1 (12 ounce) package turkey bacon
3 tablespoons reduced-fat mayonnaise
5 green onions, minced
2 pints cherry tomatoes, halved

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy, about 10 minutes. Drain bacon slices on paper towels and chop into little bits.
  • Mix bacon with mayonnaise and green onions. Cover and refrigerate until ready to use.
  • Slice about ¼ inch off the top of tomatoes. Scoop out insides with a small metal spoon such as a melon baller or metal measuring spoon. Discard the tops and insides. Stuff each tomato with some of the bacon mixture.
  • Place tomatoes on a plate, cover, with plastic wrap, and refrigerate until chilled, 1 hour to overnight.

24 -30 cherry tomatoes
1 lb bacon, cooked and crumbled
1/2 cup mayonnaise or 1/2 cup salad dressing
1/3 cup chopped green onion
3 tablespoons grated parmesan cheese or 3 tablespoons cheddar cheese
2 tablespoons snipped fresh parsley

Steps:

  • Cut slice off tops of tomatoes.
  • Use a small (1/4 tsp) metal measuring spoon to scoop out pulp and discard.
  • Invert tomatoes on paper towels to drain.
  • Combine remaining ingredients.
  • Spoon mixture into tomatoes.
  • Refrigetate several hours.
  • Watch them disappear.

Blue cheese, for topping

Steps:

  • In a bowl, toss onion with vinegar and 1/4 tsp each salt and pepper; let sit, tossing occasionally.
  • Cook bacon in the oven or on the stovetop until crisp; transfer to a paper towel-lined plate.
  • To the bowl with the onion, add tomatoes and oil and toss to combine. Fill lettuce leaves with bacon and tomato mixture and top with blue cheese if desired.
