2 nests medium egg noodles
2 tsp cornflour
2 tbsp soy sauce
1 tbsp honey
1 tbsp sunflower oil
250g/9oz pork tenderloin, cut into bite-sized pieces
thumb-sized piece ginger, finely chopped
2 garlic cloves, finely chopped
1 green pepper, deseeded and sliced
100g mange tout
1 tsp sesame seed

Steps:

  • Bring a pan of salted water to the boil and cook the noodles following pack instructions. Meanwhile, mix the cornflour with 1 tbsp water, then stir in the soy sauce and honey, and set aside.
  • Heat the oil in a wok over a high heat. Add the pork and cook for 2 mins until browned all over. Add the ginger, garlic, pepper and mangetout, and cook for a further 2 mins. Reduce the heat, then add the soy and honey mixture, stirring and cooking until the sauce bubbles and thickens. Divide the drained noodles between 2 bowls. Top with the pork and vegetables, and finish with a sprinkling of sesame seeds.

It is one of the most popular recipes on the lunch menu as well as the bento box (Japanese lunch box). It is very simple to make and excellent for a weekday dinner with a bowl of rice.

300 g (10.6oz) pork sliced thinly to 2-3mm (⅛") thick (note 1)
2 tsp sake ((Japanese rice wine))
1 tsp ginger juice ((squeeze juice out of grated ginger))
1 tbsp oil
2 tbsp sake ((Japanese rice wine))
1 tbsp mirin
1 tbsp soy sauce
1 tsp sugar
1 tbsp grated ginger
160 g (5.6oz) shredded cabbage
4 cherry tomatoes
6 broccoli florets

Steps:

  • (this step is optional) Using the tip of a sharp knife, cut the connecting tissue (the tissue separating red meat and fat) embedded in the meat. This will prevent the meat from curing when cooked.
  • Sprinkle 2 teaspoons of sake and 1 teaspoon of ginger juice over the pork slices, coat well and leave for 10 minutes. This will tenderise the meat and removes meaty smell.
  • Mix ginger sauce ingredients in a bowl.
  • Heat oil in a non-stick (preferred) frypan over medium high heat.
  • Place the meat in the frypan without overlapping (cook in batches if required) and cook for about 1-2 minutes or until the bottom side is golden and the edges start to cook.
  • Turn it over and cook further 1-2 minutes. If cooking in batches, transfer the cooked meat onto a plate and cook the remaining meat.
  • Reduce the heat to medium. Return all the cooked meat to the frypan and add the ginger sauce to the pan.
  • Cook for about 15-30 seconds, turning the pork slices over to ensure the meat is coated with the sauce. When the sauce is reduced to about 1-2 tablespoons (note 3), turn the heat off.
  • Place the vegetables on one side of the plate. Place pork slices and pour the sauce in the frypan over the pork.

Steps:

  • Whisk together the ingredients for (one) marinade in a small bowl until combined.
  • Combine marinade with pork in a ziplock freezer bag, and toss until the pork is evenly coated in the marinade. Carefully press out any extra air that might be in the bag, then seal. (You will need 1/2 cup marinade per 1 pound of pork.)
  • Refrigerate the pork pack(s) for anywhere from 30 minutes to up to 1 day.
  • Immediately transfer the pork pack(s) to the freezer, and freeze for up to 3 months. Then when you're ready to cook the pork, transfer the pork pack back to the refrigerator for 24 hours, or until it has thawed completely. Or to speed up the process, you can submerge the sealed pork pack in a bowl of cold water in the refrigerator until it has thawed completely.

I got this recipe out of Martha Stewart Living magazine, and have made it a number of times. The pork comes out so juicy and tender, no matter what kind of chops I use. To be truthful, I only use the marinade, and I cook the chops on the BBQ. I normally use boneless loin chops, about 1" thick, and marinate them for about an hour. I use only half the sugar because I don't like a sweet meat, and it helps keep the chops from burning on the grill. We love this served with rice.

Tired of the same old savory barbecued ribs? Try this recipe for Asian style ribs with a touch of sweetness and the flavors of soy, ginger, and sesame. Any cut of ribs will do.

