Steps:
- Preheat oven to 350 degrees.
- In a mixing bowl, cream together butter and sugar.
- Add eggs, one at a time, beating well after each addition. Beat in molasses.
- Combine the flour, baking soda, salt and spices; gradually add to creamed mixture.
- Refrigerate for 30-40 minutes, or until dough is easy to handle.
- Roll dough into 1-inch balls, then roll in sugar.
- Place 2 inches apart on lightly greased or parchment lined baking sheets.
- Bake for 8-10 minutes, until cookies are lightly browned and cracked on top. Cool one minute before removing to wire racks.

- In a microwave, melt butter and chocolate; stir until smooth. Beat in brown sugar and corn syrup until blended. Beat in egg. In another bowl, whisk flour, baking soda, spicy chocolate cinnamon sugar and salt; gradually beat into brown sugar mixture. Refrigerate, covered, until firm, about 1 hour., Preheat oven to 350°. In a shallow bowl, mix confectioners' sugar and cinnamon. Shape dough into 1-1/2-in. balls; roll in confectioners' sugar mixture. Place 2 in. apart on greased baking sheets. , Bake until cookies are set and tops are cracked, 10-12 minutes. Cool on pans 2 minutes. Remove to wire racks to finish cooling.

SPICED NUTTY COOKIE CRACKLE
These paper thin cookie cakes redefine what a brownie can be. They are not too sweet, and very chocolaty, with a bit of a spice kick to them. These are definitely an adult treat, great with coffee or a cup of tea. Remember, do not grease or butter the baking pan, as the proportion of butter to flour is so delicately balanced, that added fat on the pan can cause the batter to split; besides, these cookies never stick! These are worth making.

- Set oven to 375°F.
- Prepare an ungreased non-stick 10x15-inch jellyroll pan.
- In a large saucepan over medium heat, melt the butter.
- Add in the chocolate, ginger, cinnamon and black pepper.
- Remove from the heat, and stir until the chocolate has melted.
- Stir in the sugar, vanilla and egg until smooth.
- Stir in the flour; beat well.
- Pour, and scape the batter into an UNGREASED prepared jellyroll pan, and tilt the pan back and forth, allowing the batter to flow into a thin even layer across the pan.
- Scatter the ground nuts evenly over the top.
- Bake for 10 minutes, or until the layer is JUST set.
- Remove from the oven; cool on a rack for 20 minutes.
- Cut or break into 2 dozen rough-shaped pieces (as you would the same for nut brittle).

- Place crackers in a single layer in a foil-lined 15x10x1-in. baking pan. In a saucepan over medium heat, melt butter. Add sugar; bring to a boil, stirring constantly. Boil for 2 minutes. CHOCOLATE CRACKLE
Quick and easy candy dish! Using saltine crackers believe it or not! We went to a party and this was a dish to pass -- that disappeared first! (If you like Heath bars, you'll love this recipe!)

- Preheat oven to 400°F.
- Line a baking pan with aluminum foil.
- Lay the saltine crackers in the pan (single layer), you may not use the whole pkg depending on the size of the pan.
- Sometimes I have 3-6 crackers left over.
- In a saucepan melt the butter and sugar together.
- Bring to a boil.
- When comes to a boil, pour over the crackers.
- Put cracker pan in oven and bake for 10 minutes (DO NOT OVER BAKE-- EXACTLY 10 MIN).
- It will caramelize a little.
- Remove from oven and sprinkle the chocolate chips over the top.
- When the chips begin to melt spread to the edges of the pan.
- Cool completely.
- When completely cool break randomly into small pieces (about 1 inch works well).
- This recipe is so easy and quick!
- At our house it rarely lasts more than a day--our kids and their friends beg us to make it when they come over too!

NUTTY CRISPY SUGAR COOKIES
I worked with a woman that baked 80 dozen or more cookies during the holidays. Every day she brought 1/2 dozen of every cookie she'd baked the night before; this is my favorite. I sometimes roll the dough into balls and then roll them in some granulated sugar rather than making these as drop cookies. These freeze well.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets. Stir together the flour, baking soda, cream of tartar, and salt; set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in eggs, vegetable oil, and vanilla. Gradually stir in flour mixture until smooth. Stir in nuts. Drop dough by rounded teaspoonfuls onto the prepared cookie sheets. Flatten cookies with a fork.

- Whisk all-purpose flour, whole-wheat flour, ginger, cinnamon, baking soda, cloves, and salt in a medium bowl. Set aside.
- Beat brown sugar and butter in a large mixing bowl with an electric mixer on high speed until well combined. Beat in egg and molasses. With the mixer on low speed, gradually add the flour mixture, mixing until just combined. Form the dough into a disk, about 1 inch thick, and wrap in plastic wrap. Refrigerate until firm, about 1 hour.
- Place confectioners' sugar in a shallow dish. Roll the dough into 1-inch balls (a generous 1 Tbsp. each), then roll in the confectioners' sugar to coat liberally.
