This easy Mexican rice with salsa is how to make rice without tomato sauce! Since this is cooking rice on the stove, it should take you no longer than 20 minutes to make this vegetarian Mexican rice recipe.

2 cups water
1 1/2 cups long grain rice
8 oz picante sauce

Steps:

  • Bring water to boil in a large sauce pan. Add in rice. Turn down to medium heat and cook for 8 minutes.
  • After the 8 minutes, stir in the picante sauce. Cook for 10 minutes continuing on medium heat. Serve your Simple Mexican Rice with your favorite Mexican dish!

2 cups chicken broth

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

2 tablespoons oil
1/4 cup finely chopped onion
1 tablespoon fresh finely chopped garlic
1/2 teaspoon crushed red pepper flakes (adjust to heat level) (optional)
1 cup uncooked white rice (I use converted white rice)
2 cups water or 2 cups low sodium chicken broth
1 (16 ounce) jar Pace Picante Sauce
1/4-1/2 teaspoon fresh ground black pepper (to taste) (optional)
salt (optional and to taste)

Steps:

  • In a medium saucepan heat oil over medium heat; add in onion, garlic and chili flakes, cook stirring for 3 minutes.
  • Add in rice, water and salsa; stir and bring to a boil.
  • Reduce heat to low, cover and simmer for about 20-22 minutes or until the rice is tender or is at desired doneness.
  • Season with salt and black pepper if desired.

1/4 cup vegetable oil
1/2 cup chopped onion
1/2 cup chopped pepper (your preference, sweet or hot)
1 1/2 cups raw converted rice
1 cup frozen vegetables (such as peas, corn, chopped carrots, or a combination)
2 teaspoons chicken bouillon powder
1 tablespoon minced garlic
2 1/4 cups water
chopped cilantro (amount to your taste, either as a garnish only, or a few tbsp chopped, mixed in)
salsa, on the side

Steps:

  • Heat oil in a non-stick sauce pan that has a tight fitting lid.
  • Add onion and pepper.
  • Saute until tender.
  • Add rice.
  • Saute rice until opaque.
  • Add vegetables, bouillon, garlic and water.
  • Bring to a boil.
  • Keep tightly covered and simmer 15- 20 minutes- do not peek.
  • Serve with chopped cilantro on top or mixed in dish.
  • Pass the salsa.
  • Note, I have used chopped fresh or frozen spinach instead of the frozen vegetables and it was very good.

1 teaspoon chicken bouillon (or one cube)

  • Add water, bouillon, and tomato sauce - mix well.
  • Let boil.
  • After it boils, turn down to lowest heat, cover.

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes, adding frozen corn with about 5 minutes remaining.
  • While the rice is cooking, heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir onions into the cooked rice-corn mixture. Stir in salsa and pepper Jack cheese.
