I had this at my monthly Bunco group. One of the lady's husbands made it and gave us the recipe. It is to die for. I add in diced green pepper, saute it with the shrimp and more seasoning than called for when I make it.

1 lb cavatappi pasta, cooked
8 tablespoons butter, divided
1 lb medium shrimp, cut in thirds
1 teaspoon cajun seasoning, divided
1 tablespoon grated onion
3 tablespoons flour
3 cups milk
1/2 lb swiss cheese (grated)
1/2 lb cheddar cheese (grated)
1 lb monterey jack pepper cheese (grated and divided)
salt and pepper
1/4 cup breadcrumbs
1 teaspoon parsley

Steps:

  • Preheat oven to 350°F.
  • Melt butter in medium sauce pan.
  • Add shrimp, sprinkle with 1/2 tsp cajun seasoning.
  • Cook 3-4 minutes, remove.
  • In same pan melt 2T butter, add onion and sauté 1 minute.
  • Whisk in flour, cook 1 minute.
  • Whisk in milk and heat approximately 4 minutes.
  • Add Swiss, cheddar and 3/4 lb. pepper Jack cheese, stir until smooth.
  • Add 1/2 teaspoons cajun seasoning, salt, and pepper.
  • Stir in cooked shrimp and pasta.
  • Pour into buttered cassserole dish.
  • Top with 1/4 lb. pepper Jack cheese, bread crumbs, 3 T. melted butter and parsley.
  • Bake 45 minutes or until browned and bubbling.

½ cup elbow macaroni
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
¾ cup 1% milk
½ cup shredded sharp Cheddar cheese
1 ½ tablespoons sour cream
½ teaspoon Cajun seasoning
1 cup frozen salad shrimp
2 tablespoons panko bread crumbs
2 tablespoons shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour 5 cups water into a saucepan. Cover and bring to a boil over high heat. Add macaroni and boil until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, melt butter in a saucepan over medium heat. Stir in flour until a smooth paste is formed. Slowly pour in milk, stirring to incorporate. Add 1/2 cup Cheddar cheese, sour cream, and Cajun seasoning. Drain macaroni and stir into the sauce. Add frozen shrimp and stir to combine.

6 tablespoons unsalted butter
1/2 cup panko breadcrumbs
1/2 teaspoon crushed red pepper flakes
Kosher salt
2 tablespoons chopped fresh parsley
1 pound medium pasta shells
2 1/2 cups half-and-half
8 ounces cream cheese, at room temperature
8 ounces shredded Italian cheese blend (about 2 cups)
4 cloves garlic, minced
2 tablespoons dry white wine
1 pound large shrimp, peeled, deveined and cut into 1-inch pieces
Finely grated zest of 1 lemon

Steps:

  • Melt 2 tablespoons butter in a small skillet over medium heat until foamy but not brown. Stir in the panko, 1/4 teaspoon crushed red pepper flakes and a pinch of salt and continue to cook, stirring frequently, until the panko is golden brown, about 5 minutes. Remove from the heat and stir in the parsley; set aside.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Strain, reserving 1 cup of the pasta water. Set aside.
  • Heat the half-and-half in a large saucepan over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 2 cups, about 5 minutes. Add the cream cheese and cook, stirring, until melted. Whisk in the Italian cheese blend until all the cheese is melted and the sauce is smooth. Turn off the heat and keep warm.
  • Meanwhile, melt the remaining 4 tablespoons butter in a large saute pan over medium heat. Stir in the garlic and the remaining 1/4 teaspoon crushed red pepper flakes and cook until fragrant, about 2 minutes. Pour in the wine and reduce until the alcohol smell is no longer present and the sauce is a nice golden color, about 2 minutes. Stir in the shrimp and lemon zest and cook, stirring, until the shrimp are pink and just cooked through, about 2 minutes; sprinkle with 1/2 teaspoon salt and set aside.
  • Add the pasta and shrimp mixture to the cheese sauce and stir to combine. Stir in some of the reserved pasta water to thin the sauce if needed. Season to taste with salt if needed. Spoon the hot mac and cheese into bowls and sprinkle with the parsley panko.

