8 ounces uncooked white fiber or whole wheat spaghetti
1 tablespoon olive oil
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 garlic cloves, minced
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
2 cups fresh baby spinach
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled feta cheese

Steps:

  • Cook spaghetti according to package directions. Drain, reserving 1/2 cup pasta water., Meanwhile, in a large skillet, heat oil over medium heat. Add shrimp, garlic and rosemary; cook and stir 3-4 minutes or just until shrimp turn pink. Stir in spinach; cook, covered, until slightly wilted., Add spaghetti, lemon juice, salt and pepper; toss to combine, adding reserved pasta water as desired. Sprinkle with cheese. Remove from heat; let stand, covered, until cheese is softened.

12 ounces spaghetti
1 pound large (31 to 35) peeled and deveined frozen shrimp, tails on (if desired), thawed
3 tablespoons olive oil
2 garlic cloves, minced
2 tablespoons coarsely chopped fresh rosemary
1/4 teaspoon red-pepper flakes
1 tablespoon fresh lemon juice

Steps:

  • In a large pot of boiling salted water, cook spaghetti until al dente; reserve 1/2 cup pasta water. Add shrimp to pot, and stir. Immediately drain spaghetti and shrimp, and set aside (the shrimp will continue to cook).
  • In same pot, heat oil over medium. Add garlic, rosemary, and red-pepper flakes. Cook, stirring, until garlic is golden, 1 to 3 minutes.
  • Remove from heat; return pasta and shrimp to pot. Add lemon juice and enough pasta water to create a thin sauce that coats pasta. Season with salt and pepper, and serve.

1 (16 ounce) package dry fettuccini noodles
¼ cup olive oil
1 pound shrimp, peeled and deveined
6 green onions, thinly sliced
4 cloves garlic, thinly sliced
¼ cup brandy
2 large tomatoes, diced
½ cup dry white wine
½ cup butter
½ cup chopped fresh basil
2 teaspoons salt
1 teaspoon pepper
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat olive oil in a large skillet over medium heat. Saute shrimp until pink. Stir in green onions, garlic and brandy. Carefully ignite brandy with a match, or the gas flame. Cook for 2 minutes. Add chopped tomatoes, and cook 2 minutes. Stir in wine and butter, and season with basil, salt and pepper. Cook for 3 minutes. Stir in Parmesan. Toss with pasta until evenly coated.

Drizzle with lemon juice and olive oil then roast until the shrimp are peachy pink all over. For the most part, the shrimp will tell you when they're done. Certainly they're ready once they're pink, though very large shrimp may need an extra minute to cook through. To check, slice one in half; if it's opaque, or even nearly so, season to taste and start eating.

Steps:

  • Make the shrimp: In a medium saute pan, heat the olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. Cook for 2 to 3 minutes per side, or until pink and cooked through. Set aside.
  • Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes.   • For mint pesto:
  • Combine first 7 ingredients in processor. Using on/off turns, process until mixture is smooth. Add mint leaves and lemon juice; process until smooth, stopping occasionally to scrape down sides of bowl. Gradually add oil and process until mint pesto is smooth and creamy. (Can be made 1 day ahead; cover and refrigerate.)
  • For shrimp:
  • Preheat broiler. Sprinkle shrimp with salt and pepper. Whisk oil, garlic, and parsley in medium bowl to blend. Add shrimp; toss to coat. Let stand at room temperature 15 minutes. Arrange shrimp in single layer on broiler pan. Broil until opaque in center, about 2 minutes per side. Transfer to large bowl; sprinkle with lemon juice and toss with 1/2 cup mint pesto. Starting at base end of rosemary, skewer 1 shrimp on each sprig. Arrange on platter and serve.

4 chicken breast fillets (halved horizontally)
2 tbsp olive oil
1 cup chicken stock/wine
3 cloves garlic (finely chopped)
1 cup heavy/whipping cream
1-2 tbsp lemon juice (fresh)
Parmesan (to serve)
500 g (1lb) penne pasta

Steps:

  • Remove the rosemary leaves from the stalks and finely chop.
  • Slice the chicken in half horizontally, resulting in two thin chicken fillets.
  • Drizzle the olive oil over the chicken and season well with the rosemary, salt and pepper.
  • Cook the chicken in a hot pan until golden brown on both sides and cooked through. Remove from the pan and set aside to rest.
  • Pour the chicken stock into the pan and scrape the bottom to release all the caramelized bits.
  • Allow the stock to simmer and reduce for 2 minutes then add the garlic and cook for another 30 seconds.
  • Pour in the cream and lemon juice and allow to simmer for 5 minutes.
  • Season to taste.
  • While the sauce is cooking, bring a large pot of salted water to a boil. Add penne pasta and cook for 9-10 minutes or until al dente. Reserve 1 cup of cooking water and drain.
  • Slice the chicken and add to cooked pasta then pour over the sauce and toss well. Add some of the pasta cooking water to emulsify the sauce. Add grated Parmesan and serve.

