SPANISH SHRIMP AND RICE

3 tablespoons vegetable oil
1 small onion, chopped
2 cloves garlic, chopped
1/2 teaspoon turmeric
1 medium tomato, chopped
1 small carrot, diced
1/2 red bell pepper, diced
Kosher salt and freshly ground pepper
1 pound large shrimp, peeled and deveined
1 1/2 cups converted white rice
1 tablespoon chopped fresh parsley
1/2 cup frozen peas, thawed
Hot sauce, for serving (optional)

Steps:

  • Heat the vegetable oil in a large, deep skillet over medium heat. Add the onion, garlic and turmeric and cook until the onion is slightly softened, about 3 minutes. Add the tomato, carrot and bell pepper and cook, stirring occasionally, until tender, about 5 minutes. Sprinkle with 3/4 teaspoon salt, and pepper to taste. Add the shrimp and cook, stirring occasionally, until they begin to turn pink, about 1 minute. Add the rice, 2 cups water and 1/2 tablespoon parsley; bring to a boil. Reduce the heat to medium low, cover and simmer until the rice is tender, 15 to 20 minutes. Remove from the heat and sprinkle in the peas and the remaining 1/2 tablespoon parsley. Cover and let stand 5 minutes. Fluff the rice mixture with a fork and incorporate the peas and parsley. Season with salt and pepper. Serve with hot sauce.

3 tablespoons olive oil
1 1/2 lbs large shrimp, shelled and deveined
1 lb mushroom, sliced
3 garlic cloves, minced
3 medium tomatoes, diced
2 tablespoons lemon juice
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons finely chopped fresh parsley
3 cups hot cooked rice

Steps:

  • In 12-inch skillet over medium heat, in 2 tablespoons hot oil, cook shrimp stirring frequently, until shrimp turn pink, about 3 minutes.
  • Remove from pan and set aside.
  • In same skillet, in remaining tablespoon of hot oil, add mushrooms and garlic and cook until mushrooms are tender, about 5 minutes, stirring occasionally.
  • Add tomatoes, lemon juice, salt, and pepper and cook 3 minutes more.
  • Return shrimp to skillet and heat through.
  • Sprinkle with parsley and serve over rice.

1 1/2 pounds uncooked large shrimp, peeled, deveined
2 cups chopped red bell peppers
1 cup chopped onion
2 tablespoons chopped fresh thyme or 2 teaspoons dried

1 14 1/2-ounce can diced tomatoes in juice
3/4 cup Kalamata olives or other brine-cured black olives, pitted

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add shrimp and sauté just until pink, about 1 minute. Using slotted spoon, transfer shrimp to bowl. Add bell peppers, onion, thyme, garlic and fennel seeds to skillet. Sauté until onion softens, about 8 minutes. Add tomatoes with juices, olives, wine and tomato paste; bring to boil. Reduce heat to medium-low, cover and simmer until flavors blend, about 10 minutes. Add shrimp; simmer uncovered until shrimp are just opaque in center, about 3 minutes. Mix in basil; season with salt and pepper.

3 cloves garlic, minced
2 teaspoons Cajun seasoning
1 pound large shrimp, peeled and deveined, tails intact
Kosher salt and freshly ground pepper
4 plum tomatoes, chopped
2 bunches scallions, chopped
3 cups cooked white rice
3 tablespoons chopped fresh parsley
Lemon wedges, for serving (optional)

Steps:

  • Heat the butter, olive oil and garlic in a large skillet over medium-high heat until fragrant, about 1 minute. Add the Cajun seasoning and shrimp and cook, stirring, until the shrimp begin to curl, about 1 minute. Season with salt and pepper.
  • Add the tomatoes and scallions to the skillet and cook, stirring, about 1 minute. Add the rice and 1/4 cup water and continue to cook until the rice is warmed through and the shrimp are opaque, about 3 more minutes. Stir in the parsley and serve with lemon, if desired.

For a gourmet meal this is very easy to prepare. Leftovers reheat well the next day too! Instead of using fresh shrimp like the recipe originally called (took too long the first time I did it) we now use frozen, raw, peeled and it tastes the exact same, but with 1/4 of the time! This is great over rice and served with French bread.

