1 tablespoon butter or 1 tablespoon margarine
2 cloves garlic, minced
1 1/2 lbs fresh mushrooms, sliced
1/4 cup soy sauce
garlic powder (to taste)
black pepper (to taste)

Steps:

  • Melt butter over medium heat in a large pan.
  • Add garlic and saute for 2 minutes.
  • Add sliced mushrooms, stir to coat, and cook for about 5 minutes.
  • Drizzle soy sauce into the mushrooms.
  • Sprinkle with garlic powder and black pepper.
  • Continue cooking over medium heat for about 10 minutes or until desired doneness is achieved.
  • Remove from pan and serve.

1 tablespoon olive oil
16 ounces white, cremini, or baby bella mushrooms, washed and cut in half ((quartered if very large))
½ teaspoon kosher salt
¼ teaspoon ground black pepper
3 tablespoons unsalted butter ((see note))
½ to 1 tablespoon minced garlic, to taste (2-4 medium-sized cloves)
1 tablespoon chopped fresh parsley

Steps:

  • In a large sauté pan (large enough so that mushrooms will fit in a single layer), heat olive oil over medium-high heat. When pan is hot, add mushrooms and season with salt and pepper. Quickly toss to coat mushrooms with the oil and then spread them into a single layer.
  • Cook for four minutes on medium-high heat without stirring. Stir once, trying to flip to brown both sides; cook for 2 more minutes without stirring.
  • Reduce heat to medium-low and add butter and garlic. Cook for 3-4 more minutes, stirring frequently, until mushrooms are fully cooked, butter is melted, and garlic is fragrant.
  • Remove from heat, stir in parsley and serve immediately.

2 tablespoons extra-virgin olive oil
3 cloves garlic, smashed
2 cups sliced cremini mushrooms
Kosher salt and freshly ground black pepper
10 ounces baby spinach
1 to 2 tablespoons balsamic vinegar

Steps:

  • Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
  • Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.
