3/4 pound shrimp, peeled, deveined, and coarsely chopped
1/2 teaspoon kosher salt
1 tbsp fish sauce
1/2 tbsp Tapioca starch or corn starch
2 tbsps canola oil
1 tbsp Lard
1 garlic clove, minced
1 pound Chinese chives, cut into 1-inch pieces
1 cup diced, peeled, cooked water chestnut
1/2 cup dried shrimp
1/2 cup chopped green onions white and light green parts only
1/2 teaspoon ground white pepper
2 cups wheat starch
1 cup Tapioca starch
1 1/2 tbsps potato starch
1/2 tbsp sugar
3/4 teaspoon kosher salt
1/2 tbsp canola oil
2 cups boiling water
1/4 cup Sriracha sauce
1/4 cup light soy sauce
1 tbsp canola oil

Steps:

  • For the filling: In a large bowl, combine fresh shrimp, salt, fish sauce, tapioca starch. Set aside. Stir-fry the chives in half of the oil and half of the lard with garlic and water chestnuts until the chives are soft. Place chives on the center of a large piece of cheesecloth, wrap up the cloth, and squeeze the mixture until there is no liquid. Set aside.
  • In a small bowl soak the dried shrimp in warm water to cover for about 20 minutes. Drain, discard the liquid, and coarsely chop the shrimp. In a skillet or sauté pan over medium-high heat, warm the canola oil and remaining lard until shimmering. Add the dried shrimp and stir until the shrimp turns brown. Remove and set aside. In the same skillet add the fresh shrimp, pepper and green onions and saute until cooked through, 2-3 minutes. Remove from heat and combine shrimp-both fresh and dried-and chives.
  • For the dough: In the bowl of a stand mixer fitted with a paddle attachment, combine the starches, bread flour, sugar, salt, and oil. Mix on high speed, slowly adding the hot water until a sticky dough forms, about 5 minutes. Turn the dough out onto your work surface and divide into 10 pieces. Using a small rolling pin, roll out the ball into circles about 1/8 inch thick and 4-5 inches in diameter. Holding the dough in your palm, add about 2-3 tablespoons of the filling in the middle of each circle and pinch the ends together. Lightly pat down to flatten the cake. Repeat with the remaining dough and filling.
  • Set up a steamer and steam the chive cakes until the dough is translucent, about 7-10 minutes.
  • Remove the dumplings from the steamer and set aside to cool. Just before serving, coat the bottom of the skillet with oil and pan fry the chive cakes until browned on both sides.
  • Serve with both hot Sriracha and soy sauce for dipping.

Crispy Shrimp Cakes With Chile-Lime Mayo image

Savory fried shrimp cakes are popular in coastal areas in many parts of the world, with each region adding its own vibrant flavors to the mix. Here, the golden-edged patties are shot through with fresh basil and cilantro for brightness, chiles for heat and a little fish sauce (an ingredient often found in Southeast Asian recipes) for depth. Then, as an untraditional binder, crushed-up rice cakes are mixed in with the shrimp for an ethereal, especially crisp result. But panko or cracker crumbs make acceptable substitutes if rice cakes aren't available.

Number Of Ingredients 11

3 to 5 large original or lightly salted rice cakes, or 6 to 10 thin cakes (see Tip)
1 pound shelled large raw shrimp (20 to 24), coarsely chopped
1/4 cup minced shallot (or use onion or scallion)
6 tablespoons chopped cilantro
6 tablespoons chopped basil leaves, more for serving
3 tablespoons minced jalapeño or red chile pepper
2 1/2 teaspoons fish sauce
Fine sea salt and freshly ground black pepper
1/2 cup mayonnaise
1 lime
Safflower, peanut or grapeseed oil, for frying

Steps:

  • In the bowl of the food processor (or you can use a blender), add the rice cakes and pulse until you get 1 1/4 cups rice cake crumbs. Return 1/4 cup crumbs to the food processor, reserving the remaining 1 cup for coating the cakes.
  • Add shrimp, shallot, 4 tablespoons each of the cilantro and basil, and 2 tablespoons jalapeño to the crumbs. Add 2 teaspoons fish sauce, and a pinch each salt and pepper. Pulse until the mixture forms a coarse, chunky paste. (Be careful not to overprocess; if using a blender, scrape down the sides frequently.) Transfer to a bowl, cover and refrigerate while you make the sauce (at least 15 minutes and up to 24 hours).
  • In a small bowl, whisk together mayonnaise, remaining cilantro, basil, jalapeño and fish sauce. Zest the lime into the bowl, then cut the naked lime into wedges and squeeze in some juice. Salt to taste. Reserve extra lime wedges for serving.
  • Spread remaining 1 cup rice cake crumbs out onto a plate or sheet pan. With wet hands to keep shrimp paste from sticking, form 2 tablespoons of shrimp mixture into a 1/2-inch-thick patty and put it on top of the crumbs. Repeat with remaining shrimp mixture, re-wetting your hands as necessary. Turn the patties over in the crumbs to coat both sides.
  • Heat oil in a large skillet over medium-high. Fry patties in batches until golden brown, 3 to 4 minutes per side. Serve shrimp cakes topped with more basil leaves, with chile-lime sauce for dunking and lime wedges on the side for squeezing.

