1 1/2 teaspoons active dry yeast
1/2 teaspoon sugar
1 1/2 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil, plus more for brushing
5 to 6 Fresno chile peppers, roughly chopped
1 1/2 cups extra-virgin olive oil, plus more for brushing
8 ounces parmigiano-reggiano cheese, shaved with a peeler
4 ounces thinly sliced prosciutto
6 large eggs (optional)
2 cups baby arugula
2 plum tomatoes, diced
1/4 cup pitted gaeta olives, sliced
2 tablespoons capers, drained
Pinch of red pepper flakes
Kosher salt
Extra-virgin olive oil, for drizzling
8 ounces taleggio cheese, chopped
Chopped chives, for topping

Steps:

  • Make the dough: Fill a liquid measuring cup or small bowl with 1/2 cup warm (not hot) water. Add the yeast and sugar and stir with a fork; let sit 15 minutes. The top of the water will bubble and it will smell very yeasty-this is what you want!
  • Combine the flour and salt in a large bowl. Make a well in the center of the flour and pour in the olive oil and the yeast mixture.
  • Using a fork, gradually stir the flour into the yeast mixture until mostly combined, then mix with your hands to bring the dough together. Turn out onto a clean surface.
  • Knead the dough until smooth, dusting with flour as needed. Lightly oil a bowl; add the dough, cover with plastic wrap and set aside in a warm place until doubled in size, about 1 hour.
  • Prep the toppings: For prosciutto-arugula pizzas, make the chile oil: Bring the chiles and olive oil to a simmer; remove from the heat and let steep 1 hour. (This makes extra oil; store in a sealed container for up to 1 week.)
  • For puttanesca pizzas, make the topping: Mix the tomatoes, olives, capers and red pepper flakes in a bowl; add salt and drizzle with olive oil.
  • Preheat the grill: Preheat a grill to medium high (you don't want it to be too hot or the crusts will burn before the cheese melts). Brush the grill to remove any crud.
  • Roll out the dough: Turn the dough out onto a floured surface and divide into 6 equal pieces. Roll each piece into a ball.
  • Use a rolling pin to roll out each ball into an irregular oval, dusting with flour as needed.
  • For cracker-thin crusts, use your hands to gently stretch the dough even more.
  • Stack the dough between layers of plastic wrap and head to the grill (or wrap and refrigerate overnight).
  • Grill the crusts: Oil the grill (Anne uses a rolled-up towel and tongs), then carefully add a few pieces of dough.
  • Grill until the top is bubbly and the bottom is marked, about 2 minutes.
  • Flip with tongs and grill until just marked on the other side. Remove from the grill and transfer to baking sheets; repeat with the remaining dough.
  • Add the toppings: Working on the baking sheets, top the crusts with parmigiano and prosciutto, or top with taleggio and the puttanesca mixture; return to the grill. Crack an egg directly onto each prosciutto pizza, if you want. Cover the grill and cook until the cheese melts and the eggs are set, 2 to 3 minutes.
  • Finish the pizzas: Remove from the grill and top the prosciutto pizzas with arugula; drizzle with the prepared chile oil. Top the puttanesca pizzas with chives.

1/2 batch pizza dough
1/4 lb sliced prosciutto
2 cups arugula
4 tbsp olive oil (separated)
1 tsp garlic powder
salt + pepper
1/2 cup ricotta
1 clove garlic (minced)
1/2 cup shredded mozzarella
1/4 cup balsamic vinegar

Steps:

  • Roll out 1/2 your dough to 1/4-inch thick on a well-floured surface. Repeat with the other half of dough and set aside.
  • Heat grill to medium-high (450ºF-500ºF).
  • Prep your toppings: Toss 2 cups arugula in 1 tbsp olive oil. Stir garlic powder into 3 tbsp olive oil . Stir the minced garlic clove into the ricotta with 1/2 tsp pepper and 1/4 tsp salt.
  • Pour the balsamic vinegar in a small saucepan. Heat over medium-high heat until simmering. Stir well, let cook 3 minutes, then turn off the heat. This will thicken into a glaze.
  • Brush one side with olive oil and place that side down on the flame-side of hot grill grates. Grill for about 5 minutes (the bottom will be crisped and fully cooked). Brush the top with oil and carefully flip!
  • Once flipped, quickly build the toppings on your pizza. Spread the 1/2 the garlic oil on the bottom, then dollop 1/2 the ricotta around the dough. Add 1/2 the prosciutto and shredded mozzarella and close the grill lid.
  • Let the bottom cook for 4 minutes while the cheese melts on top. Add the tossed arugula. Shut grill lid for 1 more minute until the bottom is cooked through, then remove from the grill.
  • Repeat with the other half of dough. Drizzle with balsamic glaze, slice and serve!

5 to 6 Fresno chile peppers, roughly chopped
1 1/2 cups extra-virgin olive oil
1/2 cup warm tap water
1 1/2 teaspoons dry yeast
1/2 teaspoon sugar
1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil
1/2 pound Parmigiano-Reggiano, shaved thin
1/2-pound Taleggio cheese, rind removed and chopped
1/4 pound prosciutto, sliced thin
2 cups baby arugula
2 plum tomatoes, diced
1/4 cup pitted gaeta olives, sliced
2 tablespoons capers
Pinch red pepper flakes
Salt
Extra-virgin olive oil
Chili-infused oil, for garnish
Chopped chives, for garnish

Steps:

