1 cup butter, softened
1 1/2 cups sugar
2 large eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Mix softened butter, 1 1/2 cups sugar, 1tps of vanilla extract and eggs thoroughly in a large bowl.
  • Combine flour, cream of tartar, baking soda and salt in a separate bowl.
  • Blend dry ingredients into butter mixture.
  • Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
  • Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
  • Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
  • Coat by gently rolling balls of dough in the sugar mixture.
  • Place on chilled ungreased cookie sheet, and bake 10 minutes.
  • Remove from pan immediately.

3/4 cup shortening (3/4 cup correct amount)
1 cup packed brown sugar
1/2 cup white sugar (reserved for coating raw dough balls)
1 large egg
1/2 cup molasses
2 1/2 cups all-purpose flour
1/2 teaspoon salt (see note below)
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon allspice
1 teaspoon nutmeg

Steps:

  • Cream together shortening and brown sugar.
  • Stir in egg and molasses and mix well.
  • Fold in dry ingredients and stir.
  • Cover and chill till firm (1-2 hours).
  • Preheat oven to 350°.
  • Roll dough into small balls and roll in white sugar.
  • Place on lightly greased cookie sheet.
  • Bake at 350° for 9-10 minutes.
  • Leave on sheet one minute until set.
  • I changed the amount of salt in here. My original recipe calls for 1 tsp of salt but that may be too much for some. A few people have made it as is (the majority) with no complaints on salt, however a few commented it was too much. I think 1/2 tsp can be used with no alterations to the recipe. I will leave it up to you either way you still WIN !

12 ounces semisweet chocolate chips (2 cups)

Steps:

  • Preheat oven to 350°F with racks in the upper and lower third positions. In a small bowl, whisk together flour and baking soda; set aside. In the bowl of a stand mixer fitted with the paddle attachment, beat butter and both sugars on medium speed until light and fluffy, about 3 minutes. Add salt, vanilla, and eggs; mix to combine. Reduce speed to low and gradually add flour mixture, mixing until just combined. Mix in chocolate chips.
  • Using a tablespoon measure, drop heaping portions of dough about 2 inches apart on baking sheets lined with parchment paper.

  • Preheat oven to 350 degrees F (175 degrees C).

Steps:

  • Whisk together the flour, baking powder and salt in a small bowl.
  • Beat the sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes. Beat in the eggs and then the vanilla. Add the flour mixture and beat on medium-low speed until completely incorporated. Scoop out heaping tablespoonfuls of the dough, roll with your hands into balls and refrigerate until firm, about 30 minutes.
  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Put some sugar in a small bowl. Roll the chilled dough balls in the sugar and arrange on the prepared baking sheets about 2 inches apart.
  • Bake until the bottoms and edges are just barely golden and the tops are no longer glossy, 14 to 16 minutes, rotating the baking sheets about halfway through. Steps:

  • Preheat oven to 350°F (175°C). Microwave the butter for about 30 seconds to just barely melt it (half soft and half melted).
  • Beat the butter with the brown and white sugar/s until creamy and pale in colour and sugar has dissolved. Pour in the syrup, vanilla and the egg, and lightly beat until just mixed through.
  • Add the flour, baking soda, and salt, mixing until combined. If needed, add in one tablespoon of the 'extra' flour at a time until the dough is still soft but easy to handle and firm enough to form one large ball (the dough should not be dry. I only needed 3 tablespoons of the extra flour).
  • Fold in half of the chocolate chips with your hands.
  • Scoop out 18-20 balls and arrange them on a lined baking sheet with parchment paper. Press the remaining chocolate chips onto the tops of each cookie.
  • Bake for about 10-11 minutes. The cookies will look pale and puffed up, but should be golden around the edges. DO NOT OVER BAKE or your cookies will become hard once they have cooled.
  • Allow to cool on the baking sheet for about 30 minutes.

200 grams sugar (approx 1 cup)
lemon zest of one medium lemon
3 egg whites
1 teaspoon bitter almond extract
extra granulated sugar for rolling (sprinkle 1/3 cup in a large dinner plate, set aside)

Steps:

  • Preheat oven to 325° F. Position rack in the center.
  • Line large baking sheet with parchment paper.
  • In a large bowl, whisk almond flour and sugar together.
  • Add grated lemon zest and whisk a few more times. Set aside.
  • In a separate bowl, whisk egg whites to a soft peak stage.
  • Whisk in the bitter almond extract.
  • Gently incorporate the egg whites to the dry ingredients. Once the dough is completely moist, you are done.
  • Use the smallest ice cream scooper to portion the dough (about 1 tablespoon).
  • With slightly damp hands, press your palms into the plate of sugar.
  • Roll each ball of dough with your sugar coated palms and then again in the sugar found on the plate.

