1 medium honeydew melon, cut into 1-inch cubes (about 4 cups)

2 cups green grapes, halved
1 large cucumber, seeded and chopped
1 small navel orange, peeled and sectioned
1 small red onion, chopped
1 jalapeno pepper, seeded and finely chopped
1/3 cup lemon juice
1 tablespoon brown sugar
1/4 teaspoon crushed red pepper flakes

Steps:

  • In a large bowl, combine the first 8 ingredients. Whisk together remaining ingredients. Drizzle over shrimp mixture and toss to coat. Refrigerate at least 20 minutes before serving. Toss before serving.

A salty, herby, one-bowl salad that's hearty enough to be a meal. For best quality and flavor look for wild-caught shrimp and block feta packaged in brine.

2 lbs. shrimp, peeled and deveined
½ c. olive oil, plus more for drizzling the shrimp
½ c. fresh lemon juice
3 15-oz. cans cannellini beans, drained and rinsed
½ c. scallions, chopped
½ c. fresh dill, chopped
½ c. flat leaf parsley, chopped
1 English cucumber, quartered lengthwise and chopped
1 medium shallot, minced
6 oz. feta cheese, medium-diced

Steps:

  • Preheat the oven to 400º.
  • Place the shrimp in a single layer on a baking sheet (line it with parchment paper for easier cleanup!). Drizzle with olive oil and sprinkle with salt and pepper then place in the oven and roast for 6 minutes, or until the shrimp is uniformly pink.
  • Whisk the ½ c. of olive oil and lemon juice in a large bowl. Add the beans, scallions, dill, parsley, cucumber, and shallot, season with some salt and pepper, and stir to coat everything with the dressing. Add the shrimp and feta and stir gently to combine.
  • Salad can be made a day or two ahead - keep covered in the refrigerator until you're ready to serve.

2 tablespoons lemon juice
3 tablespoons olive oil
1/2 English cucumber, seeded and diced (about 1 1/2 cups)
1 lemon, zested
Salt and pepper

Steps:

  • Cook shrimp in boiling water for 3 minutes, drain and cool in refrigerator.
  • Put mint and lemon juice in food processor and pulse to coarsely chop the mint. Drizzle olive oil into processor while pureeing until mint is finely chopped.
  • In a serving bowl, toss shrimp, cucumber, mint mixture, zest, salt and pepper to combine.
  • This will keep in the refrigerator in an airtight container for up to 2 days.

1 pound Shrimp (pre-cooked, thawed)
1 Cucumber (medium-sized, peeled and diced)
1 Avocado (diced)
1 Lime
3 tablespoons Shallot (finely chopped)
3 tablespoons Fresh Dill (chopped)
1/4 cup Mayonnaise (more or less as desired)
Salt (to taste)

Steps:

  • Thaw the shrimp under cold water. Remove tails if needed. Drain well and pat dry with paper towels. Place the shrimp in a mixing bowl.
  • Peel the cucumber and dice into bite-size pieces. Add the cucumber to the shrimp.
  • Remove avocado from the skin and chop into bite-size pieces. Immediately coat the avocado with lime juice. Add to the mixing bowl with the shrimp.
  • Finely chop the shallot and the dill. Add them to the shrimp.
  • Add the mayonnaise and salt to the other ingredients and mix together. Taste and adjust the salt or mayonnaise amount if needed.
  • Serve right away, or cover and refrigerate for an hour or so to let the flavors meld.

The original poster found this in Sunset Magazine. The cucumbers become more flavorful the longer you soak them, but I would caution against marinating the shrimp for more than 20 minutes, as the texture will suffer.

8 ounces shrimp, cooked, peeled, deveined, and tails removed (31-40 per pound)
2 English cucumbers, about 1 1/2 pounds total, rinsed
1/3 cup rice vinegar
2 tablespoons sugar
2 tablespoons soy sauce
1 -2 tablespoon wasabi powder (to taste)
1/3 cup unsalted dry roasted peanuts, chopped
fresh parsley, chopped (optional)
green onion, chopped (optional)

Steps:

  • Rinse and drain shrimp - blot dry with papertowels to remove excess water.
  • Slice the cucumbers thinly.
  • In a pretty bowl, combine the vinegar, sugar, soy sauce, and wasabi, then mix in the cucumbers and shrimp.
  • Chill 20 minutes.
  • Garnish with peanuts, parsley, and/or green onions just before serving.

1/4 cup white wine vinegar

1 1/4 pounds peeled and deveined large shrimp

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil; reduce the heat to a steady simmer and cook until tender, 12 to 15 minutes. Drain and transfer to a bowl. Toss with 1 tablespoon vinegar and season with salt and pepper. Refrigerate until cooled.
  • Meanwhile, whisk together the yogurt, mayonnaise, shallot, remaining 3 tablespoons vinegar and 2 tablespoons water in a small bowl. Season with salt and pepper and set aside.
  • Season the shrimp with salt, pepper and the paprika. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the shrimp and cook until browned on the bottom, about 2 minutes. Flip the shrimp and add the garlic to the pan; cook until the shrimp are just cooked through and the garlic is golden, 1 to 2 minutes. Remove from the heat.
  • Add the cucumbers, yogurt mixture and about half of the mint to the potatoes. Toss well and season with salt and pepper. Divide among plates. Add the shrimp and any juices from the skillet to the plates. Top with the remaining mint.
