Steps:
- Mix all of the ingredients (except tortillas) together in a large bowl.
- Spread the mixture thinly and evenly over each tortilla.
- Roll up each tortilla tightly and wrap in plastic wrap.
- Chill in the refrigerator for several hours or overnight.
- Cut the tortillas about an inch thick and place them on a serving tray.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Dust a flat work surface lightly with flour. Unroll puff pastry and roll out to a rectangle. Spread a thin layer of herbed cream cheese over the puff pastry. Cover with Swiss cheese slices, leaving a 1-inch border. Roll puff pastry up tightly like a jelly roll.

- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, about 10 minutes; drain and discard grease.
- Spread dough from 1 package of crescent rolls out onto a work surface and pinch perforations together to create a single sheet of dough. Spread half the cream cheese over the dough sheet, leaving a 1/2-inch margin all around. Sprinkle half the cooked sausage evenly over cream cheese. Roll dough up into a log, starting at a long edge; wrap log in plastic wrap or parchment paper. Repeat steps to make a second roll; wrap. Refrigerate rolls at least 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).

- Mix cream cheese and jalapenos with a fork in a medium bowl until blended. Add spinach and mix again. Season mixture with salt and pepper.
- Roll puff pastry out onto your work surface. Spread cream cheese mixture over pastry until evenly distributed. Sprinkle Cheddar cheese evenly on top.
- Roll puff pastry into a log, pressing seams to seal. Wrap in plastic wrap and freeze for 20 minutes.

- Stir in catsup, horseradish, lemon peel, lemon juice, and chili powder.
- On one tortilla spread 1/4 cup of the avocado mixture, leaving 1-inch border around the edges. Top with a layer of spinach. Sprinkle with a scant 2 tablespoons almonds and about 1/4 cup shrimp.
- Roll up tightly. Secure with a party pick, if necessary, to prevent unrolling.

- For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
- For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
- For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
- For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. - Place pork, shrimp, green onions, 1/4 cup soy sauce, oyster sauce, garlic, 2 tablespoons sesame oil and ginger in a food processor; pulse until finely chopped., Unroll each sheet of crescent dough into a rectangle. - In a small bowl, thoroughly mix cheese, salmon and onion.
- Cut crusts off bread, and cut several thin, long slices.
- With a rolling pin, flatten bread so that it's easy to roll.
- Spread each long slice with mayonnaise, then spread on the cream cheese and salmon mixture.
- Roll each slice lengthwise like a jelly roll, slowly and carefully to make it as tight or pressed as possible.
- Cover with wax paper or saran wrap and wrap with kitchen string so it'll keep its shape.
