SPICY THAI GRILLED SHRIMP
This Spicy Thai Grilled Shrimp is succulent, tender, and mouthwatering. The sauce is amazing. Be sure shrimp is cold when you put it on the grill, to avoid over cooking. It cooks super fast!

- Pat shrimp dry with paper towels and thread shrimp onto four 12-inch skewers (wood skewers must be pre-soaked in water first.) Brush with 1 TB butter and season with cayenne and a pinch of salt on both sides. Keep chilled until grill is ready.
- Heat Thai sweet chili sauce in a small saucepan over medium heat until bubbling. Off heat, whisk in remaining butter, lime juice, and lime zest. Cover and keep warm.
- Grill shrimp over hot fire, about 30-60 seconds per side. Brush with glaze and serve immediately.

- Add the shrimp, zucchini, red onion, red bell pepper, and lemon to a medium sized bowl.
- Prepare the shrimp marinade and add to the bowl of shrimp and veggies. Let marinate 30 minutes or over night.
- Thread skewers with the shrimp and veggies.
- Preheat grill to medium high heat. Thread the shrimp on the skewers. Place on the grill. Grill on each side for about two minutes or until no longer pink.

- To make curry butter: In a small pan, melt the butter over medium-high heat. Stir in the onion, dill, curry powder, and garlic powder; cook 5 minutes.
- Thread shrimp on skewers, leaving space between pieces. Lightly brush or spray shrimp with olive oil.
- Grill over direct high heat until the shrimp turn pink and are tender, 2 to 5 minutes, turning and brushing with the curry butter once halfway through grilling time.
- Arrange shrimp on serving plate. Garnish with lime wedges and dill.
