy an egg noodle or pasta that's relatively thin and has some tooth. Some common names will be lo mein, chow mein, egg noodles or pancit noodles. Most markets have Japanese yaki soba noodles in the cold case, and those would work perfectly. Spaghetti or fettuccini cooked al dente and rinsed in cold water and drained in a colander will also make a great lo mein. The traditional difference between lo mein and chow mein is that lo mein is a soft noodle with some gravy, and chow mein is a crispy fried noodle tossed with or smothered in sauce. This has become very convoluted over the 200 years Chinese food has existed in America, with regional evolutions. Another tip: Although sesame oil is a fat and you would assume it should be used to start the stir-fry, I want you to treat it like a sauce. Sesame oil has incredible aroma and flavor but burns at a low temp. Add it to a sauce instead and use a high-temp oil like canola or peanut for cooking.

Number Of Ingredients 12

3 tablespoons (45 ml) oyster sauce
1 teaspoon sesame oil
1 tablespoon (15 ml) soy sauce
1/4 cup (60 ml) chicken stock
1 tablespoon cornstarch
3 tablespoons (45 ml) cooking oil, such as canola or peanut oil
2 teaspoons (10 grams) minced garlic
1 1/2 tablespoons (11 grams) thinly sliced ginger
1/2 pound (250 grams) boneless, skinless chicken breast or thigh, thinly sliced
3 cups (750 grams) fresh lo mein noodles (see Cook's Note)
1/4 pound (125 grams) baby bok choy, bottoms removed
3 scallions, cut into 1 1/2-inch (4-cm) pieces

Steps:

  • To make the sauce, stir together the oyster sauce, sesame oil, soy sauce, chicken stock and cornstarch in a small bowl and reserve.
  • Heat a wok or large, heavy-bottomed skillet over high heat and add the cooking oil. Once you see wisps of white smoke, add the garlic and ginger and cook, stirring, until light brown and fragrant, about 20 seconds. Add the chicken and cook, stirring, until medium, about 1 minute.
  • Stir in the noodles and bok choy and cook, stirring and tossing, until the bok choy starts to soften and turn bright green, about 1 minute.
  • Stir in the sauce; allow the sauce to coat all the ingredients and start to simmer, about 1 more minute.
  • Cook, stirring and tossing, until the chicken is cooked through, about 1 more minute, and the sauce starts to bubble into a glaze. Top with the scallions and serve hot.

2 quarts water
1 tablespoon chicken bouillon granules
1 package (16 ounces) thin spaghetti
1 tablespoon reduced-sodium soy sauce
1 tablespoon reduced-sodium teriyaki sauce
1-1/2 teaspoons Chinese five-spice powder
1/8 teaspoon white pepper
1/4 cup canola oil
1/2 cup thinly sliced onion
1 cup fresh snow peas
1/2 cup chopped green onions

Steps:

  • In a Dutch oven, bring water and bouillon to a boil. Add spaghetti. Return to a boil; cook, uncovered, for 6 minutes or until almost tender. Drain, reserving 1/2 cup cooking liquid. Add soy sauce, teriyaki sauce, five-spice powder and pepper to reserved liquid; set aside. Set spaghetti aside., In a large nonstick skillet or wok, heat oil until hot. Add onion and saute for 2 minutes. Add peas; saute 2 minutes longer. Stir in reserved spaghetti. Add reserved soy sauce mixture to pan. Simmer, uncovered, for 3-4 minutes or until liquid has evaporated. Sprinkle with green onions.

Skillet Lo Mein image

This is a very versatile recipe since you can throw in just about anything! My favorite way to use this is with chicken but you can also use ground beef, steak strips, pork, shrimp etc. For the stir-fry veggies, I just get them from the produce section.

1 lb chicken, cut into strips
3 tablespoons sesame oil, separated
1 (16 ounce) package stir fry vegetables
1 medium onion, diced
2 stalks celery, sliced thin
2 garlic cloves, minced
2 cups beef broth
2 tablespoons soy sauce
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
1 tablespoon cornstarch
2 teaspoons grated fresh ginger
8 ounces thin spaghetti
1 green onion, sliced

Steps:

  • Brown meat in one T of the sesame oil, then remove to paper toweling to drain.
  • Add remaining 2 T of sesame oil to the pan and saute onions, celery, stir-fry veggies and garlic for 5 minutes.
  • Meanwhile, in a medium bowl, whisk together the broth, soy sauce, oyster sauce and hoisin sauce; pour over the veggies in the skillet.
  • Add the meat back in, along with the grated ginger.
  • Bring to boil; break spaghetti in half, and add to the skillet.
  • Stir in noodles, cover and cook for 15-20 minutes, stirring about halfway through.
  • When serving, top with sliced green onions.

Fantastic Skillet Beef and Broccoli Lo Mein image

No need for a wok to make this, I have made this recipe using packaged stir-fry strips from the grocery store it makes it so much easier, reduce the broccoli slightly and throw in some pea pods too! Prep time does not include cooking the pasta, this is very good!

1 -2 teaspoon dark sesame oil
1 -2 tablespoon peanut oil
1 tablespoon minced fresh ginger
2 tablespoons fresh minced garlic
1 -2 teaspoon dried chili pepper flakes (or to taste)
3 -4 cups fresh broccoli (cut in florets)
1 large onion, sliced (do not use sweet onion)
1 1/2 lbs flank steaks (cut thinly into long strips)
3 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon oyster sauce
1 tablespoon chili paste with garlic
black pepper (optional)
hot cooked spaghetti (or use a thick Asian noodle)

Steps:

  • Combine the cooked pasta and sesame oil; toss well to combine.
  • Heat the peanut oil in a large skillet over medium-high heat.
  • Add in ginger, garlic and dried chili flakes; saute for about 1 minute.
  • Add in the broccoli and onion slices; saute for 3 minutes.
  • Add in steak slices; saute for about 4-5 minutes or until cooked.
  • Add in the cooked pasta/sesame oil mixture along with the soy sauce, brown sugar, oyster sauce and chile paste; cook stirring for 1-2 minutes or until the lo mein is heated through.
  • Season with black pepper if desired.
