Steps:
- Preheat the oven to 350 degrees. Spray an 8-inch springform pan or a 9 inch deep-dish pie plate with cooking spray.
- Cook the pasta in a large pot of salted, boiling water for 6 to 7 minutes or until almost al dente. (The pasta will continue cooking in the oven.). Drain and set aside.
- In a large skillet, brown the ground beef over medium heat until no longer pink, approximately 4 to 5 minutes. Transfer to a bowl using a slotted spoon and discard the fat from the pan (leave a couple teaspoons for sauteing the onion).
- Return the pan to the heat and cook the onion until softened, approximately 3 to 4 minutes. Add the garlic to the pan and cook for 1 minute. Stir in the Italian seasoning and onion powder. Remove from the heat and set aside.
- In a large bowl, whisk together the sauce, ricotta cheese, parsley and eggs. Stir in the onion mixture.
- Toss the pasta and beef with the sauce mixture to combine. Stir in 1/2 cup parmesan and 1/2 cup mozzarella. Transfer the spaghetti mixture to the prepared pan. Sprinkle the remaining cheese over the top.
- Bake until the cheese is melted and bubbling, approximately 25 to 30 minutes. Remove from the oven and allow to rest for 5 minutes before cutting and serving.

Steps:
- Pick the basil leaves onto a chopping board (reserving a few baby leaves to garnish), then roughly chop the remaining leaves and finely chop the stalks.
- Peel and finely slice the onion and garlic. If using fresh, cut the tomatoes in half, then roughly chop them or carefully open the tins of tomatoes.
- Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the onion, then cook for around 7 minutes, or until soft and lightly golden.
- Stir in the garlic and basil stalks for a few minutes, then add the fresh or tinned tomatoes and the vinegar.
- Season with a tiny pinch of salt and pepper, then continue cooking for around 15 minutes, stirring occasionally.
- Stir in the chopped basil leaves, then reduce to low and leave to tick away. Meanwhile...
- Carefully fill a large pot three-quarters of the way up with boiling water, add a tiny pinch of salt and bring back to the boil.
- Add the spaghetti and cook according to packet instructions - you want to cook your pasta until it is al dente. This translates as 'to the tooth' and means that it should be soft enough to eat, but still have a bit of a bite and firmness to it. Use the timings on the packet instructions as a guide, but try some just before the time is up to make sure it's perfectly cooked.
- Once the pasta is done, ladle out and reserve a cup of the cooking water and keep it to one side, then drain in a colander over the sink and tip the spaghetti back into the pot.
- Stir the spaghetti into the sauce, adding a splash of the pasta water to loosen, if needed.
- Serve with the reserved basil leaves sprinkled over the top and use a microplane to finely grate the Parmesan cheese, then sprinkle over.

SIMPLE SPAGHETTI WITH TOMATO SAUCE
This basic pasta dish can be transformed by adding extras like cooked bacon, shrimp or even a few handfuls of baby spinach to the sauce. We like canned San Marzano plum tomatoes because they are slightly sweeter and less acidic than other varieties.

SIMPLE SPAGHETTI DISH
A great simple meal or late night snack for anyone on a budget, and so simple you won't even need to print it out. Spaghetti is preferred, but any pasta will do. Add as much butter, salt, and pepper as you like. My siblings and I (Bird) ate this often growing up as a quick meal to cure the munchies, especially if there wasn't much in the pantry. It's also great for college kids, etc. ;)

- After beef has cooked through, add the pasta sauce, stir to combine, and cook for 1 to 2 minutes, or until heated through.
- After pasta has cooked for about 10 minutes, or until all the water has been absorbed, add the sauce over the pasta and toss to combine in the skillet or alternatively plate the pasta and add sauce to each individual plate as desired.

- Add 2 tsp salt and spaghetti. Separate pasta with tongs a few times during first 2 minutes of cooking. This will ensure spaghetti do not stick together.
- Cook pasta uncovered for 5 more minutes or until al dente, stirring occasionally. Taste for doneness while cooking. Do not overcook until too soft. The key to tasty pasta is firm cooked pasta. Drain in a colander.
- Return pot to medium heat and add olive oil, 4 garlic cloves and oregano. Cook for 20 seconds, stirring constantly.
