SHRIMP BURGER

1 stalk celery, small-diced
1/2 carrot, small-diced
1/4 yellow onion, small-diced
1 teaspoon each parsley, dill, tarragon and chives, cut into chiffonade
2 small cloves garlic, minced
1 fresh bay leaf
1 tablespoon Spanish paprika
Salt and ground black pepper
Sugar, as needed
1 to 1 1/2 pounds shrimp, peeled
4 tablespoons butter, plus more as needed
4 to 6 burger buns
Aioli, recipe follows
Cabbage-Apple Slaw, recipe follows
5 egg yolks
3/4 cup lemon juice
1/4 cup hot sauce
8 cups blended oil
Salt and ground black pepper
1 cup marigold or tarragon, chopped
1/2 head cabbage, shredded (3 to 4 cups)
2 apples, cut into julienne
Salt
1/2 cup lemon juice
1/2 cup extra-virgin olive oil
1 tablespoon thyme leaves, chopped
Ground black pepper
Sugar, as needed

Steps:

  • Saute the celery, carrots, onions, herbs, garlic, bay leaf, paprika and salt, pepper and sugar to taste (this is called a sofrito) in a medium saute pan, 5 to 7 minutes. Remove from the pan and cool until ready to use.
  • Pulse the shrimp in a food processor, leaving some larger shrimp pieces. Mix with the sofrito and sprinkle with salt.
  • Form the shrimp mixture into 4 to 6 burger patties. Sprinkle both sides of the burgers with salt and pepper.
  • Heat a large saute pan with the butter over medium-high heat. Cook the burgers until golden brown, about 3 minutes on each side. Pull the burgers from the pan and toast the buns in the butter (you may need to add a little more butter at this step, depending on how much is left in the pan).
  • To serve, top the burger with Aioli and Cabbage-Apple Slaw.
  • Place the egg yolks, lemon juice and hot sauce in a food processor and pulse to combine.
  • While the food processor is running, slowly add the oil to form an emulsion. Once the egg yolks and oil have emulsified, thin out with water (about 1/4 cup) and season with salt and pepper. Fold in the herbs. Store in an airtight container in the refrigerator for up to 1 week.
  • Mix together the cabbage and apples in a large bowl and season with salt.
  • Combine the lemon juice, olive oil and thyme in a small bowl. Season with salt, pepper and sugar. Mix the slaw with the dressing.

1/2 cup finely minced cornichons
2 tablespoons Dijon mustard
1 teaspoon mustard powder
1 teaspoon finely minced fresh tarragon
1 lemon, juiced

Vegetable oil, for frying
2 eggs, separated
8 ounces peeled and cleaned small shrimp (26/30 count), chopped
1 cup finely sliced scallions
1 cup small diced zucchini
1 clove garlic, minced
1/2 jalapeno, minced
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon smoked paprika
About 2/3 cup buttermilk
Kosher salt and freshly ground black pepper

Steps:

  • For the cornichon dressing: In a medium bowl, mix together the mayonnaise, cornichons, Dijon mustard, mustard powder, tarragon and lemon juice. Season with salt and pepper.
  • For the shrimp fritters: Heat about 1 1/2 inches vegetable oil in a heavy-bottomed pot until a deep-fry thermometer inserted in the oil registers 350 degrees F.
  • In a small mixing bowl, whip the egg whites to medium peaks; set aside. In a separate bowl, combine the shrimp, scallions, zucchini, garlic and jalapenos and set aside.
  • Whisk together the flour, baking powder and paprika in a medium bowl. Whisk in the egg yolks and enough of the buttermilk so the mixture is thick and not runny (adjust the amount accordingly). Season with salt and pepper. Fold the shrimp mixture into the batter, followed by the egg whites just to incorporate.
  • Drop the fritters into the oil in batches using a small scoop or spoon, about 1 tablespoon each. Cook until golden brown, about 5 minutes, then drain on paper towels. Immediately season with salt. Serve with the cornichon dressing.

All of the above!