1 pound penne pasta
1 tablespoon plus 1/4 cup extra-virgin olive oil
8 garlic cloves, cut into matchsticks, plus 1 more for pressing
1 tablespoon finely snipped fresh rosemary leaves
1 large onion, thinly sliced
1 pound large shrimp, peeled
2 jalapeno chiles, seeded and finely diced
1/2 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
1/2 cup thinly sliced basil leaves, plus whole leaves for garnish
1 tablespoon tamari sauce
2 teaspoons Worcestershire sauce
2 tablespoons medium sherry
2 teaspoons sugar
1/3 cup pitted and halved black olives

Steps:

  • Bring a large pot of water to a rapid boil; add salt. Add pasta, and cook according to package directions until al dente. Drain, and return pasta to the pot with 1 tablespoon olive oil and 1 garlic clove put through a garlic press. Stir to combine. Keep warm.
  • In a large skillet, heat remaining 4 tablespoons olive oil until hot but not smoking. Add garlic matchsticks, and cook until golden, stirring constantly. Add rosemary, and cook for 1 minute. Remove garlic and rosemary from the skillet; set aside. Add onion, and cook, stirring, until golden.
  • Add shrimp and jalapenos to the infused oil, and cook, stirring, until shrimp are just done. Add peppers, basil, salt, and pepper, and cook until the peppers are cooked, yet still crisp. Make a well in the center of the skillet, and add tamari sauce, Worcestershire sauce, sherry, and sugar. Stir to dissolve sugar. Return garlic and rosemary to the skillet. Add olives, and cook until heated through, 1 to 2 minutes, stirring occasionally.
  • Serve shrimp and peppers over the warm penne. Garnish with sprigs of basil. Serve immediately.

Steps:

  • Turn oven on to 400F.
  • Bake halved grape tomatoes seasoned with 1 tbsp EVOO, salt and pepper until slightly browned and thoroughly cooked, about 20 minutes.
  • Place a pot of water to boil, cook pasta according to package directions. Reserve 1 cup of pasta water and drain pasta
  • In a skillet, add 2 tbsp EVOO, brown shrimp on both sides over high heat, about 5 minutes. Season with salt and pepper and set aside in bowl.
  • In the same skillet, sauté garlic with rosemary and 2 tbsp EVOO until garlic turns slightly yellow.
  • Stir in Cannellini beans and 1 cup of pasta cooking water. Season with salt and pepper and simmer for a few minutes. Let cool and process 1/3 in the blender until smooth. Put back together with the other beans, add tomatoes, shrimp, parsley and bring to simmer.
  • Drain pasta and stir in the bean and shrimp mixture. Serve drizzled with a touch of olive oil.

3 tablespoons butter
1 pound jumbo shrimp, peeled & deveined
1 1/2 pounds fresh asparagus, trimmed
salt & freshly ground pepper
2 1/2 tablespoons olive oil ((1/2 tbsp. = 1 tsp.))
2 garlic cloves, whole
2 cups canned Italian plum tomatoes, roughly chopped or torn ((about 18 ounces))
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh basil, plus extra for garnish
3/4 pound penne, rigatoni or other tubular pasta
2 eggs plus one yolk, beaten well with a fork
1/2 cup freshly grated parmesan, divided into two 1/4 cups

Steps:

  • Have all the ingredients for this recipe prepared and ready to cook before beginning. Bring about 3 quarts of salted water to a boil and have it ready for the pasta.
  • Heat the butter in a large, deep skillet and add the shrimp. Cook until the shrimp are opaque and just cooked through. With a slotted spoon or spatula, transfer them to a large plate or platter.
  • Cut the asparagus into lengths about 2 inches long. If the stalks are thick, cut them in half or quarter them. Leave the tips in tact. Add the asparagus pieces to the skillet. Salt and pepper to taste. Cook for 4 to 5 minutes, or until crisp-tender and lightly browned. Transfer the asparagus to the plate holding the shrimp and reserve.
  • In the same pan, add the oil and garlic. Cook until the garlic cloves are lightly browned. Remove and discard the garlic. Add the tomatoes, parsley and basil. Salt and pepper to taste. Cook, stirring, for about 10 minutes.
  • Meanwhile, add the pasta to the boiling water and, when it returns to a boil, cook for about 7 minutes or until al dente. (Or follow package directions) Do not overcook.
  • Just before the pasta is done, turn off the heat under the tomatoes and add the beaten eggs, stirring vigorously so that they blend without curdling. Do not boil the sauce after the eggs are added. (If you are nervous about curdling the eggs, you may temper them in, by stirring a ladleful of the hot tomato sauce into the eggs, then whisking the mixture back into the pan.)
  • Add the shrimp and asparagus to the tomato sauce and stir to blend.
  • Drain the pasta immediately. Add the pasta to the tomato sauce, shrimp and asparagus mixture and toss with half the cheese. Serve piping hot with the remaining cheese on the side.

1 1/2 lbs large shrimp
1/2 lemon, juice of

Steps:

  • Combine olive oil, rosemary, garlic, and bay leaves in a saute pan.
  • Warm the ingredients over low heat for 2-3 minutes; let cool.
  • Meanwhile, peel/devein shrimp; rinse shrimp under cold running water; drain and dry well; place shrimp in a shallow dish.
  • Pour the contents of the saute pan over the shrimp; add in the lemon juice, salt, and pepper.
  • Toss the shrimp so that it is coated with the marinade.
  • Let the shrimp marinate for at least 1 hour but preferably for several hours, tossing the mixture from time to time.
  • If you marinate the shrimp for longer than 1 hour, refrigerate them and return to room temperature before cooking.
  • Transfer shrimp/marinade to a large pan; cook over high heat until shrimp are just opaque.
  • Lightly salt and serve with lemon juice.
