Shrimp Tostadas with Pineapple Salsa image

These healthy shrimp tostadas topped with an easy pineapple salsa make for a dinner that is full of flavor and one that everyone will love!

3 corn tortillas
9-10 shrimp
avocado oil spray
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp chili powder
1/4 tsp cumin
1/2 tsp sea salt, plus extra to taste
black pepper
1/2 cup pineapple, chopped
1/2 cup cherry tomatoes, chopped
1/2 cup red onion, chopped
1 juice of lime
1/2 jalapeno, finely chopped
1 avocado (or guacamole), to serve
red pepper flakes, to serve
fresh cilantro

Steps:

  • Prepare tostadas by preheating the oven to 400 degrees. Spray avocado oil on both sides and place on silicone baking sheet.
  • Bake for 8-10 minutes, flipping half way through to get them nice and crispy!
  • Prepare shrimp by mixing 1/2 tsp garlic powder, smoked paprika, chili powder, cumin, salt and some pepper together in a bowl with a shrimp to fully coat. Place in pan to sauté. Cook thoroughly. The shrimp will turn pink once cooked.
  • Set aside shrimp once done.
  • Prepare pineapple salsa by combining the pineapple, tomato, chopped red onion, lime juice, jalapeno and the remaining 1/2 tsp garlic powder, seasoning with salt and pepper to taste.
  • Prepare tostadas by adding mashed avocado, shrimp and pineapple salsa on top.
  • Option to garnish with red pepper flakes and cilantro.

1 pound large shrimp
1 cup pineapple, chopped
1/2 lemon, juiced
1 small tomato, diced
1/2 cup olive oil
1 small red onion, chopped
2 garlic cloves, minced
1 teaspoon parsley, chopped
1 teaspoon red pepper flakes

Steps:

  • Peel shrimp and devein. Set aside. In bowl combine lemon juice, 1/4 cup olive oil, minced garlic, and red pepper flakes. Add shrimp and stir to coat. Let sit for 20 minutes. Meanwhile, in separate bowl combine pineapple, tomato, and onion and parsley. Drizzle on remaining oil and mix together. Remove shrimp from marinade and grill, broil or cook in cast iron pan until shrimp are pink. Plate and top with salsa.

1-1/2 cups uncooked basmati rice
3/4 cup canned black beans, rinsed and drained
2 teaspoons canola oil
1/2 cup finely chopped onion
1-1/2 cups unsweetened pineapple juice
1/4 cup packed brown sugar
1 tablespoon Sriracha chili sauce
3 cups cubed fresh pineapple
1 medium sweet red pepper, diced
1 cup chopped fresh cilantro
1 small red onion, finely chopped
2 tablespoons lime juice
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds peeled and deveined shrimp (31-40 per pound)

Steps:

  • Cook rice according to package directions. Stir in beans; cover and keep warm., While rice cooks, heat oil in a large skillet over medium-high heat. Saute onion until tender, 3-4 minutes. Stir in pineapple juice, brown sugar and chili sauce; bring to a boil. Cook, uncovered, on high until liquid is reduced to 1/2 cup, 10-12 minutes., For salsa, toss pineapple with red pepper, cilantro, red onion, lime juice, salt and pepper., Once sauce has reduced, stir in shrimp and return just to a boil. Reduce heat; simmer, uncovered, until shrimp turns pink, 2-3 minutes. Serve with rice mixture and salsa.

3 teaspoons lime juice, divided
2 teaspoons blackened fish seasoning, divided
1 teaspoon ground cumin
1 (15 ounce) can black beans, rinsed and drained, divided
1 small navel orange, peeled and chopped
1/4 cup red onion, chopped
1 jalapeno pepper, seeded and chopped
1 tablespoon fresh cilantro, minced
6 tostado shells
1 cup reduced-fat Mexican cheese blend, shredded
1 lb large raw shrimp, peeled and deveined

Steps:

  • In a small bowl, combine 2 tablespoons avocado, water, 1 teaspoon lime juice, 1 teaspoon blackened seasoning and cumin. Set aside 1/4 cup beans; add remaining beans to avocado mixture and mash with a fork. Stir in reserved beans. Set aside.
