This is my family's absolute favorite soup, and I can have it on the table in 30 minutes. I usually double the recipe, as the flavors blend and make the soup even better the next day.-Dawn Rohn, Riverton, Wyoming

1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
3 medium Yukon Gold or red potatoes, chopped
2 medium onions, chopped
2 tablespoons olive oil
1 bunch kale, trimmed and torn
4 garlic cloves, minced
1/4 teaspoon pepper
1/4 teaspoon salt
2 bay leaves
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 carton (32 ounces) chicken broth

Steps:

  • In a Dutch oven over medium-low heat, cook the sausage, potatoes and onions in oil for 5 minutes or until sausage is heated through, stirring occasionally. Add kale; cover and cook for 2-3 minutes or until kale is wilted. Add garlic; cook 1 minute longer. , Add the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 9-12 minutes or until potatoes are tender. Discard bay leaves.

This is the best Kale soup I have ever eaten. I will post it exactly as Panera's did, but I used 8 ounces of the turkey Kielbasa instead of 6 and 48 ounces of the chicken broth. Great with some crusty bread.

2 teaspoons olive oil
6 ounces smoked turkey kielbasa, chopped
1 onion, large, chopped
1 celery, chopped
1 garlic clove, minced
6 cups low sodium chicken broth
2 cups water
8 ounces kale, well washed, thick stems removed and leaves sliced or
2 (10 ounce) packages frozen kale, thawed and squeezed dry
12 ounces red potatoes, cut in 1/2 inch pieces with skin
1/2 teaspoon smoked paprika
1/2 teaspoon hot sauce
1/4 teaspoon salt
1 1/2 cups cooked white beans, rinsed and drained (I used a 16 ounce can cannelini beans)

Steps:

  • Heat olive oil in a large soup pot over medium heat.
  • Add kielbasa and cook until browned well all over, about 5 minutes.
  • Remove to a bowl.
  • Add onion and celery to pot and cook until soft, about 5-6 minutes.
  • Add garlic and cook for 1 minute.
  • Return kielbasa to pt and add broth, water, and kale.
  • Bring to boil over high heat and then reduce heat to medium-low.
  • Cover and simmer until kale begins to wilt,about 10 minutes.
  • Stir in potatoes, paprika, hot sauce, and salt.
  • Simmer, covered until potatoes and kale are tender, about 20 minutes.
  • Add beans and cook until just heated through, about 5 minutes.

KIELBASA AND KALE MAC AND CHEESE



Kielbasa and Kale Mac and Cheese image

Kielbasa and cheese is an incredibly comforting combination. And the torn kale in this recipe holds onto the cheese sauce so well it becomes almost tastier than the macaroni itself. We used sharp Cheddar for this recipe, but 1 pound of your favorite melting cheese will work as well. Just don't use a cheese aged longer than 12 months or your sauce might get grainy or separate.

1 pound elbow macaroni
2 tablespoons extra-virgin olive oil
1 pound Tuscan or curly kale or Swiss chard, stems removed, leaves torn
1/2 medium onion, chopped
1 garlic clove, finely grated
12 ounces kielbasa, cut into 1/2-inch-thick slices
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 pound sharp Cheddar cheese (not aged more than 12 months), shredded
Kosher salt
Pinch cayenne pepper

Steps:

  • Bring a large pot of water to a boil. Salt the water and add the macaroni. Cook, stirring occasionally, until al dente, about 9 minutes. Drain.
  • Meanwhile, heat 1 tablespoon oil in a large heavy pot over medium-high heat until very hot, about 1 minute. Add the kale and 1/4 cup water, cover and let cook until wilted and just tender, about 2 minutes. Uncover, toss the kale, and continue cooking until all of the water has evaporated, 4 to 5 minutes. Transfer the kale to a medium bowl and set aside.
  • Heat the remaining 1 tablespoon oil in same pot over medium-high heat. Add the onion and garlic and cook until the onion is tender and begins to brown, 4 to 5 minutes. Add the kielbasa and cook, tossing occasionally, until lightly browned, 2 to 3 minutes. Add the flour, stir to coat and cook for 1 minute. Stir in the milk and kale and bring to a boil; add the cheese a few handfuls at a time and stir to combine. Reduce the heat to low and cook, stirring frequently, until the cheese has completely melted, about 2 minutes.
  • Stir the macaroni into the cheese mixture until evenly coated; remove from the heat. The sauce will look very loose but will thicken off the heat.

A thick stew with a rich potato base, fresh kale, and slices of savory kielbasa. This is a meal all by itself.

6 large potatoes, peeled and cubed
¼ cup butter
10 cups water
1 teaspoon salt
1 teaspoon ground black pepper
2 ½ pounds kale - rinsed, dried and chopped
⅔ pound kielbasa sausage, sliced into 1/2 inch pieces

Steps:

  • Place the potatoes into a large stockpot, over medium high heat. Add butter and water, and bring to a boil. Cook potatoes until tender, about 20 minutes. Reserve the cooking liquid and mash potatoes in the pan until smooth. Return the potato water to the pot and stir in salt and pepper. Simmer for 20 minutes.
  • Stir in the fresh kale and sausage and simmer for another 30 minutes. Serve hot.

