SOUTH OF THE BORDER SHRIMP AND GRITS
This shrimp and grits can usually be made with on-hand ingredients. The best part...it's ready in under 30 minutes.

Steps:
- Combine evaporated milk, grits, chicken broth, and butter in a saucepan over medium-high heat; bring to a boil. Cook, stirring constantly, until thickened, 5 to 7 minutes. Add Cheddar cheese and stir until incorporated. Remove from the heat and set aside.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp and browned, about 3 minutes per side. Drain bacon slices on paper towels and chop when cool enough to handle.
- Add bell peppers to the bacon grease. Add shrimp and taco seasoning. Cook and stir until peppers are heated through and shrimp are bright pink on the outside and the meat is opaque, 3 to 5 minutes. Stir in chopped bacon.
- Place a dollop of grits in each bowl and top with shrimp mixture and hot sauce.

GRILLED SOUTH OF THE BORDER STEAK
Steps:
- Score each side of meat ⅛ inch deep in diamond pattern. Prepare instant meat marinade as directed on envelope except stir in ketchup, Worcestershire sauce, and red pepper sauce. Marinate meat as directed on envelope. Remove meat from marinade; reserve marinade. Heat beans in foilware pan 15 to 20 minutes on side of grill. About 5 minutes before serving, sprinkle cheese on beans. Place meat on grill 2 inches from hot coals. Cook 5 minutes on each side, brushing frequently with reserved marinade. Cut steak into serving pieces; serve with spoonfuls of beans, chili peppers, and potato chips.

This is a very tasty burger! You have to be careful when cooking them - without egg and fill they are delicate. Add whatever other toppings you want. You need good sized buns for these burgers to hold all the condiments

Steps:
- Divide the hamburger into 4 equal portions and make two patties from each portion (if using Italian buns make the patties oblong to fit the bun) On 4 of the 8 patties put a tbsp of refied beans, sprinkle on some jalapeno pepper and a tbsp of onions, salt& pepper Place the second pattie on top and firmly seal.
- Really pat them so they won't fall apart while cooking.
- If BBQing I recommend that you use a stir fry pan or use a solid grill to cook them in/on to ensure they do not end up as the fuel for the BBQ.
- These burgers are delicate because there is no filler in them.

- Slit the buns and start toasting one side, when browned slightly add cheese and continue heating until the cheese has melted Assemble the Burger, Butter the bun if you wish, put in the bacon& mushrooms then the burger, top with the salsa, avacado& sour cream.

- Make up the macaroni and cheese dinner as directed on the package.
- Brown ground sirloin over medium-high heat, breaking up the beef. Drain fat and add the can of tomatoes with chiles. Mix well. Lower heat to low and simmer 5 minutes, stirring occasionally.
- Add one-half of the beef mixture to the prepared macaroni and cheese. Add the remaining beef to a 2-quart baking dish, spreading evenly. Gently spoon the macaroni mixture evenly over the top. Sprinkle cheese over the top, if desired.
- Bake, uncovered, until hot and bubbly, about 20-25 minutes.
- Variation: Instead of layering part of the crumbled beef in the bottom of the baking dish, the entire amount may be added to the prepared macaroni and cheese. Stir to combine.

- Preheat a gas or charcoal grill.
- Combine chili powder, cumin, coriander, sugar, salt, cayenne and olive oil in a bowl. Mixture will be a little dry.
- Pound chicken breasts with a meat mallet or other heavy object until a uniform 1/4-inch thickness. Use your hands to rub chicken with chili mixture. Place chicken on grill and cook, turning 9 to 10 minutes until juices run clear when the thickest part of the breast is pierced with the tip of a knife. Slice crosswise into strips.
