BUDDHA BOWLS WITH RICED CAULIFLOWER
This recipe is easily customizable for your family's tastes. Don't hesitate to swap out ingredients for other veggies that you love-try edamame instead of lima beans, carrots instead of beets, and so on.

- Heat a 12-inch nonstick skillet over medium heat. Add olive oil, riced cauliflower, and salt. Cook 5 minutes, stirring occasionally. Divide riced cauliflower evenly among 4 bowls.
- Wipe the skillet clean and return to medium heat. Add the Zucchini Veggie Spirals, cover with lid, and cook for 8 minutes. Drain any excess liquid then transfer to a plate in a single layer to cool slightly.
- Cook lima beans according to package directions. Rinse with cold water.
- Divide cooked zucchini spirals, lima beans, avocado, cabbage, and beets evenly among 4 bowls.
- For the turmeric-tahini vinaigrette, whisk tahini, lemon juice, water, garlic, honey, turmeric, salt, and pepper together in a small bowl. While whisking, slowly drizzle in olive oil. Drizzle each bowl with 2 tablespoons turmeric-tahini vinaigrette and top with sesame seeds. Serve immediately

- Toss the cherry tomatoes in the olive oil, sea salt and garlic powder in one bowl. In another toss the mushrooms and in another toss the chickpeas with their oils.

- On a baking sheet, combine chickpeas with tandoori seasoning. Mix with oil and season with a pinch salt and pepper. Bake for 10 minutes at 400°F.
- In a pan heat olive oil for the Tahini Sauce. When hot, add minced garlic and fry for 1 minute. Transfer to a bowl, mix with tahini, lemon juice, water (every tahini is different some brands a thicker, some are thinner). Start with 2 Tbsp water until you reach the desired consistency, season with a pinch of salt and pepper.
- Heat a sauce pan with a touch of olive or canola oil (or use vegetable broth for oil free cooking). Fry the garlic and carrots for 3 minutes, then add the spinach. Sauté this for about 1 minute.

- Prepare the roasted cauliflower by adding the cauliflower, oil and seasonings to a medium-sized roasting tray. Bake for 20 minutes at 200°C/ 400°F, tossing halfway through, until crisp.
- Meanwhile, stir the cumin seeds through the rice, if using. Add the rice to a large bowl or serving dish along with the washed chickpeas and sliced vegetables.
- Prepare the yoghurt dressing by mixing the yoghurt with the lime juice in a small bowl, along with a pinch of ground cumin. Add water to desired consistency.
- Add the roasted cauliflower to the buddha bowl and garnish with lime wedges, pomegranate and hemp seeds (optional). Top with the yoghurt dressing and enjoy!
