Yes, it's hard to believe how easy this creamy, veggie-packed chicken pasta is to make, or that you need only one skillet to make it, but what will surprise you most is how much your family will love it.

1 package (14 oz) chicken tenders, cut into 1-inch pieces
3/4 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, finely chopped
2 teaspoons grated lemon peel
3 cups Progresso™ chicken broth (from 32-oz carton)
8 oz farfalle (bow-tie) pasta
2 medium carrots, cut into 1/2-inch slices
2 cups trimmed 1-inch pieces asparagus (about 1 lb)
6 oz cream cheese, softened and cut into 1-inch cubes
1/4 cup grated Parmesan cheese
1 tablespoon lemon juice
1/2 cup Cascadian Farm™ frozen organic sweet peas, thawed

Steps:

  • Season chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper.
  • In 12-inch skillet, heat oil over medium heat. Add chicken; cook 5 to 8 minutes, stirring occasionally, until chicken is browned on both sides and cooked through. Remove chicken from skillet. Add onion; cook 3 to 4 minutes, stirring occasionally, until softened. Add garlic and lemon peel; cook 1 to 2 minutes or until fragrant.
  • Add broth; heat to boiling. Stir in pasta, carrots, remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper; reduce heat to medium. Cover and cook 11 minutes. Uncover; add asparagus and cooked chicken. Cover and cook 7 to 8 minutes, stirring occasionally, until pasta is al dente and asparagus is just tender.
  • Stir in cubes of cream cheese, the Parmesan cheese and lemon juice until smooth. Add frozen peas; cook 1 to 2 minutes or until peas are heated through and sauce is creamy.
  • Remove from heat; let stand 5 minutes. Sauce will continue to thicken as it stands.

8 oz uncooked dried penne pasta
3 tbsp olive oil (divided )
1 lb boneless, skinless chicken (cut into 1 to 2 inch strips)
1 tsp salt
1/2 tsp pepper
1 red pepper (chopped)
1 yellow pepper (chopped)
1 orange pepper (chopped)
2 medium shallots (diced )
2 cloves fresh garlic (minced )
2 tbsp balsamic vinegar
1 tbsp lemon juice
2 tbsp fresh or dried parsley

Steps:

  • Cook penne according to the package directions. Once cooked, measure out 1/2 cup of the pasta water and set aside for later. Drain the pasta and set aside.
  • Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chicken to pan and cook for approximately 5 to 8 minutes, stirring occasionally. You want to cook the chicken until juices run clear and chicken is no longer pink. Sprinkle salt and pepper on the chicken and mix well.
  • Add red, yellow, orange peppers and shallots to pan. Cook for 4 to 7 minutes, allowing peppers and shallots to brown on edges. Add garlic and cook for 1 minute longer.

2 tablespoons olive oil
8 plum tomato (blank)s roma (plum) tomatoes, halved and sliced

Steps:

  • Bring a large pot of water to a boil over high heat. Stir in the spaghettini, and return to a boil. Cook the pasta until it has cooked through, but is still firm to the bite, about 6-8 minutes. Drain well and keep warm.
  • Heat 2 tablespoons oil in a large skillet over medium heat. Stir in the tomatoes; cook until they soften and begin to break down. Stir in the garlic powder, oregano, basil, salt, pepper, sugar, and ketchup. Heat sauce through and reserve.

1 1/2 pounds skinless, boneless chicken breasts
Kosher or coarse salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
1 teaspoon minced garlic
4 cups chicken broth, preferably low-sodium
1 package (1 pound) penne rigate or ziti
1 1/2 cups heavy (whipping) cream or half-and-half, warmed
1 cup freshly grated Parmesan, plus more for serving
1/4 cup chopped fresh flat-leaf parsley (optional)

Steps:

  • Cut the chicken breasts into 1-inch pieces. Season with salt and pepper.
  • Melt the butter in a very large skillet over medium-high heat. Add the chicken, in batches if necessary, and sauté until nicely browned on the outside, but still a bit pink inside, about 4 minutes (the pieces don't have to be browned on all sides; two sides is fine). Remove the chicken and set aside on a plate.
  • Do not clean the pan! Those brown bits on the bottom of the pan are going to add flavor to the sauce. Add the garlic to the pan and sauté over medium heat until you can smell it, 30 seconds. Turn the heat to high, add the chicken broth, and scrape the bottom of the pan to loosen up all of those delicious caramelized bits. Bring to a simmer, lower to medium heat, and simmer for 5 minutes. Add the pasta, stir well, and simmer until the pasta starts to soften, about 8 minutes. Stir in the warm cream and the browned chicken with any juices that have accumulated on the plate. Cover and simmer, stirring occasionally, until the pasta is tender, most of the liquid has been absorbed, and the chicken is cooked through, about 4 minutes more.
  • Stir in the Parmesan until well incorporated, and adjust the seasonings.
  • Transfer the mixture to a serving bowl and sprinkle with the parsley, if desired. Serve hot and pass extra Parmesan at the table.
  • Alfredo Add-Ins
  • When you add the Parmesan in Step 4, you can add any of the following to the pot, alone or in combination; stir over medium heat for another minute or two. 1 tablespoon puréed chipotles in adobo sauce 4 cups sliced mushrooms, sautéed 3 cups lightly cooked tiny broccoli florets 2 tablespoons fresh herbs, such as oregano, thyme, or parsley Or, you can serve up portions of Chicken Alfredo Pasta for those who like it plain and simple, and add proportionate amounts of any of the add-ins to the pot.

