3-Ingredient Silken Tofu Chocolate Mousse - A super easy dessert or snack, ready in 5 minutes. Gluten-free, dairy-free, eggless, and vegan.

3.5 oz. (100 g) roughly chopped dark chocolate ((I used 70% dairy-free dark chocolate))
1 package (12 oz.-340 g) organic silken tofu (at room temperature, drained)
2 tablespoons maple syrup
chocolate shavings
raspberries
blackberries
fresh mint

Steps:

  • Melt the chocolate in the microwave in 30 second intervals, stirring each time, until the chocolate is melted. Set aside to cool at room temperature.
  • Meanwhile, place the silken tofu and maple syrup in a food processor and blend until very smooth. Add the melted chocolate and blend until well combined.
  • Scoop the mixture into 3 ramekins or glasses, and refrigerate for 30 minutes.
  • To serve, garnish with chocolate shavings, raspberries, blackberries and a sprig of fresh mint.
  • Leftovers will keep in the fridge for up to 3-4 days

1 cup dates, pitted and soaked (150 g)
1 cup silken tofu (250 g)
1 cup dark chocolate, melted (140 g)
½ cup aquafaba/chickpea liquid (120 ml)
Shredded coconut
Dark chocolate shavings
Raspberries
Coconut whipped cream

Steps:

  • Drain your soaked and pitted dates well, then place them into a food processor and pulse to obtain a puree.
  • Add the silken tofu and melted dark chocolate, then process again until a creamy batter forms.
  • Pour your chickpea liquid or aquafaba into a medium-sized bowl and whip with a hand mixer to obtain a frothy mixture. This may take a couple of minutes, so don't worry!
  • Slowly add your chocolate, date and tofu mixture from the food processor into the fluffy aquafaba and gently whisk with a spoon to incorporate until you have a homogeneous chocolate mousse.
  • Divide into glasses and refrigerate for at least an hour before serving.

This smooth, chocolately dessert is made with silken tofu, which is usually sold in vacuum-packed, shelf-stable containers in the Asian-food section of grocery stores.

3/4 cup chocolate chips
1 container (12 ounces) room-temperature silken tofu
1/2 cup warmed milk
1 ounce finely chopped chocolate, or another 2 tablespoons chocolate chips

Steps:

  • Microwave chocolate chips in 30-second increments, stirring each time, until melted.
  • In a food processor, puree melted chocolate with silken tofu (soft or firm) and warmed milk until smooth. Force mixture through a sieve into a medium bowl, pressing with a spoon.
  • Scoop mixture into four serving dishes, and refrigerate until chilled, about 30 minutes. Garnish desserts with finely chopped chocolate or chocolate chips, if desired.

This is just awesome, and a great way to get some soy in your diet (kids love this too!). And it does not taste like tofu at all. I've listed a standard graham cracker crust, however I've also made it with a crust I made from crushed cholate wafers, butter and slivered almonds, if anyone wants instructions for that as well, just let me know!. By the way - cooking time is actually the time it takes to chill.

16 ounces silken tofu (please see note at bottom of instructions)
12 ounces semisweet chocolate
1 teaspoon vanilla or 1 teaspoon almond extract
1 graham cracker crust (or what ever type crumb crust you prefer)
whipped cream, if desired (to garnish) (optional)

Steps:

  • Melt chocolate in microwave, or in double boiler. I use the microwave, it's just easier.
  • Place tofu in blender, and blend til smooth.
  • Add chocolate, and extract. Pulse blender til mixed.
  • Pour into pie crust and chill about an hour.
  • *Note: I couldn't remember the exact weight of the tofu package. You'll find silken tofu in the veggie section, next to where they have won ton wrappers - whatever size the silken package is, that's what I buy - and I've only ever seen one size. They have a lite version, but I've never tried that, but would probably work. Also, if you want a more intense chocolate flavor, just add a lil more chocolate.

Smooth and creamy chocolate mousse made vegan by using silken tofu as the base. I like to think that since the tofu has protein it makes this even a bit healthy! For the ingredients I recommend almond or soy milk. Skip some of the others like rice milk which is too watery. If you're doing this totally vegan, look for vegan chocolate chips. Regular semi-sweet chocolate chips typically contain some milk. Most importantly, the best tofu is Mori-Nu silken tofu in firm or extra-firm (also comes in Lite). This is the shelf stable silken tofu found with the Asian foods. If you can't find this there is sometimes a refrigerated silken tofu with all the other kinds of tofu but the package is bigger so the other ingredients need to be adjusted accordingly.

1 (12 1/3 ounce) package silken tofu (Mori-Nu Firm or Extra-Firm)
3/4 cup almond milk
1 cup chocolate chips
1 teaspoon vanilla extract

Steps:

  • Place almond milk and chocolate chips in a microwave-safe bowl and heat about 1 minute depending on your microwave. Stir together until chocolate chips are dissolving in milk, you should now have a rich chocolate milk. If necessary, heat a bit a longer. Let the mixutre cool for a few minutes.
  • Add chocolate mixture, tofu, and vanilla to a food processor or blender and process until pureed. This is important: taste the mixture to make sure you don't a have a tofu taste since all brands are different. If it's not chocolaty enough you can melt some more chocolate chips and add it but don't add any more milk or it won't set properly.
  • Pour into 4-5 ramekins or small dishes. It will set better this way than if it's in one big bowl. Chill 2-3 hours and it's ready to eat!