4 garlic cloves, crushed
1/2 purple onion, diced
3 cups water

10 ounces broccoli

Steps:

  • Preheat oven to 375°F
  • Spray large baking dish with nonstick spray.
  • Start large pot of water to boil for elbow macaroni. Cook according to package directions. Drain and pour into baking dish.
  • Steam broccoli and cauliflower for 8 minutes. Drain and add to baking dish.
  • Saute onions and mushrooms in olive oil until tender, about 15 minutes. Drain and add to baking dish.
  • Add shrimp to sauce pan and saute until just cooked through, about 5 minutes. Add garlic at the very end for most robust flavor. Add to baking dish.
  • For cheese sauce, melt butter in medium saucepan over medium heat. Add flour.
  • Cook flour until just browned. Do not overcook.
  • Add water and stir with a whisk.
  • Add bouillon mix.
  • Add cream cheese and cheddar cheese in small amounts, stirring frequently. Do not allow to boil.
  • Pour cheese sauce over ingredients in baking dish. Stir until everything is well-coated.
  • Sprinkle top with bread crumbs.
  • Cover with foil and bake at 375 F for 25 minutes or until bubbly.

1 pound medium shrimp (40 to 60 count), shelled and deveined
5 tablespoons butter, divided
3 cloves garlic, finely chopped
1/2 cup finely chopped medium onion
1 cup finely chopped celery
2 teaspoons salt, divided
2 teaspoons chopped fresh chives
1 teaspoon freshly ground black pepper
3 tablespoons cornstarch, mixed with 1/2 cup warm water
1/2 teaspoon ground nutmeg
1 1/2 cups nonfat half-and-half
1 cup shredded colby jack cheese
2 cups shredded sharp Cheddar
1 egg, lightly beaten
1/2 teaspoon paprika, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • Cook macaroni according to package directions. Drain and set aside.
  • Cut shrimp crosswise into thirds. In a medium frying pan, over medium heat, melt 2 tablespoons butter. Add garlic, and cook until translucent.   • In a medium saucepan, melt 2 tablespoons butter over low heat. Stir in cornstarch/water mixture, nutmeg, and remaining 1 teaspoon salt. Gradually stir in half-and-half; cook and stir until mixture thickens slightly and bubbles. Remove from heat. Add half the colby cheese and 1 cup of the cheddar. Stir until melted; then add remaining colby cheese. Continue to stir until mixture is smooth. Add reserved liquid from shrimp and continue to stir until mixture is well combined.
  • Grease a 2-quart casserole with remaining tablespoon butter. In large bowl combine shrimp and cooked macaroni; add cheese sauce and mix thoroughly. Pour mixture into casserole dish and stir in the egg. Bake 35 to 40 minutes or until lightly browned and bubbly. Remove from the oven and sprinkle with remaining 1 cup of cheddar cheese. Return to the oven and bake until cheese is melted. Remove from oven and sprinkle with paprika. Let stand 10 to 15 minutes before serving.

1/4 cup chopped Italian parsley leaves

Steps:

  • Preheat broiler.
  • Bring a large post of water to a rolling boil, add pasta shells and cook al dente, according to package instructions.
  • Meanwhile, in a large skillet, add the olive oil and tasso or bacon, cook until just crisp,
  • then add shallots and garlic. Cook and stir over moderate heat just until shallots are translucent. Add the flour, cook stirring constantly to blend and toast the flour, about 5 minutes. Add the white wine, reduce until almost dry. Add the cream, bring to a simmer until the sauce coats the back of a spoon, about 5 to 10 minutes. Remove from the heat and stir in the cheeses, shrimp and spinach. Gently stir until cheese is melted, spinach is wilted and shrimp is beginning to turn pink. Season with salt and white pepper, to taste. Season with hot sauce, to taste.
  • Drain the pasta, making sure to shake all of the water off and out of the shells.
  • In a large flameproof baking dish, place drained shells. Add the cheese and shrimp mixture and gently fold into the pasta. Sprinkle with the bread crumbs and chopped parsley. Place under the broiler until the breadcrumbs are toasted about 2 to 3 minutes.

I love Lobster Mac and Cheese, but it is just too expensive. So this was my answer. However I like to add a few different cheeses to mine, celery for some crunch and pancetta for extra flavor with a cracker crumb topping.

