I threw this together for dinner because I couldn't find any appealing shrimp recipes. I served it over packaged Roasted Garlic Herb flavored couscous, and both DH and I thought it went perfect with that. Be flexible with this- you'll love it.

Steps:
- Heat oil in medium-large skillet.
- Add garlic, onion and chili.
- Saute for less than a minute.
- Add shrimp, seasonings.
- Cut up butter and dot it throughout the skillet.
- Add grape tomatoes, stirring to evenly distribute.
- Cook, stirring frequently for about 5 minutes. Or, until raw shrimp turns pink.
- Serve hot over couscous, or your grain of choice.

- Add enough olive oil to cover the skillet. Then add a pinch of sea salt, pepper, and the shrimp. Sauté for about 1-2 minutes. Then add the tomatoes. Sauté for another 1-2 minutes or until the tomatoes are steamed but not cooked.
- Using a slotted spoon, transfer the shrimp and tomatoes from the pan to a bowl. Top with pesto and serve immediately.
- Refrigerate uneaten portions and consume within about 1-2 days.

- Add all of the ingredients to a large saute pan on medium-high heat. Stir to spread the melting cheese. Cook for about 2 minutes, just until the tomatoes are tender and the mozzarella is nice and creamy. If you are using previously frozen shrimp you only need to reheat them, so don't over cook! If you are using uncooked shrimp, add all of the ingredients and cook for about 3 to 4 minutes.
GARLIC SHRIMP WITH BASIL & TOMATOES
I adapted this from Food Network last summer. We like more garlic, tomatoes & basil than the original; and we quickly saute the shrimp & garlic in a pan. It's very good over pasta or even rice, but we usually serve it with crostini. Topping the bread (or crostini) with some of the tomato/basil mixture makes it even better. It's quick, has lots of flavor, even with supermarket tomatoes & basil in the middle of winter. I also found 2 servings to be more realistic than the recommended 4; shrimp are pretty low calorie, and even with the crostini, it's a pretty low kcal meal.

- If using larger than cherry or grape tomatoes, cut them in segments about the same size as your shrimp. In a medium bowl, combine tomatoes & basil. Season with salt & pepper; set aside.
- Rinse, drain & pat shrimp dry; season with salt & pepper. Heat a large saute pan or skillet over medium heat; when hot, add shrimp and saute for about 1 minute. Add garlic, and continue to saute shrimp until pink and cooked through.
- Add shrimp and garlic to bowl of tomatoes & basil, and toss well. May be served hot (or at room temperature, per the original recipe).

- In a large nonstick skillet, heat 1 tablespoon oil over high heat; swirl to coat pan. Season shrimp with salt and ground pepper. Add half the shrimp to the pan; cook until opaque throughout, 3 to 4 minutes. Transfer to a plate; repeat with remaining 2 teaspoons oil and shrimp.
- Reduce heat to medium; add garlic and red-pepper flakes. Stir in tomatoes; cook until they begin to break down, 4 to 6 minutes. Season with salt.

Ridiculously easy to make, this shrimp is oh-so-wonderful-tasty and rich. Not for those watching your fat intake, but hey... everything in moderation, right?

- Cook linguini according to package directions.
- Drain and set aside.
- In a large skillet, melt butter over medium heat.
- Toss in the minced garlic, shallot, mushrooms, and reconstituted sundried tomatoes and sauté for 2 to 3 minutes, then stir in half and half and season with pepper.
- Cook 6 to 8 minutes, while stirring.
- Stir the Parmesan into the creamy mixture, stirring until well mixed.
- Stir in the pesto, and cook for about 5 minutes, until thickened.
- Stir in the shrimp and cook until they turn pink, about 5 minutes.
- Re-heat the linguini (either in boiling water or microwave) and serve shrimp and sauce over the hot pasta.
- Garnish with grated Romano and freshly ground black pepper.
- Note: this recipe also works well with 1 pound of lump crab instead of shrimp.

- Put large pot (6 qt) of water on the stove (turned to med.).
- Spray a non-stick 12" skillet with cooking spray, sauté onion and garlic for about 5 minutes.
- Add zucchini, sauté another 5 minutes.
- Add pasta to boiling water, cook according to package directions (about 9-11 minutes).
- Add white wine to skillet, bring to a boil, reduce by half.
- Add pesto to skillet, stir to mix.
- Add evaporated milk and sundried tomatoes to skillet, bring to a simmer (try not to boil it).
- Add pre-cooked shrimp to skillet, allow to heat through (about 3-4 minutes).
- Serve sauce over linguine.
