3 cups sugar
1 cup Karo light corn syrup
3 cups raw shelled Spanish peanuts
1/2 cup water
1 tablespoon butter
1 tablespoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Add the sugar, water, and karo corn syrup to a large soup pot and cook on stove at medium high heat (about a 7). Cook the mixture, stirring constantly, till it spins a thread (If you're not sure what spinning a thread is, it's when you dip the stirring paddle in the mixture, then pull it out and let the mixture drip off the spoon. When you see it start to ribbon off like a spider web rather than just drip straight down, it is spinning a thread).
  • Once the mixture spins a thread, add the peanuts. Cook the peanuts (stirring constantly) till the mixture turns a light golden color and the peanuts look roasted (be careful not to burn). This should take approximately 8 - 10 minutes.
  • Once the peanuts have turned golden brown, add the butter, baking soda, salt, and vanilla extract and stir quickly till the butter is completely melted.
  • Pour the mixture onto 2 well greased baking sheets and allow to cool for 45 minutes. Once the mixture is cooled, break apart the brittle and enjoy!

My Grandma's old-fashioned Peanut Brittle recipe is so easy to make on the stovetop with just six simple ingredients and roasted peanuts.

2 cups sugar
1 cup light corn syrup
1/2 cup water
2 cups salted roasted peanuts
2 tablespoons butter
1 1/2 teaspoons soda
1 1/2 teaspoons vanilla

Steps:

  • Line a sheet pan with parchment paper. Set aside.
  • Measure out peanuts, butter, baking soda and vanilla and have them ready.
  • Add sugar, and water to a medium saucepan and stir well. Stir in corn syrup. Cook mixture over medium heat (don't be tempted to turn the heat up!), stirring occasionally, until it comes to a gentle boil.
  • Attach your candy thermometer to the edge of the pot, and make sure it is submerged in the liquid, but not touching the bottom of the pot. Cook, stirring occasionally until temperature reaches 250°F (121°C).
  • Add the peanuts and stir the mixture constantly until the candy thermometer temperature reaches 300 degrees F.
  • Remove mixture from heat and immediately stir in butter, baking soda and vanilla. The mixture will foam and change texture.
  • Carefully pour the hot mixture onto the prepared pan and use a knife or spoon to quickly (and carefully!) spread the mixture into an even layer.
  • Allow to cool completely (at least 30 minute) before breaking apart and eating.
  • Store the completely cooled peanut brittle in an airtight container.

Nonstick cooking spray
2 cups sugar
1/2 cup light corn syrup
6 tablespoons unsalted butter, cubed
1/2 teaspoon baking soda
1 1/2 cups roasted salted peanuts

Steps:

  • Line a rimmed baking sheet with foil and grease with nonstick cooking spray.
  • Stir together the sugar, corn syrup and 1/2 cup water in a medium saucepan fitted with a candy/deep-fry thermometer. Bring the mixture to a boil over medium heat, then continue to boil until it's golden brown and it reaches 340 degrees F, about 15 minutes.
  • Working quickly, remove the pan from the heat and stir in the butter and baking soda until smooth (it will foam and bubble up). Stir in the peanuts until evenly distributed amongst the sugar mixture.
  • Pour onto the prepared baking sheet and quickly smooth with a rubber spatula into a thin and even layer. Let harden uncovered at room temperature until cooled completely. Break into pieces and store in an airtight container.

This peanut brittle is very light and fluffy. It is important to coat cookie sheets with butter and put in the freezer to get them really cold before you need to pour the brittle. After you pour the candy you should put the pans in the fridge or outside if it is cold, so the brittle will set up quickly and stay fluffy. You could also use another nut if you are allergic to peanuts. This brittle won't break your teeth!

1 cup light corn syrup
1/4 cup butter
1/2 cup water
2 1/2 cups raw peanuts
2 teaspoons baking soda
1 teaspoon vanilla

Steps:

  • Butter 2 large baking sheets; set aside. Butter sides of a heavy 3-quart saucepan. In saucepan combine sugar, corn syrup, butter, and 1/2 cup water. Cook and stir over medium-high heat to boiling. Clip candy thermometer to side of pan. Cook and stir over medium-low heat to 275°, soft-crack stage (about 30 minutes). Add nuts; cook and stir to 295°, hard-crack stage (15-20 minutes more). Remove saucepan from heat; remove thermometer.
  • Quickly add vanilla, stir in briskly. Sprinkle baking soda over mixture, stirring constantly. Immediately pour onto prepared baking sheets. Cool; break into pieces. Store tightly covered.
  • This recipe produces a "fluffy" brittle, the candy is lightly honeycombed and opaque. For a dark and clear brittle, omit the baking soda. And let me know how that works out.

The only thing even remotely tricky about it is getting the sugar to the tint of brown you want -- not too light, and definitely not too dark, which can happen in a flash. You can use any nut you want with this, but do add some salt if you use unsalted nuts.

2 cups roasted peanuts, salted or unsalted, or other nuts

Steps:

  • Use a bit of butter to grease a baking sheet, preferably one with a low rim. Combine sugar and 2 tablespoons water in a heavy skillet and turn heat to medium. Stir until smooth, then cook, adjusting heat so that mixture bubbles steadily. Stir occasionally until mixture turns golden brown (which it may do rather suddenly).

Pinch of salt
1 1/2 cups salted peanuts, 7 ounces

Steps:

  • Butter a rimmed baking sheet; set aside. Stir together sugar, 1/2 cup water, and the salt in a medium saucepan. Cook over high heat, without stirring, until sugar begins to melt and turn golden, about 3 minutes. Continue to cook, stirring occasionally, until sugar has melted and mixture turns golden amber, about 10 minutes.
  • Remove pan from heat. Stir in peanuts. Immediately pour peanut mixture onto buttered baking sheet. Quickly spread mixture to 1/2 inch thick using an oiled metal spatula. 200g caster sugar
100g roasted peanuts
1 tsp sea salt flakes

Steps:

  • Line a baking tray with baking parchment. Melt the sugar in a medium frying pan over a medium heat for 4-5 mins until caramelised - it should be a dark amber colour. Don't stir, as this causes the sugar to crystallise - instead, tilt the pan slowly so the sugar melts evenly.
  • Add the peanuts, stir with a wooden spoon, then quickly and carefully tip onto the prepared tray. Immediately sprinkle over the sea salt flakes and leave to cool until set. Will keep for several weeks in an airtight container.
