- Cook the orzo pasta in boiling water according to package instructions; add a dash of salt and olive oil to the cooking water. When the pasta cooks to al dante, remove from the heat then drain and transfer to a serving dish.
- While the pasta cooks, heat the butter with 2 tbsp of olive oil in a large heavy skillet. Saute the shallots on medium-high heat for 3 minutes or so then add the garlic and toss together briefly. Now add the white wine and cook for 1 minute then add the lemon juice, 1/2 cup water, and diced tomatoes. Bring to a boil then reduce the heat to medium. Cook for 15 more minutes on medium heat, stirring occasionally.
- Stir in 1 tsp of dried thyme, a pinch of salt and a little cayenne pepper to your taste.
- Add the shrimp and cook for 5 minutes or until the shrimp turns pink. Stir occasionally so that the shrimp is nicely coated in the sauce. Do not over cook the shrimp.
- Finally, stir in the spinach and remove from the heat.
- Top the the cooked orzo pasta with the garlic tomato shrimp. Garnish with your favorite herb (optional) and serve immediately with lemon slices. Enjoy!

- Heat a large straight-sided skillet over medium-high heat; swirl in oil. Add onion, season with salt, and cook, stirring occasionally, until just softened, about 2 minutes. Add tomatoes and juices and simmer, stirring occasionally, until thickened and reduced slightly, about 5 minutes.
- Stir in rice and 2 1/2 cups water, then return to a simmer. Cover, reduce heat to low, and cook until rice is tender, about 12 minutes. Test kitchen tip: Always heat cooking oil in the pan before adding other ingrdients, and swirl pan to coat bottom evenly. The oil is hot enough it sizzles when water is sprinkled in or when food is added (to prevent splattering, tip pan away from you to allow oil to pool, and add food to side of pan close to you). - Add 1 tablespoon of olive oil to a medium sized pan over medium high heat.
- Next add onion and saute' for 2 minutes until tender.
- Add minced garlic and cook for only 30 seconds.
- Add spinach and shrimp and season with salt and pepper to taste. Cook shrimp until pink.
- Pour in light coconut milk and fish sauce.
- Whisk in curry powder, tumeric and ground ginger.
- Next add tomatoes and turn heat down to medium low and saute.
- Simmer over heat for 15-20 minutes or until sauce has thickened and flavors have come together.
- While sauce simmers, add cauliflower to food processor and pulse until cauliflower breaks into tiny pieces that resemble rice.
- Remove "rice" from food processor and add to a microwave safe bowl.
- Toss rice with olive oil and heat in microwave for 4-6 minutes until completely tender and steamed through.
- Once curry sauce is thickened turn off. Serve shrimp curry over cauliflower rice and garnish with cilantro. Enjoy.

This has become a favorite for a quick, easy and elegant meal. You can use any style pasta you prefer. The smaller the shrimp the less the cooking time will be. Keep that in mind when adding spinach as the shrimp will continue to cook as the spinach steams. If I have small shrimp I add the shrimp and spinach at the same time so the shrimp doesn't overcook.

- Heat a large skillet over medium-high, melt 4 tablespoons of butter and 2 tablespoons olive oil. Turn the heat to medium and add 1/2 cup thinly sliced shallots. Cook for 2 minutes until soft and translucent. Add 1 1/2 tablespoons chopped garlic and cook for 1 more minute.
- Add 1 pound large raw shrimp (peeled, deveined and thawed) in one layer to the skillet and season with salt and pepper. Do not stir. Cook on one side for 1-2 minutes depending on the size of your shrimp. Turn the shrimp individually and cook for another 1-2 minutes. They should be a whitish opaque with the tails turning a reddish-orange color. Remove shrimp from the skillet and keep warm.
- Add the juice of 1 1/2 lemons and 1/2 cup dry white wine. Bring to a boil and add the remaining 4 tablespoons of butter.
- Add a 5 ounces package of fresh spinach and 2 cups cherry tomatoes (halved) along with 10 ounces cooked pasta into the skillet and gently toss until the spinach is wilted. Season again with salt and pepper to taste.

- Serve warm with crusty bread and a side salad (optional).