12 ounces linguine
1 1/4 pounds large shrimp, peeled and deveined
1/3 cup extra-virgin olive oil
5 cloves garlic, minced
1/4 to 1/2 teaspoon red pepper flakes
1/3 cup dry white wine
Juice of 1/2 lemon, plus wedges for serving
4 tablespoons unsalted butter, cut into pieces
1/4 cup finely chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
  • Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

1 pound jumbo shrimp (21/25), peeled, deveined, tails off
Kosher salt and freshly ground black pepper
3 tablespoons hoisin sauce
3 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 teaspoon Dijon mustard
1 teaspoon grated fresh ginger
1 teaspoon sesame oil
1 large clove garlic, grated
1/4 cup vegetable oil
12 ounces baby bok choy (3 to 5 heads, depending on the size), halved lengthwise
1 red bell pepper, cut into 1/2-inch strips
4 cups cooked brown rice, or any grain you like, such as quinoa
1 tablespoon sesame seeds
4 scallions, thinly sliced
1/4 cup chopped peanuts
1 cup crunchy chow mein noodles
1/4 cup fresh cilantro, chopped
Sriracha, if desired

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Sprinkle the shrimp with 1/2 teaspoon each of salt and pepper. Set aside.
  • Whisk the hoisin, soy, vinegar, Dijon, ginger, sesame oil and garlic together in a large bowl. Whisk in the vegetable oil. Add the bok choy to the bowl, then toss, then transfer them to one side of the baking sheet. Add the red pepper to the bowl, then toss in the remaining marinade, and transfer them to the center of the baking sheet. Toss the shrimp in the remaining marinade and arrange it on the last side of the baking sheet. Pour any remaining marinade over the vegetables and shrimp. Bake until the shrimp are pink and opaque and the vegetables are starting to char, 15 to 20 minutes. Remove from the oven and set aside. (The bok choy can be chopped into smaller pieces if desired.)
  • Divide the rice among 4 bowls. Add a few shrimp and the vegetables to each bowl. Top with the sesame seeds, scallions, peanuts, crunchy noodles and cilantro. Drizzle with the sriracha, if using. Serve warm!

SHRIMP WITH A YUZU DRESSING

Yuzu is an Asian citrus fruit. It resembles an underripe lime and has that same sourness. It has a wonderful light floral note, too. It does great sunken into mayonnaise. This shrimp dish is a knockoff of a Nobu restaurant classic for a reason-it's ethereal. Use rock shrimp or small shrimp for this, so it can be eaten in little bites. A note about substitutions: If yuzu is unavailable, simply sub in lime juice and a few grates of lime zest.

8 ounces beer (preferably a pilsner or lager)
2 ounces vodka
1/4 cup soda water, plus a little extra if needed
1 1/2 cups all-purpose flour, plus a little extra if needed
1 teaspoon hot paprika
1 teaspoon baking soda
1/4 cup mayonnaise
1/4 cup yuzu juice
1 tablespoon Dijon mustard
1/4 teaspoon paprika
A few grates of zest from 1 lemon
1 quart vegetable oil, for frying
2 heads Bibb lettuce, leaves separated
1 large lemon, cut into VERY thin slices with a mandoline, seeds removed
4 to 6 sprigs fresh basil, slightly stemmed
Kosher salt
1 1/2 pounds small shrimp, such as rock shrimp, peeled and deveined

Steps:

  • For the batter: Combine the beer, vodka and soda water in a medium bowl. Slowly whisk in the flour, paprika and baking soda. The batter should be fairly thick but also easy to stir. If a little loose, whisk in a little more flour. If too thick, add a splash of soda water. Do not overmix. Set aside on the counter for 15 to 20 minutes.
  • For the yuzu dressing: In a medium bowl, whisk together the mayonnaise and yuzu juice. Whisk in the mustard, paprika and lemon zest and set aside.
  • For the shrimp: Pour the oil into a heavy-bottomed pot. Heat the oil to 320 degrees F, using a deep-frying thermometer to monitor the temperature. Put a wire rack into a rimmed baking sheet.
  • Arrange the Bibb lettuce in an overlapping circle in a large shallow serving bowl or platter.
  • Once the oil reaches 320 degrees F, add the lemon slices and fry until crispy and lightly browned, 2 to 3 minutes. Transfer to the rack over the baking sheet with a slotted spoon. Fry the basil (take care as it can splatter when it hits the oil) until crispy, 1 to 2 minutes. Transfer to the same rack. Season with salt.
  • Raise the oil temperature to 350 degrees F.
  • Add the shrimp to the batter to coat. Transfer the shrimp to the oil in batches with a slotted spoon, holding the spoon just over the oil and carefully dropping them in one by one to prevent clumping and splashing. Fry each batch until golden brown, 2 to 3 minutes, then transfer them to the rack; raise the oil temperature back to 350 degrees F between batches.
  • Drizzle the shrimp with some of the yuzu sauce and immediately spoon the shrimp into the center of the bowl of lettuce. Sprinkle with the fried lemon and basil leaves. Top with the remaining yuzu dressing to taste.

