¼ cup Ground Flaxseed
1 tsp Ground Cinnamon
½ tsp Double-Acting Baking Powder
pinch of Salt
1 large Egg
2 tbs Unsweetened Vanilla Almond Milk
2 tbs Unsweetened Applesauce
½ tsp English Toffee-Flavored Stevia Extract

Steps:

  • Spray a 4″ baking dish with cooking spray.
  • In a small bowl, whisk together the flax, cinnamon, baking powder, and salt.
  • In a medium-sized bowl, whisk together the egg, milk, applesauce, and stevia.
  • Dump the dry ingredients over the wet ingredients and whisk together. Pour mixture into the prepared dish and microwave for ~3 minutes on high, or until the surface springs back when tapped and edges pull away from the dish. Let cool slightly. Serve with homemade maple syrup, fresh fruit, chocolate chips, peanut butter, whatever toppings you want, then dig in!

2 tablespoons all purpose flour
1 tablespoon yellow cornmeal
1/4 teaspoon baking powder
2 teaspoons butter (melted)
1 teaspoon honey
4 teaspoons milk

Steps:

  • In a small bowl or mug, mix flour, cornmeal, and baking powder.
  • Stir in the melted butter, honey and milk. Stir until combined.
  • Spray a small mug or microwave safe dish with cooking spray.
  • Microwave for 30 seconds, then check it to make sure it's not bubbling over, then microwave another 20 to 30 seconds (this will vary depending on the power of your microwave. Mine took 22 more seconds.)
  • Remove with a kitchen towel (it will be hot).
  • Enjoy!

1 tablespoon yellow cornmeal
¼ cup warm water (110 degrees F/45 degrees C)
1 (.25 ounce) package active dry yeast
1 cup lukewarm milk
2 teaspoons white sugar
1 teaspoon salt
⅛ teaspoon baking soda
1 cup whole wheat flour
2 cups all-purpose flour

Steps:

  • Lightly grease a microwave-safe 9x5 inch loaf pan; sprinkle pan with cornmeal.
  • In a large bowl, dissolve yeast in water. Add milk, sugar, salt, soda and whole wheat flour; beat well. Beat in all-purpose flour, 1/2 cup at a time, until a soft dough is formed. Turn dough out onto a lightly floured surface, and knead for about 5 minutes, or until smooth. Form into a loaf, and place into the prepared pan.
  • Place in microwave oven uncovered, at 50 percent power, for 1 minute. Let rest for 10 minutes. Repeat 1 or 2 times until loaf has doubled in size.
  • Microwave on high for 4 to 6 minutes, until top is no longer moist. Let stand for 5 minutes in pan. Remove and cool on a rack.

Okay, so this may not be *exactly* like a muffin, but it's pretty close, and was still pretty tasty! The taste and texture turned out to be a little more like that of a very thick pancake, but that's close enough, right? ;) Anyway, I was wanting just one muffin this morning, and decided to tinker around a little and make just one in the microwave. I'll probably play around with this a little more, but here are the basics. Really, you could probably add fruit or chocolate chips or whatever to this, and have yourself a tasty little treat in roughly five minutes. I'd love to hear other people's ideas on additions/changes to this!

2 tablespoons whole wheat flour
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon flax seed meal
1 teaspoon brown sugar
1/2 teaspoon canola oil
2 tablespoons skim milk
2 teaspoons unsweetened applesauce

Steps:

  • In microwavable coffee mug, ramekin, or custard dish, combine flour, baking powder, cinnamon, and flax meal (I used a custard dish).
  • In another coffee mug (etc), mix brown sugar, oil, milk, and applesauce.
  • Pour wet ingredients into dry, and mix thoroughly.
  • Microwave on MEDIUM power for 2 minutes (cooking time may be different with different microwaves; 2 minutes is just what worked for me).
  • Muffin will be done when toothpick inserted near middle comes out clean.
  • I put some applesauce on top and just ate it with a spoon right out of the custard dish.

2 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup sugar
2 1/2 cups flour

Steps:

  • In a large bowl, mix bran cereal with boiling water to soften cereal.
  • Add remaining ingredients and stir well.
  • To store in refrigerator, place in air-tight container.
  • To bake in microwave, place baking cups in a microwavable muffin pan.
  • Fill baking cups half-full with batter.
  • Bake on high in microwave for approximately 45 seconds per muffin. Do not over cook. (Time will need to be adjusted per your microwave.).
  • Serve muffins warm.
