Categories     Main Dishes

Time 25m

Number Of Ingredients 5

1 pound bone-in pork chops (about 1.5" -2" thick)
kosher salt
freshly ground black pepper
2 tablespoons ghee, divided (*see note)
2 cloves garlic, smashed and sliced

Steps:

  • Set the pork chop(s) out on a cutting board at room temperature for about 10-15 minutes before you begin cooking.
  • Season both sides of the pork liberally with kosher salt and freshly ground pepper.
  • Place 1 tablespoon of the ghee in a cast iron skillet on the stove top over medium-high heat.
  • Once melted and hot, place the pork in the skillet and cook until bottom starts to turn golden brown around the edges (about 3-4 minutes).
  • Flip the pork cooking an additional minute on the other side and continue flipping back and forth each minute until both sides are a nice golden brown and a temperature of the meat reaches 140-145°F using a meat thermometer (about an additional 10 minutes depending on how thick your pork chops are).
  • Turn the heat off, add the remaining tablespoon of ghee to the skillet and place the smashed garlic cloves in the ghee.
  • Let the garlic cook for about 1 minute then tilt the skillet and spoon the ghee infused garlic over the pork chops a few times for flavor.
  • Let the pork rest another 1-2 minutes before serving.

  • After 30-minutes, pat the pork chops off and then dredge in the seasoning blend until coated well on all sides;

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 9

4 -6 center-cut pork chops (center cut with BONE IN)
salt & pepper
1 1/2 cups chicken broth (OR 1 cup broth & 1/2 cup white wine, if you prefer )
onion powder
ginger powder
2 tablespoons oil, just enough to lightly cover the bottom of pan. I use olive oil, but vegetable oil can be used
1/4 cup water
1 tablespoon flour
1 dash Gravy Master

Steps:

  • Heat the oil & then brown the chops well on both sides in the skillet. Once browned, sprinkle each chop with salt, pepper, onion powder, and ginger powder. Add the broth or the broth/wine combo totaling a cup and a half, reduce heat to low & cover.
  • Simmer for approximately 45 minutes. Spoon the pan drippings over the chops for added flavor & moistness while cooking. Serve with rice or noodles.
  • For optional gravy: Blend 1/4 cup water and 1 tablespoon flour in small bowl until free of lumps. Add this mixture into the pan liquid and cook over low-med heat, stirring until it has thickened (you can always add a little water at this point if needed). Sometimes I add Gravy Master for color.
  • I usually put the chops back into the pan for several minutes once the gravy is done to make sure the dish is hot enough to serve.

THE BEST PORK CHOPS EVER

The Best Pork Chops Ever image

This is one of the first things my husband ever cooked for me. His dad came up with the recipe long ago and I've perfected it. We have this for every special occasion in our family- my 2 year old even loves it! This recipe is simple yet delicious. I cook mine for 4-5 hours though to get the extra gravy because that is the best part. Don't be alarmed if your gravy looks curdled... it's suppose to. Enjoy and watch it disappear.
