2 large eggs, beaten
1/4 teaspoon salt
3 tablespoons vegetable oil, divided
4 cups cooked rice
1-1/2 cups frozen stir-fry vegetable blend
1/2 cup sliced green onions
1 garlic clove, minced
1 cup diced cooked chicken
3 tablespoons soy sauce
1 tablespoon chicken broth
1/2 teaspoon pepper
1/4 teaspoon ground ginger
4 bacon strips, cooked and crumbled

Steps:

  • Combine eggs and salt. In a large skillet or wok over medium heat, scramble eggs in 1 teaspoon oil, breaking into small pieces. Remove from skillet and set aside. , Add remaining 2 tablespoons plus 2 teaspoons oil to skillet. Stir-fry rice over medium-high heat for 5 minutes. Add vegetables, onions and garlic; stir-fry for 5 minutes. Add chicken; stir-fry until heated through, 3-5 minutes. Combine soy sauce, broth, pepper and ginger. Add to rice; stir to coat. Add bacon and eggs; heat through.

This is my grandma's recipe. It's so quick and easy to make. It goes just perfect with any Chinese dish you may be making.

2 tablespoons oil (Sesame works best)
1 tablespoon butter
1/4 cup green pepper (chopped)
1/8 cup green onion (chopped)
3 eggs
1/4 cup soy sauce
2 cups white rice (Just a little undercooked, I use "minute rice" and cook it in 2 cups of water for 4 minutes in the m)

Steps:

  • In a wok or frying pan heat oil and butter until very hot.
  • Add peppers and chives and cook for about 2 to 3 minutes.
  • Add eggs and cook like scrambled eggs.
  • Add rice and soy sauce and cook, moving rice around constantly until done (About 2 minutes).
  • You can also add some black pepper if you like.
  • Serve right away or keep warm until serving.

Steps:

  • Place sesame oil in a wok and heat.
  • Add rice, veggies, soy sauce and oyster sauce.
  • Sauté ingredients in oil making sure to thoroughly mix rice and sauce together.
  • After 5 minutes of sautéing on medium heat move rice so that the middle of the wok is empty.
  • Add egg into the wok and scramble until cooked.
  • Finally mix egg into rice and serve.

I never could make fried rice, it always turned out sticky and nasty. Until one night when I couldn't sleep, I turned on the tv and watched this infomercial for cookware and they made fried rice. And what do you know, its a good recipe! Only thing good that ever came out of a infomercial, lol. Anyway my whole family loves it and have been asked for the recipe many times. If you have leftover chicken, toss it in too. I've also added hamburger and other veggies with good results too.

1/2-1 cup oleo (or butter)
1 medium onion (chopped)

½ teaspoon water
2 teaspoons sesame oil, divided

2 teaspoons light soy sauce
1 teaspoon fish sauce
1 tablespoon sriracha sauce, or to taste

  • Peel outside skin of cucumber with vegetable shredder to create a ragged design on the outside. Slice cucumber diagonally and arrange in a circle around the serving platter. Serve rice in middle of platter, topping with additional green onion and a dash of white pepper.

3 tablespoons peanut oil
2 large eggs, lightly beaten with a pinch of kosher salt
4 scallions (white and green), thinly sliced
1/4 cup minced carrot
1 large clove garlic, minced
Pinch red chile flakes
1 teaspoon minced peeled fresh ginger
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
3 cups cooked long-grain rice
1 cup cooked meat cut in 1/2-inch cubes, such as pork, ham, beef, or chicken
1/2 cup frozen peas, defrosted in a strainer at room temperature

Steps:

  • Put the mushrooms in a small bowl and cover with boiling water and soak until re-hydrated, about 20 minutes. Drain, squeeze dry, and cut mushrooms in quarters. Set aside.
  • Heat 1 tablespoon of the peanut oil in a well-seasoned wok or large non-stick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs, swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool, cut into 1 inch pieces.
  • Wipe out the pan with a paper towel and heat the remaining peanut oil over high heat. Add the scallions and carrots and stir-fry for 1 1/2 minutes. Steps:

  • Boil the rice in stock/broth and season ass desired.
  • Sauté ginger, 2 cloves of garlic, and red onion in vegetable oil on medium until fragrant. To this, add the mixed vegetables and seasonings of choice.
  • While vegetables are cooking, make a garlic butter paste with the remaining garlic and butter. To the paste, add lemon juice and ½ tbsp soy sauce and mix. Add 1 tbsp paste to the vegetables. Stir well on medium heat.
  • When veggies are done, remove from the pan and put in a separate bowl.
  • Put more oil in the pan and add the rice to the pan. Season rice with white pepper, curry, and chicken bouillon powder.
  • Add the garlic paste to rice and stir. Then, add vegetables, remaining soy sauce, and remaining garlic butter paste and stir well.
  • Serve warm.
