FLUFFY WAFFLE RECIPE
Use this fluffy waffle recipe to make thick, fluffy homemade waffles without the hassle of beating egg whites! Make a double-batch and freeze for later.

Steps:
- Preheat waffle iron. Gently coat with nonstick baking spray.
- In a large bowl, combine the flour, sugar, baking powder, and salt. Use the back of a spoon to create a "well" in the center.
- Whisk the two eggs into the milk until well combined.
- Pour the wet ingredients (butter, milk/egg mixture, vanilla) into the well of the dry ingredients and whisk until blended. (Note: the batter will be slightly lumpy, do not over-mix.)
- Scoop the batter into the preheated waffle iron and cook until the waffles are golden brown and crisp. (About 2-3 minutes, but this will vary wildly depending on your waffle maker.)
- Serve immediately or lay on a wire cooling rack until cool. Store leftovers in an airtight bag in the freezer.

- Preheat the waffle iron according to the manufacturer's directions.
- Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
- In a small bowl, mix egg yolks, milk, and butter. Set aside.
- In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
- Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
- Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

- Whisk eggs together in a large bowl until fluffy. Mix in 2 cups milk, vegetable oil, and vanilla extract until combined.
- Combine 2 cups flour, sugar, cinnamon, nutmeg, baking powder, and salt in a separate bowl. Slowly pour flour mixture into egg mixture, stirring as you pour. This is a recipe I got from my mom. I grew up with these waffles and my brother and I loved them. No sugar in this recipe, but who needs it with the added butter and syrup or powdered sugar. I am saving this for my personal cookbook.

- Mix the flour, baking soda, baking powder and salt very well(otherwise may get bites that are bitter), I use a plastic bag and just shake all very well. Mix the eggs, milk and oil in a seperate bowl and then add the dry ingredients and mix all well.

- Mix mix, water, milk powder (or 1.5 cups of milk if using instead) and egg yolk with beaters until well mixed.
- In a separate bowl, beat egg whites with clean beaters until stiff.
- Fold egg whites into batter.
- Pour batter onto a preheated waffle griddle/iron/baker and bake.
- These can be frozen when cooled. Best if heated in microwave briefly (about 10-30 seconds depending on microwave) but can be toasted if you like them crispy.
