Super easy & quick version of "Chicken A La King" using ingredients you most likely have on hand. Kid friendly, too.

3 boneless skinless chicken breasts
2 tablespoons butter or 2 tablespoons margarine
1/2 cup finely chopped onion
1/4 cup fine chopped carrot
1/2 cup frozen peas
1 tablespoon dried parsley
1 (14 1/2 ounce) can chicken broth
2 tablespoons cornstarch
1 dash pepper

Steps:

  • Place chicken in microwave-safe container, with just enough water to cover. Microwave on high until done/no longer pink in the center (12-15 minutes, depending on size of breasts).
  • Dice cooked chicken and set aside.
  • In small saucepan, melt butter. Sauté onions and carrots, with parsley, until tender.
  • In separate small bowl, combine cornstarch and 1/2 cup of chicken broth, whisk until smooth.
  • Add to saucepan/veggie mix, along with remaining broth. Bring to a boil, stirring occasionally, add frozen peas and cooked chicken. Boil for additional 2 minutes.
  • Serve over mashed potatoes or hot, buttered noodles.

1 celery rib, chopped
1/2 cup chopped green pepper
1/4 cup chopped onion

Steps:

  • In a 3-qt. slow cooker, combine soup, flour, pepper and cayenne until smooth. Stir in chicken, celery, green pepper and onion. , Cover and cook on low for 7-8 hours or until meat is no longer pink. Stir in peas and pimientos. Cook 30 minutes longer or until heated through. Serve with rice.

1 tablespoon olive oil
1 cup milk
1 (10.75 ounce) can condensed cream of chicken soup
1 cup fresh sliced mushrooms
2 tablespoons chopped pimento peppers
1 teaspoon onion powder
½ teaspoon ground black pepper

Steps:

  • In a large skillet, heat oil. When hot add chicken and saute 4 to 5 minutes until about halfway cooked. Add mushrooms and continue to saute until chicken is lightly browned and cooked through (juices run clear). Stir in the milk, soup, mushrooms, pimentos, onion powder and pepper. Bring all to a boil. 1 (4.5 ounce) can mushrooms, drained, liquid reserved
1 green bell pepper, chopped
½ cup butter
½ cup all-purpose flour
1 teaspoon salt
¼ teaspoon ground black pepper
1 ½ teaspoons chicken bouillon powder
1 ½ cups milk
1 ¼ cups hot water
4 cooked, boneless chicken breast halves, chopped

3 cups cooked, diced chicken meat
1 (12 fluid ounce) can evaporated milk
1 (10.75 ounce) can condensed cream of mushroom soup
⅔ cup water
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 (4.5 ounce) cans mushrooms, drained
1 dash hot pepper sauce
salt and pepper to taste

Steps:

This is from JoAnna Lund's cookbook "Cooking Healthy Across America". It's so easy to prepare! I used boiled chicken that I boiled and shredded the day before so this made for a quick and easy weeknight meal. We served it over Texas Toast but I'm sure it'd be just as good over noodles, rice or mashed potatoes. Note: the recipe calls for 1 1/2 c of peas, but the family doesn't like peas that much so I just used about 3/4 cup.

I got this recipe from a cooking class and I helped make it. In my cooking class we served this over top of homemade fluffy biscuits. My family really enjoyed this recipe. We thought it tasted so good and this was so easy to make. In a pinch I've made this recipe with frozen mixed vegetables, water in place of the chicken broth and I've left out the celery and I think it still turns out great.

I make this when my wife is in need of some comfort food. It's one of her favourites. I use all frozen diced vegetables to make the prep time quick and easy. This is really a simple way to make this dish.

3 boneless skinless chicken breasts
2 cups diced onions
1 cup diced green pepper
1 cup diced red pepper
2 (10 ounce) cans cream of chicken soup
1 cup milk
3 cups frozen mixed vegetables (peas, carrots etc.)
2 cloves garlic, minced
2 tablespoons olive oil

Steps:

  • Cut up chicken into bite size pieces.
  • Heat 1 Tbsp of oil in a large skillet on medium high heat.
  • Add chicken and stir fry until no longer pink.
  • Remove from skillet and set it aside.
  • Add 1 Tbsp oil to skillet on medium high heat.
  • Add garlic and brown for a minute.
  • Add onions and saute for 2-3 minutes.
  • Add peppers and saute an additional 5 minutes.
  • Return cooked chicken to skillet.
  • Add in chicken soup and milk.
  • Reduce heat to a simmer.
  • When mixture begins to bubble, add in mixed vegetables and simmer approx.
  • 15-20 minutes.
  • Serve over rice.