  • In a small saucepan, bring chiles and oil to a simmer. Remove from heat and let peppers steep in oil at least 1 hour.
  • In a small bowl add the warm (this activates the yeast. If the water is too hot the yeast will die and if the water is too cold the yeast will not activate) tap water add the dry yeast and the sugar and stir to combine. Let sit for 15 minutes. The top of the water will bubble and it will smell very yeasty, this is what you want.
  • In a large mixing bowl, combine the flour and the salt. Make a well in the center of the flour and add the olive oil and the yeast/water mixture. Using a fork gradually stir the flour into the yeast/water mix. Once most of the flour has combined, turn the dough out to a smooth clean work surface and use your hands to knead the dough to a smooth consistency.
  • Return the dough to the mixing bowl, cover with plastic wrap and set in a warm place for at least 1 hour or until the dough has doubled in size.
  • Preheat oven to 425 degrees F and preheat grill to medium-high heat.
  • In a small bowl, mix together the tomatoes, olives, capers, red pepper flakes and season with salt and a drizzle of olive oil, set aside.
  • Brush and oil grill to remove any crud and clean.
  • Portion the dough into golf ball size rounds. Using a rolling pin, roll each dough into a rectangle, I like irregular shapes. If not using the dough right away, wrap each 1 in plastic wrap and reserve until ready to use. If using the dough right away grill each dough on both sides so there are grill marks and the dough is stiff and crisp. Top some of the dough with shaved Parmigiano and the other with Taleggio.
  • Top the Taleggio pizzas with the tomato mixture. Place pizzas in oven until cheese melts, about 3 to 4 minutes. Immediately when the Parmesan pizzas come out of the oven, arrange prosciutto slices on top and then top with the arugula and drizzle with spicy chile oil. Cut pizzas into pieces and serve immediately garnished with chives.

3/4 cup warm water
2 1/4 teaspoons active dry yeast (about 2 1/4 tsp.)
1/2 teaspoon sugar
2 cups flour
1 teaspoon salt
2 tablespoons extra virgin olive oil, plus more for the bowl
extra virgin olive oil, for brushing
8 ounces pre-shredded mozzarella cheese
1 cup baby arugula
1/2 lb sliced prosciutto
1/2 cup crumbled imported italian gorgonzola

Steps:

  • Pizza Dough:.
  • Pour warm water into a small bowl and stir in the yeast and sugar until dissolved. Let it stand for about 5 minutes to make sure that the yeast is activated. A thin layer of foam should appear on the top, indicating good active yeast.
  • Mix the flour and salt in a large mixing bowl. Add the yeast water and 2 Tbsp of olive oil. Mix well with your hands or a mixing spoon. Lightly flour a clean working surface. Form the dough into a ball; turn it out onto the working surface. Flour lightly the top of the dough and press down with the palm of your hand. Fold the dough over itself and press again. Continue to roll and press the dough for about 12 minutes or until the dough is smooth and elastic, adding flour only when necessary to keep from sticking.
  • Place the dough back into the mixing bowl. Rub the remaining olive oil all over the dough to keep moist while it is rising. Cover the bowl with plastic wrap, and leave in a warm place (about 75 degrees) for 2 hours or until it rises double in size.
  • Once risen, you can use the dough to make pizzas, and or the remaining dough can be refrigerated for up 2 days. Roll the dough out on a lightly floured surface working it into a circular crust about 10 inches in diameter.
  • Assembly:.
  • INDOOR: Wipe the bottom of a grilling pan or heavy bottom skillet with a paper towel moistened with olive oil. Preheat the pan over high heat for 5 minutes. Place the dough in the skillet. The crust should bubble on top within 1 minute; if not, turn the heat up.
  • OUTDOOR: If your using an outdoor grill, simply heat the grill to medium heat and place the dough on the grill, it should bubble and the crust should form.
  • Place the grilled pizza a working surface, grilled side up. Brush the grilled side of the pizza with olive oil. Top the pizza with the fresh mozzarella, then the arugula. Place the slice of prosciutto on the pizza in loose bunches, creating an alternating pattern. Finally top with the crumbled Gorgonzola, and return to the grill to grill the bottom of the pizza and until cheese is bubbling and the edges are golden brown. Serve hot.

1 pizza dough (or ready-made pizza crust)
8 ounces smoked mozzarella cheese, cut into 1/4 thick slices
4 cups arugula leaves, packed (it seems like a lot now, but it gets wilted down during the cooking process)
8 slices prosciutto
1/3 cup goat cheese, crumbled
2 tablespoons lemon juice (about 1 lemon)
1/4 cup extra virgin olive oil

Steps:

  • Preheat grill. Brush grates with vegetable or corn oil.
  • In a small bowl, whisk together the 2T lemon juice and extra virgin olive oil. Place arugula leaves into a large bowl, and dress it with the lemon vinaigrette. Toss to mix well. Set aside. [I know it may seem like a lot of arugula at this point, but it will wilt down during the cooking process.].
  • Roll out pizza dough according to your recipe or store bought instructions. Once the grill is hot (you can hold your hands an inch over the grates for no more than 2 or 3seconds), carefully place the pizza dough onto the grill. Grill for about two minutes on one side. The pizza dough will also immediately puff up. Flip the pizza dough onto the other side and grill for another two minutes. Remove from grill onto a cookie sheet with tongs. Close the lid of the grill to retain its heat. [If you are using a ready-made pizza crust, cook it for two minutes on each side to get the grill marks and flavor.].
  • Place slices of smoked mozzarella around top of the pizza crust. And then in this order, spread all of the arugula leaves around, layer with prosciutto slices, and top with crumbled goat cheese.
  • Place the cookie sheet onto the grill and close the lid. [This allows for the toppings to cook without burning the pizza crust.] Cook for about five minutes, or until the cheese has melted, the arugula has wilted, and the prosciutto has crisped up a little. Carefully remove the cookie sheet from the grill. Using tongs, slide pizza onto a cutting board. Using a sharp knife or pizza slicer, slice the pizza and enjoy!