2 tablespoons sweet paprika
1 tablespoon five spice powder or store-bought
1 slab ribs
¾ teaspoon Morton Coarse Kosher Salt ((¼ teaspoon per pound of meat))
2 tablespoons mayonnaise
3 tablespoons apple juice
½ cup ketchup
½ cup honey
¼ cup soy sauce
2 tablespoons rice vinegar
1 tablespoon brown sugar
2 teaspoons finely minced ginger
2 teaspoons garlic powder
1 teaspoon sesame oil

Steps:

  • Prep. To create the five-spice dry rub, combine the sweet paprika and five spice powder in a small bowl and blend well (now it's a six-spice rub!).
  • Remove the membrane from the slab of ribs (read more on removing the membrane here).
  • Season the slab of ribs with kosher salt. If you can, give the salt 1 to 2 hours to be absorbed. The process of salting in advance is called dry brining. The rule of thumb is ½ teaspoon of kosher salt per pound of meat, but ribs consist of only about 50% meat, so use about ¼ teaspoon per pound. You can simply eyeball it by sprinkling on the same amount of salt you would sprinkle on the ribs if they were served to you unseasoned.
  • Fire up. Prepare a smoker for indirect cooking. Alternatively, you can set up a charcoal grill for 2-zone cooking by placing a chimney full of lit charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the temperature to about 225°F (107.2°C) and add three to four chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F (107.2°C) on the indirect side.
  • Once the smoker or grill is ready, brush both sides of ribs with mayonnaise and lightly season with the five-spice dry rub.
  • Cook. Place the slab of ribs meat side up on the main cooking grate as far away from the heat source as possible. Cover the smoker or grill. Allow the ribs to smoke until the meat just begins to shrink back from the ends of the bones, about 3½ hours.
  • Lay out two double layers of heavy-duty aluminum foil approximately eight inches (203.2 mm) longer than the ribs. Lay the slab of ribs on the foil meat side down. Fold up the sides of the foil to create a boat, pour in the apple juice, and loosely seal the foil.
  • Place the foiled ribs sealed side up on the smoker or grill and cook until the meat shrinks back from the ends of the bones by ¼ to ½ inch (6.4 to 12.7 mm), about 1 hour.
  • Make the sauce. While the ribs smoke, make the soy ginger BBQ sauce by combining the ketchup, honey, soy sauce, rice vinegar, brown sugar, ginger, garlic powder, and sesame oil in a small saucepan. Simmer the sauce over medium-high heat while stirring frequently until thickened, about 10 minutes.
  • Cook. Remove the ribs from the smoker or grill and cautiously open the foil packet to allow the steam to escape. Gently remove the ribs from the foil and set them back on the smoker or grill meat side up. Cover the smoker or grill and allow the ribs to cook until tender but not falling off the bone, about 20 minutes. We prefer to use the "bend test." Use tongs to pick up one end of the slab of ribs, then bend them slightly. If they are ready, the slab will bow until the meat starts to crack on the surface.
  • When they are ready, brush sauce on both sides of the ribs and turn them meat side up on the smoker or grill. Cover the smoker or grill and cook until the sauce sets and becomes tacky, 3 to 4 minutes.
  • Serve. Remove the ribs from the smoker or grill, then slice and serve.

4 1-inch thick pork chops (bone-in or boneless your choice)
Freshly ground pepper to taste
Thinly sliced scallions (both white and light greens parts (optional), to serve)
Lime wedges to serve
Hot cooked rice for serving (optional)

Steps:

  • In a small saucepan, heat the oil over medium heat. Add the ginger and garlic and stir until you can really smell everything and the garlic turns golden, about 3 minutes. Add the soy sauce, brown sugar and crushed red pepper, if using, raise the heat to medium-high and simmer until slightly reduced and syrupy, stirring occasionally, about 5 minutes. Set aside to cool completely.
  • Pour the marinade into a container or a zipper-top bag and add the pork chops. Seal the container or the bag, and place the chops in the fridge. Refrigerate for 3 to 24 hours.
  • Preheat the grill to medium.
  • Remove the pork chops from the marinade. Grill the pork chops for about 4 minutes on each side, until the pork chops reach an internal temperature of 140°. Allow them to sit for 5 minutes before serving or slicing. Top with the scallions, and serve with the lime wedges for squeezing over the chops.

  • Preheat oven to 190 C / Gas mark 5.
  • Place marinated pork chops in a roasting tin, and bake in preheated oven for 35 to 40 minutes, basting meat often with marinade. If using other meat or pork steaks use the cooking instructions on the packet.
