SAUCY BARBECUED PORK CHOP SKILLET

- Heat oil in large nonstick skillet on medium heat. Add chops; cook 5 min. on each side or until evenly browned on both sides. Remove from skillet; cover to keep warm.
- Add vegetables to skillet; cook and stir 5 min. Stir in barbecue sauce; bring to boil.
- Return chops to skillet; spoon sauce in skillet over chops. Simmer 4 to 5 min. or until chops are done (145ºF), turning after 3 min. Remove skillet from heat. Let stand 3 min. before serving chops topped with barbecue sauce mixture.

BARBECUE SKILLET PORK CHOPS
I found this recipe in our local newspaper, and tweaked it just a bit to fit my tastes. It is a fantastic, easy, no-sweat dish to make in the summer because it doesn't require heating the oven up. We ate it over cooked egg noodles, with a side of cooked broccoli, and a salad. The sauce is just divine!! The leftovers are also good cold for a quick lunch. Yummy!!:)

- In large skillet, brown chops in oil over medium heat.
- Drain off excess oil.
- Sprinkle celery, onion, brown sugar, lemon juice, and seasonings evenly over chops.
- Pour tomato sauce over all.
- Cover and simmer over low heat 1 hour, or until chops are tender, occasionally turning chops in pan.
- Serve with cooked egg noodles or mashed potatoes.

- Sprinkle pork chops with seasoned salt. In a large skillet, brown chops on both sides in butter over medium-high heat. Remove chops. , In the drippings, saute onion until golden brown. Add the water, brown sugar, barbecue sauce and Worcestershire sauce. Return chops to the skillet. Bring to a boil. Reduce heat; cover and simmer 15 minutes or until a thermometer inserted in pork reads 145°. Remove chops; keep warm., Combine cornstarch and cold water until smooth; gradually stir into skillet. - Sprinkle the salt, thyme and pepper on the pork chops.
- Let sit on counter top for 30 minutes.
- Place oil in large cast iron skillet (or heavy stainless steel skillet) and heat until medium hot.
- Place chops in the pan, placing them so they don't touch each other.
- Cook each side slowly (lower heat if necessary) until nice and golden brown on each side.
- This will take about 4 minutes per side.
- Cover the pan with a tight fitting lid.
- Turn off the heat, and let the chops sit for about 8- 10 minutes, depending on thickness of chops.
- After removing chops, you can de-glaze the pan with a little water, wine or broth and a touch of butter and serve as a sauce.

Steps:
- Blot the pork chops with paper towels, then dredge with the flour and some paprika.
- Heat oil in electric skillet (300F) and brown chops on both sides, approximately 3 min per side, remove to platter.
- Brown onions, smash garlic and cook one minute, then add chops back to skillet.
- Mix remaining ingredients into a sauce and pour over chops.
- Cover and turn skillet down to 250F and simmer for 20-25 minutes.
- If sauce is thin you can thicken it with cornstarch.
- Serve over rice.