12 ounces fully cooked smoked kielbasa sausage, thinly sliced
1 onion, chopped
1 cup chopped fresh fennel bulb
4 garlic cloves, minced
1 1/2 tablespoons chopped fresh thyme
1/2 teaspoon dried crushed red pepper
10 cups canned low-salt chicken broth
4 cups chopped kale (1/2 bunch)
1 15-ounce can cannellini (white kidney beans), rinsed, drained
1 9-ounce package cheese tortellini
1 cup grated Asiago cheese* or Parmesan cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add next 6 ingredients and sauté until vegetables are soft and kielbasa is brown, about 12 minutes. Add broth and bring to boil. Stir in kale and cannellini. Reduce heat to low and simmer until kale is wilted, about 4 minutes. (Can be made 1 day ahead. Cool slightly; cover and refrigerate. Bring to simmer before continuing.) Add tortellini to soup. Simmer until pasta is just tender but still firm to bite, about 5 minutes.
  • Ladle soup into bowls. Serve, passing cheese separately.
  • Available at Italian markets, specialty foods stores and some supermarkets.

POTATO, KALE, AND KIELBASA CASSEROLE

3 pounds russet (baking) potatoes (about 6)
1/2 stick (1/4 cup) unsalted butter
3/4 cup chicken broth
2 tablespoons cider vinegar
2 1/2 pounds kale, coarse stems discarded and the leaves washed well
1/2 pound MÜnster, grated coarse (about 2 cups)
1 pound smoked kielbasa, cut crosswise into 1/4-inch-thick pieces
2 large onions, halved lengthwise and sliced thing crosswise

Steps:

  • In a kettle combine the potatoes, peeled and quartered, with enough water to cover them by 2 inches, bring the water to a boil, and boil the potatoes for 15 minutes, or until they are tender. Transfer the potatoes with a slotted spoon to a colander, reserving the cooking liquid, and force them through a ricer into a bowl. Add the butter, 1/2 cup of the broth, the vinegar, and salt and pepper to taste and combine the mixture well. Bring the reserved cooking liquid to a boil, add the kale, and boil it for 20 minutes, or until it is crisp-tender. Drain the kale in the colander, refresh it under cold water, and press out the excess water. Stir the kale and 1 cup of the MÜnster into the potato mixture and spread the mixture in a buttered 13- by 9-inch baking dish.
  • In a large skillet brown the kielbasa over moderate heat and transfer it to a bowl with the slotted spoon. In the fat remaining in the skillet cook the onions over moderate heat, stirring, until they are golden and stir them into the kielbasa. Scatter the kielbasa mixture on top of the potato mixture, sprinkle it with the remaining MÜnster, and pour the remaining 1/4 cup broth on top. The casserole may be prepared up to this point 1 day in advance and kept covered and chilled. Bake the casserole in the middle of a preheated 400°F. oven for 20 minutes, or until it is heated through.

12 -16 ounces smoked sausage, thinly sliced (kielbasa recommended)
2 medium onions, chopped
1 medium fennel bulb, chopped
4 -6 garlic cloves, minced

1/2-1 teaspoon red pepper flakes, crushed
12 cups chicken broth
1 (15 ounce) can cannellini beans (or great northern or whatever)
1 bunch kale, destemmed and chopped
1 (9 ounce) package cheese tortellini
grated parmesan cheese or asiago cheese, for garnish

Steps:

  • Heat oil, fry sausage until beginning to brown, add vegetables and sauté until tender and translucent-15-20 minutes.
  • Add broth and bring to a boil, add beans and kale and simmer 15 minutes or so. Add tortellini to soup and simmer until pasta is tender (about 5 more minutes).
  • May serve topped with some freshly grated cheese.

1/2 pound smoked, cooked garlic sausage like kielbasa
4 tablespoons extra virgin olive oil
1 medium onion, diced
3 cloves garlic, minced
1 pound small boiling potatoes, peeled and sliced 1/2-inch thick
Salt and freshly ground black pepper to taste
4 cups, packed, very finely shredded kale leaves (about 1 bunch)
2 cups cooked kidney beans (see note)

Steps:

  • Slice the sausage into rounds about 1/2-inch thick. Heat two tablespoons of the oil in a heavy 3- to 4-quart saucepan, add the sausage and saute over medium heat until the sausage is just beginning to brown. Remove the sausages from the pan, draining well.
  • Add the onion to the pan and saute over low heat until it is soft but not brown. Stir in the garlic. Add the potatoes and six cups of water. Bring to a boil and simmer about 15 minutes, until the potatoes are tender.
  • Drain the potatoes, leaving the cooking liquid in the saucepan, and roughly mash them. Stir the mashed potatoes back into the liquid. Season with salt and pepper.
  • Add the kale, sausage, beans and 2 tablespoons olive oil to the soup. Bring to a boil and simmer until the kale has wilted, 6 to 8 minutes. Check seasonings and serve
