SHRIMP AND MANGO TACOS



Shrimp and Mango Tacos image

This sweet and pungent combination of mango, shrimp, chilies and cumin is as quick to put together as a stir-fry. Indeed, if you don't have corn tortillas on hand, serve the shrimp with rice.

2 tablespoons canola oil
1 pound medium or small shrimp, peeled and deveined
2 garlic cloves, sliced
2 teaspoons cumin seeds, lightly toasted and ground
2 Serrano or bird chilies, or 1 large jalapeño, minced
1 large mango, peeled, seeded and finely chopped
1/4 cup chopped cilantro
4 to 5 tablespoons lime juice
8 corn or flour tortillas

Steps:

  • Heat a large, heavy skillet or wok over medium-high heat, and add the canola oil. When the oil is hot, add the shrimp, salt to taste and the garlic. Sauté, stirring or shaking the pan, until the shrimp begins to color, about two minutes. Add the cumin, and continue to cook until the shrimp is pink and opaque, about three minutes. Add the chilies, mango and cilantro, and stir together for one minute. Stir in the lime juice, and remove from the heat. Taste and adjust seasonings.
  • Wrap the tortillas in a heavy kitchen towel, and place in a steamer basket over 1 inch of boiling water. Cover the pot, and steam for one minute. Turn off the heat, and allow to sit for 15 minutes without uncovering. Alternatively, wrap the tortillas in a towel, and heat in the microwave for one minute. Warm the shrimp briefly in the pan. Place 2 tortillas on each plate, top with the shrimp, fold over the tortillas and serve with rice.

2 cups chopped fresh cilantro
¼ cup tequila
3 tablespoons lime juice

Steps:

  • Combine shrimp, olive oil, garlic, and salt in a bowl. Let sit while you prepare the salsa.
  • Combine tomatoes, mango, avocado, bell pepper, 3 tablespoons lime juice, chile pepper, and sugar in a bowl. Mix until salsa is evenly combined.

1 to 1 1/2 teaspoons Sriracha or other Asian chile sauce, plus more for serving
2 limes (1 juiced, 1 cut into wedges)
1/2 teaspoon sugar
3/4 cup fresh cilantro
3/4 pound medium shrimp, peeled, deveined and halved crosswise
1 14-ounce package coleslaw mix
1 mango, peeled and sliced into thin strips
1/2 small red onion, thinly sliced
Kosher salt
2 teaspoons vegetable oil
12 hard taco shells

Steps:

  • Make the dressing: Pulse the mayonnaise, Sriracha, lime juice, sugar, 1/4 cup cilantro and 1 tablespoon water in a mini food processor until smooth. (Or finely chop the cilantro and mix with the rest of the ingredients in a bowl.)
  • Place the shrimp in a bowl and toss with 2 tablespoons of the dressing; set aside. Roughly chop the remaining 1/2 cup cilantro. Toss with the coleslaw mix, mango, red onion and the remaining dressing. Season with salt.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the shrimp and cook, stirring occasionally, until opaque, about 3 minutes. Transfer the shrimp to a plate.
  • Warm the taco shells as the label directs. Fill the shells with the shrimp and some slaw. Serve with the lime wedges and more Sriracha. Refrigerate any extra slaw for up to 3 days.

1 tablespoon olive oil
1 teaspoon lime juice (approximately juice from 1/4 lime)
1 teaspoon cumin powder
1/2 teaspoon garlic powder

1/8 teaspoon cayenne powder (or more or less, to taste)
1/4 teaspoon salt
3 cups cabbage, shredded
1/4 cup cilantro, chopped
1 clove garlic, pressed or minced

Steps:

  • In a medium bowl, combine shrimp, olive oil, lime juice, cumin, garlic powder, paprika, cayenne, and salt. Toss to combine. Let it sit for a few minutes while you prepare the rest of the ingredients. Then, cook in a 350 F air fryer for 13 minutes, shaking the basket halfway.   • In a small bowl, combine sour cream, mayonnaise, lime juice, and salt. In a medium bowl, toss together cabbage, cilantro, and garlic. Pour in half the lime crema sauce into the slaw and toss to combine. Save the rest of the sauce to drizzle on top.

juice from half a lemon
1 mango (peeled and chopped)

1/2 cup cilantro (chopped)

Steps:

  • To prepare the salsa toss all the mango salsa ingredients in a bowl and set aside until ready to assemble tacos.
  • In a large skillet melt the butter on high heat. Season shrimp with cajun seasoning and add shrimp to skillet. Cook until pink, shouldn't take more than a couple minutes. Turn off heat and squeeze half a lemon over the shrimp.

1 lb. medium shrimp, (peeled and deveined with tails removed)
2 tsp chili powder
2 Tbsp freshly squeezed lime juice
1 1/2 Tbsp olive oil
1 cup chopped mango
1 cup chopped strawberries
1 avocado, (peeled, pitted, and diced)
1/3 cup chopped red onion
1 1/4 cups black beans, (drained and rinsed)
3 oz. feta cheese, (crumbled)
8 small flour tortillas
Greek yogurt, (for topping (if desired))

Steps:

  • Place shrimp in a ziplock bag with chili powder, lime juice, and olive oil. Make sure the shrimp is fully coated in mixture and let it marinate in the fridge for 20 minutes.
  • While shrimp is marinating, make salsa. In a medium bowl, combine mango, strawberry, avocado, onion, and black beans. Toss to combine.
  • Heat grill pan (or skillet) to medium heat and grill shrimp for about 2-3 minutes on each side, until pink. You may need to do this in two batches, moving the first batch of shrimp to a foil-covered bowl to keep warm while the rest of the shrimp cook.
  • Warm tortillas in oven or microwave. Top each with a little bit of fruit salsa, about 5 shrimp, and some feta cheese. Top with Greek yogurt and additional lime juice if desired.