2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon paprika or smoked paprika
1 tablespoon oil
1 1/2 pounds boneless skinless chicken breasts (cut into 1/2-inch strips or pieces)
Salt and pepper
2 medium bell peppers (whichever colors you prefer, cored and diced)
1/2 cup chopped onion (white or yellow)
2 1/2 cups chicken broth (I use low-sodium)
2 1/2 cups milk (preferably not skim)
1 (15-ounce) can diced or petite-diced tomatoes, undrained
16 ounces tube-shaped pasta (see note)
1 to 2 cups shredded Monterey Jack cheese
Fresh limes (chopped chives, avocados, for serving (optional))

Steps:

  • Combine all of the fajita seasoning ingredients in a small bowl.
  • In a pot or deep skillet, heat the oil over medium heat until rippling and hot. Pat the chicken pieces dry with paper towels, season lightly with salt and pepper and add in a single layer to the pot. Sprinkle with 1 teaspoon of the fajita seasoning mixture and cook, stirring often, until no longer pink in the center, 3-4 minutes. Remove the chicken to a plate/dish and set aside.
  • To the pot, add the peppers, onions, and 1 teaspoon of the fajita seasoning mixture. Add another teaspoon or so of oil if the pot is really dry so the veggies don't burn. Cook, stirring occasionally, until the onions are translucent and the peppers are crisp-tender. Scrape the mixture onto the plate with the chicken.
  • Return the pot to the heat and add the broth, milk and diced tomatoes, scraping up any browned bits from the bottom of the pot. Stir in the pasta, 1 teaspoon salt, and the remaining fajita seasoning. Bring the mixture to a simmer, and cook, stirring occasionally to make sure the pasta isn't sticking, until the pasta is tender, 12-15 minutes (depending on the brand/type/shape of pasta). It's ok if there is a bit of liquid remaining, it will absorb as the pasta cools and sets up a bit.
  • Stir in the chicken and veggies and heat through. Add the cheese and stir until creamy and combined. Squeeze half (or two halves) of a fresh lime over the pasta and stir (optional, but so very delicious). Season to taste with additional salt and pepper, if needed.
  • Serve with chopped fresh chives, lime wedges and sliced avocados, if desired. The pasta will thicken as it cools.

Steps:

  • Heat the oil in a large skillet over medium-high heat. Season chicken with salt and herbs. Add chicken to the skillet and cook until golden brown. Remove the chicken to a plate.Add onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2-3 minutes to let the broth reduce. Add marinara sauce and red pepper flakes, then simmer for 10 minutes. Turn off the heat and add the cooked and drained pasta, ricotta, mozzarella, Parmesan, and basil. Add the cooked chicken on top.   • Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions; drain.

This chicken broccoli pasta uses egg noodles, but you can use your favorite pasta shape. You can even plan ahead and shred your deli chicken the night before. To put this chicken and broccoli skillet supper together, simply cook bacon, then make a sauce with butter, garlic, chicken broth, cream, and seasonings. After stirring in chicken, broccoli and other ingredients, broil for a crispy finish. We flavored with skillet pasta with Peppadew peppers, which is the brand name of the piquanté pepper, which is small, round, and pickled in a sweet-and-spicy brine. Look for this type in the olive bar in your grocery store's deli section, or use jarred sweet cherry peppers.

3 cups shredded cooked chicken (from 1 rotisserie chicken)
½ cup chopped Peppadew or sweet cherry peppers (from a [16-oz.] jar)
½ cup panko breadcrumbs

Steps:

  • Preheat oven to broil with oven rack 6 inches from heat. Heat a 12-inch ovenproof skillet over medium. Add bacon, and cook, stirring often, until crisp, about 10 minutes. Using a slotted spoon, transfer bacon to a plate lined with paper towels, reserving 2 tablespoons bacon drippings in skillet.
  • Add butter and garlic to hot drippings in skillet. Cook, stirring constantly, until fragrant, about 1 minute. Whisk in flour, and cook, whisking constantly, 2 minutes. Gradually whisk in chicken broth, cream, salt, and pepper until smooth. Bring to a simmer over medium-high, whisking occasionally. Stir in broccoli. Cook, stirring occasionally, until sauce is slightly thickened, about 7 minutes.
  • Remove from heat; stir in cheeses until smooth. Stir in cooked pasta, chicken, peppers, and half the reserved bacon. Sprinkle with breadcrumbs. Broil in preheated oven until lightly toasted, 1 to 2 minutes. Sprinkle with remaining bacon.