1 lb cavatappi pasta
1 lb medium shrimp, rough chopped (use any size you can get)
1 cup pancetta, diced and sauted (bacon is also a good substitute)
1 medium onion, diced fine
2 celery ribs, diced fine
1 tablespoon butter
3 tablespoons butter
3 tablespoons flour
1 2/3 cups milk
1 2/3 cups heavy cream
1/2 lb gruyere cheese, grated (you could also use swiss cheese)
1/2 lb monterey jack cheese (grated)
1 lb white cheddar cheese (grated)
1 teaspoon cajun seasoning
salt
pepper
1 cup cracker crumb (I used Ritz)
1 teaspoon parsley
1 tablespoon butter

Steps:

  • Sauce -- In a medium pot on medium heat, add the butter and melt, then add the flour and mix well to make a roux. Slowly add in the milk and bring to a low boil to let the sauce thicken. Then add in the cheeses, salt, pepper and cajun seasoning to taste. Cook just until melted.
  • Pancetta -- In a medium size saute pan, add 1 tablespoon of the butter and saute the pancetta. NOTE: If using bacon, skip the butter, the bacon has enough fat. Saute until golden brown.
  • If you are using the bacon, reserve 1 teaspoon of the bacon drippings and omit the butter when sauteing the shrimp and vegetables.
  • Vegetables and Shrimp -- Now, to that same pan add the vegetables and cook until tender, 3-4 minutes. Then add the shrimp and stir just to mix everything together. Remove immediately, the shrimp will continue cooking in the oven.
  • Pasta -- Cook the pasta according to directions - al dente, drain well, return to the pot.
  • Combine -- In the pot with the pasta, add the shrimp and vegetable mixture, the cheese sauce, bacon and mix well. Pour into a 13x9 casserole dish lightly sprayed with pam or a non-stick spray.
  • Topping -- Melt the butter in a measuring cup in the microwave and add the cracker crumbs and parsley and mix well. Top over the casserole dish.
  • Bake -- In a preheated 350 degree oven, bake the dish covered for 20 minutes, uncover and cook another 10-15 until golden brown and bubbly. Remember everything is already cooked, it doesn't take too long. Enjoy!

1 pound shredded sharp Cheddar cheese
1 pound shredded Swiss cheese
1 pound shredded Monterey Jack cheese
1 stick butter
1 tablespoon dried onion seasoning (such as Pampered Chef® Three Onion Rub)
1 teaspoon herbes de Provence
2 cups crushed buttery round crackers (such as Ritz®)
1 stick butter, sliced into pats

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni and 1/2 cup dried onion in the boiling water, stirring occasionally, until macaroni is tender yet firm to the bite, about 8 minutes. Drain.
  • Place lobster and shrimp in a colander. Pour the cooked pasta and onions over shellfish; let drain.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Warm evaporated milk and cream slowly in a saucepan over medium-low heat. Whisk in flour. Whisk eggs together in a small bowl.
  • Cook sauce until small bubbles form. Add sauce very slowly, 1/4 cup at a time, to the bowl with the eggs, being careful not to cook and scramble the eggs. Slowly mix the egg-cream mixture back into the pan. Continue cooking on medium-low heat, stirring occasionally, until thick and smooth, 5 to 10 minutes.
  • Melt 1 stick of butter in the pot used to cook the pasta over medium heat. Add flour; cook until roux thickens and turns caramel in color, about 5 minutes. Stir in Cheddar cheese, Swiss cheese, and Monterey Jack cheese. Cook, stirring constantly, until mostly melted, about 4 minutes. Pour in the cream sauce and stir until smooth.
  • Stir pasta, lobster, and shrimp into the cheese and cream sauce to coat completely. Pour mac and cheese into a 9x11-inch baking dish.
  • Melt another stick of butter in the saucepan used to make the sauce. Add onion seasoning and herbes de Provence; stir. Add crackers. Cook and stir over medium heat until coating mixture is lightly toasted, about 5 minutes.
  • Cover mac and cheese with thin pats of butter. Top with the cracker coating.
  • Bake in the preheated oven until top is crispy and cheeses are melted, about 1 hour.

2 cups heavy whipping cream
1 egg white
1 tablespoon truffle salt
2 cups gruyere cheese, shredded
1 cup gorgonzola, crumbled
1 lb shrimp, peeled, tails removed and cut in half (depending on size)

Steps:

  • Preheat oven to 350 degrees F.
  • Cook pasta according to package directions; drain and set aside.
  • In a large bowl, combine whipping cream, egg white, and truffle salt. Mix well.
  • Add bacon, mushrooms, Gruyere, and Gorgonzola. Toss to combine all ingredients.
  • Add shrimp and toss again.
  • Add cellentani and gently mix with a wooden spoon to distribute noodles evenly throughout the mixture.
  • Pour mixture in a glass 8" x 10" baking dish that has been sprayed with non-stick cooking spray.
  • Bake for 25-30 minutes; until the top is bubbling and the shrimp are opaque.
  • Serve and enjoy!
