This is a sweet little experiment with shrimp and pineapple that I tried one night on my family. It has few ingredients so it is cheap and easy for small middle-class families like ours.

25 uncooked medium shrimp, peeled and deveined
1 teaspoon blackened seasoning, or to taste
½ fresh pineapple, diced
1 (15 ounce) can whole kernel corn, drained
1 bunch fresh spinach, or to taste

Steps:

  • Cook the shrimp on medium-high heat until fully pink, seasoning with blackened seasoning while you stir, about 5 minutes. Add pineapple and allow to cook for 5 to 7 minutes. Mix in corn and cook for 5 to 7 minutes.
  • Serve warm on a bed of spinach.

¼ cup pineapple juice
¼ cup hoisin sauce
¼ cup low-sodium soy sauce
1 tablespoon sherry
1 tablespoon cornstarch
2 tablespoons vegetable oil
2 teaspoons sesame oil
1 pound large shrimp, peeled and deveined
2 cups pineapple chunks, fresh or canned
1 medium red bell pepper, cored and sliced vertically
1 medium onion, vertically sliced
½ cup snow peas
2 teaspoons minced garlic
¼ teaspoon crushed red pepper flakes, or more to taste
2 medium scallions, sliced diagonally
1 teaspoon sesame seeds

Steps:

  • Whisk pineapple juice, hoisin sauce, soy sauce, sherry, and cornstarch together in a small bowl until well combined; set aside.
  • Drizzle vegetable and sesame oils around the top of a wok or large skillet to coat the sides. Heat over medium-high heat for 1 minute. Pat shrimp dry with a paper towel and add to wok. Stir-fry for 1 minute on each side and transfer cooked shrimp to a clean plate.
  • Add pineapple, red bell pepper, onion, and snow peas to the wok, and stir-fry for 2 to 3 minutes. Stir in garlic and red pepper flakes, and cook until fragrant, about 30 seconds.
  • Return shrimp to the wok, and stir-fry an additional 2 minutes. Whisk stir-fry sauce a couple of times and pour over shrimp and vegetables, stirring constantly until thickened, about 1 minute.
  • Serve immediately, garnished with scallions and sesame seeds.

Before it is grilled, shrimp is marinated with cooked pineapple, onions and garlic in a jalapeno, vinegar and cilantro mixture. Served with a squash stew - this is truly an exquisite recipe from Chef Adrian Leon.

1 tablespoon extra virgin olive oil
8 cloves garlic
2 cups chopped white onions
12 each large shrimp, peeled and deveined
½ cup fresh pineapple, diced
½ cup pineapple juice
½ cup SPLENDA® No Calorie Sweetener, Granulated
½ teaspoon fresh oregano
1 pepper jalapeno, roasted and skinless
¼ cup white vinegar
¼ cup cilantro leaves
1 quart water
3 ears fresh corn
2 large (5" long)s poblano peppers
1 tablespoon margarine
1 pound calabaza (pumpkin-like squash), peeled and medium diced
2 sprigs fresh epazote (found in Mexican Markets)
1 cup light sour cream
1 pinch salt and pepper to taste

Steps:

  • Marinade: Saute 2 sliced garlic cloves, 1/3 cup onions and pineapple in olive oil to light golden brown.
  • Add pineapple juice, SPLENDA® Granulated Sweetener and oregano and cook for another 3 minutes. Remove from heat and let the mixture cool. When cooled add roasted skinless jalapeno, vinegar and cilantro. Mix everything together with a blender. Toss the shrimp with the marinade and refrigerate in a covered medium bowl for at least one hour.
  • For the squash: Remove corn kernels from the cob and save the cobs (you should have about 2 cups of kernels).
  • Place corn cobs and 1 quart of water in a 4 quart stockpot. Bring stockpot to a boil and reduce the heat to medium, simmer for 15 more minutes. Strain the corn stock and set aside.
  • Grill the poblanos over an open flame until they are charred. Put them in a plastic bag to sweat, about 4 minutes. When cool enough to handle, peel off the skins and discard (do not wash the chiles with water, this will reduce the flavor). Cut the chilies into 1/4 inch strips (Rajas).
  • Cook 1 2/3 cups onions and margarine until translucent (about 2 minutes) in a 4 quart heavy stockpot (cazuela or deep cast-iron frying pan) over medium heat.
  • Stirring occasionally, add corn kernels, diced squash and 6 cloves of garlic.
  • Continue cooking for another 10 minutes then add epazote (or cilantro) and cook for 5 more minutes. Remove pan from heat and mix in sour cream and season with salt and pepper.
  • Grill shrimp for a minute each side or pan fry similarly. Season with salt and pepper and serve over squash.
  • Serve squash stew on a platter with grilled shrimp on top.

