- Sprinkle pork chops with seasoned salt. In a large skillet, brown chops on both sides in butter over medium-high heat. Remove chops. , In the drippings, saute onion until golden brown. Add the water, brown sugar, barbecue sauce and Worcestershire sauce. Return chops to the skillet. Bring to a boil. Reduce heat; cover and simmer 15 minutes or until a thermometer inserted in pork reads 145°. Remove chops; keep warm., Combine cornstarch and cold water until smooth; gradually stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork.

- Whisk the barbecue sauce and the cider vinegar together in small bowl. Combine sugar, paprika,cumin, salt, pepper, and cayenne in separate bowl. Whisk 1 teaspoon of the spice mixture into the barbecue sauce mixture. Pat chops dry with paper towels and rub all over with remaining spice mixture. Heat oil in large nonstick skillet over medium-high heat until just smoking. Cook chops until well-browned, about 4 minutes per side. Reduce heat to medium-low. Brush chops with sauce, flip and cook until sauce is caramelized, about 1 minute. Brush once more with sauce, flip, and cook until second side is caramelized and meat thermometer registers 145, about 1 more minute. Serve, passing remaining sauce at table. To prevent the chops from curling as they cook, cut two slits about 2 inches apart through the side of each chop.

I found this recipe in our local newspaper, and tweaked it just a bit to fit my tastes. It is a fantastic, easy, no-sweat dish to make in the summer because it doesn't require heating the oven up. We ate it over cooked egg noodles, with a side of cooked broccoli, and a salad. The sauce is just divine!! The leftovers are also good cold for a quick lunch. Yummy!!:)

- Blot the pork chops with paper towels, then dredge with the flour and some paprika.
- Heat oil in electric skillet (300F) and brown chops on both sides, approximately 3 min per side, remove to platter.
- Brown onions, smash garlic and cook one minute, then add chops back to skillet.
- Mix remaining ingredients into a sauce and pour over chops.
- Cover and turn skillet down to 250F and simmer for 20-25 minutes.
- If sauce is thin you can thicken it with cornstarch.

- Let sit on counter top for 30 minutes.
- Place oil in large cast iron skillet (or heavy stainless steel skillet) and heat until medium hot.

- Cook each side slowly (lower heat if necessary) until nice and golden brown on each side.
- This will take about 4 minutes per side.
- Cover the pan with a tight fitting lid.
- Turn off the heat, and let the chops sit for about 8- 10 minutes, depending on thickness of chops.
- After removing chops, you can de-glaze the pan with a little water, wine or broth and a touch of butter and serve as a sauce.
