1 - 1.5 lb / 500 - 750g chicken thigh fillets (, skinless boneless)
3 cloves garlic (, minced)
2 tsp ginger (, freshly grated)
2 tbsp soy sauce
2 tbsp tomato ketchup
2 tbsp Oyster sauce
1 1/2 tbsp Chinese cooking wine OR Mirin ((Note 1))
1 - 3 tbsp Sriracha ((adjust spiciness to taste))
2 tbsp brown sugar
1 tsp sesame oil
2 tsp oil
Sesame seeds
Finely sliced shallots / green onions
Finely sliced red chilies

Steps:

  • Mix Marinade ingredients together. Add chicken and mix to coat. Marinade in the fridge for a minimum of 1 hour or up to overnight.
  • Heat oil in a large non stick skillet or BBQ over medium high heat. (See notes for other cooking methods) Add chicken and cook until each side is dark golden brown and chicken is cooked through (about 3 minutes each side). Transfer to plate, cover loosely with foil and rest for 3 minutes.
  • Garnish with chillies, shallots and sesame seeds if desired. Serve with white rice and slices of cucumber.

Steps:

  • Whisk the vinegar, honey, soy sauce, toasted sesame oil, chili garlic sauce, garlic, and salt in a bowl until smooth. Pour half the marinade into a large plastic zipper bag; retain the other half of the sauce. Place the chicken thighs into the bag containing marinade, squeeze all the air out of the bag, and seal. Shake a few times to coat chicken; refrigerate for 1 hour, turning bag once or twice.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Pour the other half of the marinade into a saucepan over medium heat, bring to a boil, and cook for 3 to 5 minutes, stirring often, to thicken sauce. Remove the chicken from the bag; discard used marinade. Place chicken thighs into a 9x13-inch baking dish, and brush with 1/3 of the thickened marinade from the saucepan.
  • Bake 30 minutes, basting one more time after 10 minutes; an instant-read thermometer inserted into a chicken thigh should read 165 degrees F (75 degrees C). Let stand for 5 or 10 minutes; meanwhile, bring remaining marinade back to a boil for 1 or 2 minutes, and serve chicken with marinade. Sprinkle with green onions.

2 tablespoons honey
3 slices fresh ginger root
2 cloves garlic, crushed

Steps:

  • In a small microwave-safe bowl, combine the soy sauce, oil, honey, ginger root, and garlic. Heat in microwave on medium for 1 minute, then stir. Heat again for 30 seconds, watching closely to prevent boiling.
  • Place chicken breasts in a shallow dish. Pour soy sauce mixture over, and set aside to marinate for 15 minutes.

Steps:

  • Combine all ingredients in a small mixing bowl. Whisk well to combine.
  • Transfer the marinade to a ziptop freezer bag. Add the chicken pieces and store in the refrigerator on a tray to catch the drips.
  • Allow the chicken to marinate for 2 to 24 hours.
  • When ready to serve, remove the chicken from the marinade and cook on a hot grill.

1 ½ lbs. boneless skinless chicken breasts or thighs
½ cup low sodium soy sauce
⅓ cup honey
¼ cup rice vinegar
1 tablespoon brown sugar
1 tablespoon sesame oil
1 tablespoon minced garlic
1 teaspoon minced ginger
2 teaspoons salt
Sriracha hot sauce, optional
Toasted sesame seeds, optional
Chopped green onions

Steps:

  • Combine the soy sauce, honey, vinegar, brown sugar, sesame oil, garlic, and ginger in a mixing bowl and whisk together.
  • Place chicken in a resealable plastic bag and pour marinade mixture over top. Carefully remove excess air, seal the bag, and lay flat.
  • Let the chicken marinate in the refrigerator for at least 2 hours or overnight.
  • Place marinated chicken on a plate and salt lightly. Leave at room temperature while the grill preheats. Set aside leftover marinade in the plastic bag-do not throw it away!
  • Clean and oil the grill grates then preheat to high heat (about 500° F).
  • Place chicken on the grill and cook for 5 minutes. Flip, and cook for an additional 5-6 minutes (or until meat thermometer reads an internal temp of 165° F.
  • Remove chicken from the grill and tent with foil for 5-10 minutes before serving.
  • Pour the marinade that remains in the plastic bag into a large shallow non-stick pan and bring to a full boil.
  • Immediately reduce heat to a simmer, and stir constantly with a wooden spoon until sauce has thickened and will coat the back of a spoon. It should be thinner than honey but not watery. Do not overheat as sugars will burn! Add drips of Sriracha hot sauce to taste.
  • Drizzle (or brush) the finished sauce over the grilled chicken. Garnish with toasted sesame seeds and/or chopped green onions and serve.

2 tablespoons dark brown sugar
1/4 cup fish sauce

4 whole boneless skinless chicken breasts, halved. (Use less chicken if you like)
3 tablespoons soy sauce
1 1/2 tablespoons white vinegar (1/2 Tbsp. is equal to 1 tsp. Cider Vinegar can be used in place of White Vinegar.)
3 tablespoons brown sugar
1/8 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place chicken in glass baking dish. (A 9 X 9, or 8 X 11 dish works well, I don't suggest using a 9 X 13).
  • In a small bowl combine soy sauce, vinegar, brown sugar, garlic powder and black pepper; stir or whisk until well blended. Pour sauce mixture over chicken.
  • Bake chicken with sauce mixture for about 20 - 30 minutes or until chicken is cooked through. For best results turn chicken over half way through cooking.