3 tablespoons olive oil
1 ½ pounds large shrimp (21-25 per pound), peeled and deveined
2 cups red peppers, diced
1 cup chopped onion
3 large cloves garlic, chopped
½ teaspoon fennel seeds
2 tablespoons chopped fresh thyme
½ cup dry white wine
2 tablespoons tomato paste
1 (14.5 ounce) can canned diced tomatoes
½ cup chopped fresh basil
Salt and freshly ground pepper to taste

  • Heat olive oil in a large skillet over medium-high heat. Quickly saute shrimp until they turn pink, but are not cooked through; remove from skillet and set aside. Add the bell peppers, onion, garlic, fennel seeds, and thyme; cook until the onion softens, about 8 minutes.

¼ cup minced shallot
2 tablespoons minced garlic, divided
½ cup dry white wine
¼ cup freshly squeezed lemon juice

⅛ teaspoon crushed red pepper flakes, or to taste
1 ½ pounds shrimp, shelled and deveined
4 sprigs fresh thyme
3 tablespoons chopped fresh parsley
1 ½ cups cooked white rice
6 sprigs fresh thyme for garnish

Steps:

  • Combine olive oil and butter in a large, nonstick skillet and melt butter over medium heat. Add shallots and cook until softened, 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Pour in white wine and lemon juice. Season with salt, black pepper, and red pepper flakes and mix to combine. Bring to a boil and cook for 4 minutes.
  • Add shrimp and 4 sprigs thyme, and cook until shrimp just begin to change color, 2 to 3 minutes. Remove shrimp from cooking liquid, place on a plate, and set aside.
  • Continue boiling the liquid until reduced by half, 3 to 5 minutes.
  • Return shrimp to the skillet, remove thyme sprigs, and add parsley. Cook until shrimp are bright pink on the outside and the meat is opaque, 1 to 2 minutes.
  • Serve shrimp and sauce over hot, fluffy rice. Garnish each plate with fresh thyme sprigs, if desired.

  • Bring to a boil; reduce heat, and simmer until vegetables are soft and mixture is slightly thickened, about 30 minutes. Stir in shrimp, and cook until pink and cooked through, 3 to 5 minutes.

1/2 lb shrimp (36/40)
1/2 fresh pineapple
1 (11 ounce) can mandarin oranges
2 tablespoons gingerroot (minced)
5 garlic cloves (finely chopped)
1 large shallot (finely chopped)
1 chili pepper (finely chopped)
1 lemon, juice of
1/4 cup brandy
3 tablespoons brown sugar
1/4 cup soy sauce
1 teaspoon orange extract
2 tablespoons rice vinegar
3 tablespoons cornstarch

Steps:

  • Cut the top and bottom off of the pineapple. Shave the peel off, save a few disks for garnish and cut the remainder in half. Cut one half into tidbits.
  • Peel and clean the shrimp.
  • Sauté a small bit of the garlic and ginger in some vegetable oil.
  • Add the lemon juice and wait for the pan to get sizzling hot again. Add the shrimp and pineapple. Sauté until the shrimp is just about cooked.
  • Use Extreme Caution On This Step:.
  • In order to safely flambé the shrimp (or anything for that matter) make sure you are using 80 proof alcohol - anything higher and you'll be without eyelashes. If using a gas stove, pour the brandy in away from the burner. You should also be able to properly sauté something without splashing it everywhere to flambé, so don't blame me if you burn your house down. Anyways, on to the fun.
  • Pour the brandy into the pan, and give it a second to heat up. Ignite it either by tipping the edge of the pan towards the burner if using a gas stove, or, if using electric, take a match and ignite the fumes around the edge of pan.
  • (I turned off my lights so that the flame would show up).
  • After a few minutes, the alcohol should be burned off.
  • Put the shrimp and pineapple on the side, and heat up some more oil. Add the garlic, shallots, chili, and ginger.
  • Drain the syrup from the oranges into the mixture. Add the soy sauce, orange extract, rice vinegar, and sugar (these are just estimates, you may need to play around with the measurements).
  • Make a slurry with the cornstarch and a little bit of water. While stirring, slowly add the slurry until the sauce starts to thicken.
  • Add the shrimp and pineapple and heat until hot. Mix in the oranges and remove from heat.
  • Serve over rice.