1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp baking powder

1 cup (226g) unsalted butter, (softened slightly (it should still be somewhat cold and firm))
1 cup (200g) packed light brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
1 1/2 tsp vanilla extract
3 cups (260g) rolled old fashioned oats*
1 cup (153g) raisins** ((preferably from a freshly opened package))
1 cup (118g) chopped walnuts

8 tablespoons of salted butter
1/2 cup white sugar (I like to use raw cane sugar with a coarser texture)(affiliate link)
1/4 cup packed light brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cups all purpose flour (more as needed - see video)
1/2 teaspoon baking soda
1/4 teaspoon salt (but I always add a little extra)
3/4 cup chocolate chips (I use a combination of chocolate chips and chocolate chunks)

Steps:

  • Preheat the oven to 350 degrees. Microwave the butter for about 40 seconds to just barely melt it. It shouldn't be hot - but it should be almost entirely in liquid form.
  • Using a stand mixer or electric beaters, beat the butter with the sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated - 10-15 seconds or so (if you beat the egg for too long, the cookies will be stiff).
  • Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large ball that is easy to handle (right at the stage between "wet" dough and "dry" dough). Add the chocolate chips and incorporate with your hands.
  • Roll the dough into 12 large balls (or 9 for HUGELY awesome cookies) and place on a cookie sheet. Bake for 9-11 minutes until the cookies look puffy and dry and just barely golden. Warning, friends: DO NOT OVERBAKE. This advice is probably written on every cookie recipe everywhere, but this is essential for keeping the cookies soft. Take them out even if they look like they're not done yet (see picture in the post). They'll be pale and puffy.
  • Let them cool on the pan for a good 30 minutes or so (I mean, okay, eat four or five but then let the rest of them cool). They will sink down and turn into these dense, buttery, soft cookies that are the best in all the land. These should stay soft for many days if kept in an airtight container. I also like to freeze them.

150g soft brown sugar , golden caster sugar, or ideally half of each
1 egg
1 tsp vanilla extract
180-200g plain flour (see tip below)

200g chocolate chips or chopped chocolate

Steps:

  • Mix the butter and sugar together using an electric whisk or hand whisk until very light and fluffy, then beat in the egg and vanilla. Fold in the flour, baking powder, chocolate and ¼ tsp salt as quickly as you can. Don't overwork the dough as this will toughen the cookies.
  • For the best flavour, leave the mixture overnight: either cover the bowl and chill, or roll the mixture into balls and chill.
  • Heat the oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Divide the mixture into balls, the craggier the balls, the rougher the cookies will look. If you want to give the dough more texture, tear the balls in half and squidge them lightly back together. Space out evenly on the baking sheets, leaving enough space between each to allow for spreading.
  • Bake the fresh cookies for 8-10 mins and the chilled ones for 10-12 mins, or until browned and a little crisp at the edges but still very soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few minutes before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

  • Prehead the oven to 180C/ fan 160C/ gas 4
  • Make sure the butter is softened. Cut in cubes and put it in a large bowl along with the sugar.
  • Put an electric whisk on the lowest setting and break the butter up into the sugar. Increase the whisk's speed and mix for about 1 minute until you have a light and creamy mixture.
  • Add the eggs, one at a time. Make sure they are mixed well.
  • Add the baking powder and flour and mix gently with your hands until everything is mixed well.
  • Add the zest of the lemon and the pieces of white chocolate.
  • Put a grease proof paper in a baking tray. Make small balls out of the dough and press them gently on the tray until they are about 0.5cm tall.
  • Leave some space between them on the tray so they don't stick together.
  • Bake for 12 minutes then remove from the oven and let them cool down.
  • Enjoy!

  • Add the sugars to the melted butter. Measure and add 1/2 cup (100 g) of sugar and 1/4 cup (50 g) of packed light brown sugar to the bowl of melted butter.
  • Beat the butter and sugars for 1 minute. Use a stand or hand mixer to beat the melted butter with the sugars on medium speed. Keep beating the mixture until it's creamy.
  • Beat in the vanilla and egg. Turn the mixer down to low speed and add 1 egg and 1 teaspoon (5 ml) of vanilla. Beat the mixture until the egg is incorporated.
  • Mix the dry ingredients into a dough. Turn off the mixer and add 1 1/2 cups (187 g) of flour, 1/2 teaspoon (2 g) of baking soda, and 1/4 teaspoon (1.5 g) of salt.
  • Stir in the chocolate chips. Pour 3/4 cup (130 g) of chocolate chips or chunks into the dough and use your hands or a rubber spatula to mix them. The chips should be evenly spread throughout the dough.
  • Roll the dough into balls and place them on a baking sheet. Divide the dough into 12 even pieces. Roll each piece into a ball and set them on a baking sheet.
  • Bake the soft cookies for 9 to 11 minutes. Put the baking sheets in the preheated oven and bake the cookies until they puff up and turn slightly golden.
  • Cool the cookies on the sheets for 30 minutes. Remove the baking sheets from the oven and set them on a wire rack. Let the cookies cool completely on the sheets before you move them.