1/4 cup chicken broth, reduced sodium
1/4 cup Japanese soy sauce
1/4 cup rice vinegar

1 lb large shrimp, shelled and deveined (21 to 25 count)
1 medium red bell pepper, cored, seeds and ribs removed, and cut into 1 inch cubes

Steps:

  • To make the sauce base, sprinkle the cornstarch over 1/3 cup water in a small bowl and whisk to dissolve the cornstarch. Add the broth, soy sauce, vinegar, sugar, and red pepper flakes and mix well. Set aside.
  • Heat a 12 inch nonstick skillet over high heat. Add 1 tablesppon of the oil and swirl the skillet to slick the bottom with oil. Add the shrimp and stir-fry just until the shrimp turn opaque, about 2 minutes. Using a slotted spoon, transfer to a plate.

PINEAPPLE, MACADAMIA, COCONUT BAKED SHRIMP WITH CITRUS SAUCE

No frying, fresh flavors and a great addition of macadamia nuts gives this baked shrimp a great taste. This really isn't hard and cooks very quickly. When I make this for a dinner party, I always get the jumbo shrimp, but a good extra large shrimp will work just fine. TIPS: For the pineapple juice in the recipe, I just bought a couple of cans of the sliced pineapple rings and used the juice in the recipe, but then baked the rings along side the shrimp for a nice side dish. Also ... I love to serve this with a very simple rice pilaf and add some chopped scallions and chopped macadamia nuts to tie all the flavors together. It makes a great easy side dish.

24 extra large shrimp, peeled, tails on and deveined
2/3 cup cornstarch
1/2 teaspoon ground red pepper
1/2 teaspoon salt
3 egg whites
1 tablespoon honey
1 tablespoon pineapple juice
1 cup coconut, lightly chopped
1/4 cup macadamia nuts, fine ground
1/2 teaspoon cumin
1 cup orange juice
2 tablespoons lime juice
1/2 cup pineapple juice
2 teaspoons fresh ginger, grated (you could use 1 teaspoon ground, but the fresh gives it so much more flavor)
1/2 teaspoon minced garlic
2 -3 teaspoons cornstarch
pineapple (after using the juice in the recipe, bake the rings along side the shrimp and serve as a side dish)

Steps:

  • Shrimp -- Peel, leave the tails on and devein. To devein, run a knife from the tail to the tip, and make a thin cut, just enough so you can remove the black vein.
  • Dipping Sauce -- It just takes minutes to heat up, but now is a good time to get it ready to go. This can be heated up as the shrimp cooks. Just add everything in a small sauce pan and set on the stove. And remember, if you use the pineapple juice from a can of pineapple rings (save those rings), you can bake those for a side dish as you bake the shrimp.
  • Coatings -- #1) In a small pan or bowl, mix the corn starch, salt and pepper and set to the side. #2) Mix the egg whites, honey and pineapple juice (you may want to heat up the honey for a few seconds in the microwave so it is easier to mix in). Just set to the side. #3) Lastly, add the coconut, macadamia nuts, and cumin -- again, to a small bowl or pie plate and set to the side.
  • NOTE: I chop my macadamia nuts in my small food processor so they are fine ground, remove to the bowl or plate. Now the coconut -- I add this to my food processor and pulse only 1-2 times. Coconut is moist, and you don't want to puree it, so go easy.
  • Shrimp -- Make sure the shrimp are dry, then and dip in the corn starch mixture, this will allow the coating to stick well. Next, the egg white, and then in the nut and coconut mixture.
  • Bake -- Heat your oven to 400 degrees. Either spray a baking sheet with a non-stick spray or I prefer to line the baking sheet with parchment paper. Add the shrimp lying on their sides and spray with a non stick spray, (this will make the coconut crust get golden brown). Bake 7-10 minutes on the middle shelf until golden brown and flip. Cook another 5-7 minutes and they are done. They will start to curl up and the coconut will be golden brown.
  • Note: Remember those pineapple rings? Melt 2 tablespoons butter and 2 tablespoons brown sugar in a small cup in the micro for 10 seconds. Brush on the pineapple rings and put them right on the same baking sheet as the shrimp. They won't take quite as long, so just check them. A great side dish and easy.
  • Sauce -- As the shrimp bakes, your sauce is ready to go. Just heat to medium to medium high, you want it to come to a light boil, and then reduce to medium low. The corn starch once heated will naturally thicken the sauce. If you want it a bit thinner, just add a bit more orange juice or pineapple juice, that is up to you how thick or thin you want it. Serve warm.
  • Serve -- Just ENJOY! I like to serve a little sauce in cups on each plate with the shrimp, the rice pilaf and my grilled pineapple rings.

  • Coat a large baking sheet non stick with cooking spray. Working with one shrimp at at time: dredge in cornstartch mixture, dip in egg white, then in coconut/cheese, pressing lightly with fingers. Place on prepared baking sheet, repeat with remaining shrimp. Bake 20 minutes, turning after 10 minutes.

2/3 cup fresh pineapple, peeled and chopped
1/4 cup onion, sweet, thinly sliced
2 cups coconut cream
3 tablespoons red curry paste
3 tablespoons fish sauce
3 teaspoons brown sugar
24 shrimp, jumbo, raw, shelled and deveined (leave tailshell on)
2 tablespoons cilantro, fresh, chopped