MIRLITON AND SHRIMP DRESSING

Mirlitons, our local squash, are also know as chayote. Any variety of fall squash may be substituted. Diced day-old bread is the best to use for these kinds of dressings; bread crumbs will make the dressing too dry. Mirliton dressing is too loose for a stuffing, so it's always served as a side dish.

4 mirlitons, halved and seeded
3 tablespoons olive oil
8 tablespoons butter
1 medium onion, diced
1 stalk celery, diced
1 green bell pepper, seeded and diced

Leaves from 1 sprig fresh thyme
Leaves from 1 sprig fresh rosemary, chopped
Leaves from 1 sprig fresh sage, chopped
1 pound medium Louisiana or wild American shrimp, peeled, deveined, and finely chopped
1/2 cup crabmeat, picked over
4 cups diced day-old French bread
2 cups Basic Chicken Stock
1/2 teaspoon Basic Creole Spices
1-2 dashes Tabasco
Salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Rub the mirlitons with oil. Place them on a baking sheet cut side down and bake until they are fork tender and easily peeled, about 45 minutes. Set the mirlitons aside to let rest until they are cool enough to handle, then peel and cut them into 1-inch pieces.
  • Melt the butter in a large skillet over moderate heat. Add the onions, celery, and bell peppers and cook until the onions are translucent, about 5 minutes. Add the garlic and cook for another minute. Increase heat to medium-high, add the fresh herbs and shrimp, and stir frequently, until shrimp are just cooked , 3-5 minutes. Stir in the crabmeat. Transfer to a large mixing bowl. Add the diced mirlitons and the remaining ingredients and stir until well combined.
  • Spoon the dressing into a large buttered baking dish and bake until golden brown, 20-30 minutes.

BBQ SOAKED SHRIMP WITH CREME FRAICHE DRESSING

  • Cook macaroni, drain, and cool.
  • In a large bowl, mix macaroni, shrimp, eggs, onions, celery, olives, and pickles and toss well.

  • In a deep medium bowl, combine first 9 marinade ingredients, blending well. Add shrimp, coating each well with marinade. Cover and refrigerate 30 to 45 minutes to allow shrimp to absorb marinade flavors.
  • While shrimp are marinating, prepare fruit and vegetables; set aside.
  • Remove shrimp from marinade, discarding marinade. In a medium heavy skillet, saute shrimp in 1 - 1 1/2 tablespoons hot oil for about 2 to 3 minutes, stirring frequently, until shrimp are opaque in color and cut easily with a fork and are done. Do not overcook as shrimp will become tough.
  • Arrange salad greens on each of four dinner plates, dividing evenly. Top each with sauteed shrimp, fruit, vegetables and snipped cilantro. Drizzle a small amount of Southwestern-style Vinaigrette Dressing over each salad. Garnish each with shredded cheese of choice, sliced olives, and a sprig of cilantro, if desired.
  • For the Dressing:.
  • In a deep small bowl, combine the first 7 ingredients, blending well. With a wire whisk, gradually add both olive oil and salad oil, whisking until mixture is smooth and well blended. Add salt and pepper to taste, whisking to blend. Or, combine vinegar and oil in a blender container; cover and blend until mixture is smooth.
  • Add remaining ingredients, stirring by hand to mix. Dressing may be stored in the refrigerator, tightly covered, in a glass container for up to 1 week. Variation: Omit vinegar and use 1/3 to 1/2 cup lime juice. May add 1 teaspoon grated lime peel to dressing, if desired.

1 tablespoon seafood seasoning
1 pound uncooked medium shrimp, peeled and deveined
1 large onion, chopped
1 celery rib, chopped
1/2 cup chopped green pepper
3 green onions, chopped
1/2 cup butter, cubed
1 package (14 ounces) seasoned stuffing cubes or crushed seasoned stuffing
3 cups crumbled cornbread
1 teaspoon seasoned salt
1/8 teaspoon garlic powder
1/8 teaspoon each black, white and cayenne pepper
Celery leaves, optional

Steps:

  • In a large saucepan, bring 5 cups of water and seafood seasoning to a boil. Add shrimp; return to a boil. Reduce heat; simmer, uncovered, for 2 minutes or until shrimp turn pink. Drain; set aside three shrimp for garnish. Chop the remaining shrimp., In a large skillet, saute onion, celery, green pepper and green onions in butter until tender. In a large bowl, combine the stuffing, cornbread, chopped shrimp, sauteed vegetables and seasonings. Stir in the remaining water. Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 30 minutes. Uncover; bake 10-15 minutes longer or until lightly browned. Garnish with celery leaves if desired and reserved shrimp.