2/3 cup fresh chives, chopped

36 asparagus spears, trimmed to 6 in lengths
4 tablespoons unsalted butter
2/3 cup shallot, plus
3 tablespoons shallots, chopped
1 1/2 lbs uncooked medium shrimp, peeled, deveined, chopped
1/2 lb sea scallops, chopped
1 1/2 cups fresh white breadcrumbs
1 cup red bell pepper, diced
2 eggs, beaten to blend
1/4 cup chopped fresh chives or 1/4 cup green onion

Steps:

  • Whisk olive oil, chives, lemon juice and shallots in bowl to blend (can be prepared 4 hours ahead. let stand at room temperature).
  • Shrimp cakes: Cook asparagus in large pot of boiling salted water until crisp tender, about 3 minutes. Drain. Refresh under cold water and drain well.
  • Finely dice 4 asparagus spears. Transfer to large bowl. Reserve remaining asparagus for garnish.
  • Melt 2 tablespoons butter in heavy small skillet over medium heat. Add 2/3 cup shallots and saute 2 minutes. Add shallots to chopped asparagus. Mix in shrimp, scallops, breakcrumbs, bell pepers, eggs and chives. Season generously with salt and pepper. Form shrimp mixture into 8 rounds 3 1/2 to 4 inches. Place on baking sheet (can be prepared 2 hours ahead. cover and refrigerate).
  • Melt 2 tablespoons butter in heavy large nonstick skillet over medium heat. Add shrimp cakes and cook in batches until golden brown and cooked through, about 5 minutes per side. Place 1 shrimp cake in center of each plate. Arrange 4 asparagus spears around each shrimp cake, overlapping at corners to form box. Spoon some vinaigrette over. Serve, passing remaining vinaigrette.
  • Note: I add a little lime juice, garlic and ginger and don't use salt.

1 cup chicken stock or canned low-salt chicken broth
1 cup beef stock or canned unsalted beef broth
1/4 cup chopped shallots (2 medium)
24 asparagus spears, trimmed to 3 inches
2 medium russet potatoes, peeled, cut into 1/8-inch-thick rounds
4 teaspoons plus 2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 leek (white and pale green parts only), thinly sliced
1 cup crabmeat (about 5 ounces)
2 tablespoons whipping cream
2 tablespoons minced fresh chives
12 uncooked large shrimp, peeled, deveined, tails left intact

Steps:

  • Boil stocks and shallots in saucepan until reduced to 3/4 cup, 20 minutes. Set aside. Cook asparagus in boiling salted water until crisp-tender, 3 minutes. Transfer to bowl of ice water to cool. Drain.
  • Line microwave-safe plate with plastic wrap. Overlap enough potato rounds (about 12) on plastic to form 4-inch round. Microwave on high until almost tender, about 3 minutes. Transfer potato galette to baking sheet. Drizzle with 1 teaspoon oil. Sprinkle with salt and pepper. Repeat with remaining potatoes and 3 teaspoons oil to form total of 4 galettes. (Reduced stock, asparagus, and galettes can be made 6 hours ahead. Cover and chill.) Melt 1 tablespoon butter in medium skillet over medium heat. Add leek. Cover and cook until just tender, stirring occasionally, 5 minutes. Add crab, cream, and chives; simmer to heat through. Season with salt and pepper. Remove from heat. Cover to keep warm. Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add shrimp; sauté until just opaque in center, 3 minutes. Add asparagus; toss to heat through. Season with salt and pepper.
  • Meanwhile, heat remaining 2 tablespoons oil in another large skillet over medium-high heat. Add galettes and cook until crisp and brown, 1 1/2 minutes per side; transfer 1 galette to each of 4 plates. Bring reduced stock to simmer. Remove from heat. Add remaining 2 tablespoons butter; whisk just until melted.
  • Top potato galettes with crab mixture. Arrange shrimp atop crab. Surround with asparagus. Spoon stock over.

lettuce leaf
1 ounce monterey jack cheese, grated (optional)

Steps:

  • VINAIGRETTE:.
  • Combine salad oil, vinegar, parsley, basil, oregano, salt, cayenne, and pepper in a large mixing bowl or blender and mix until combined.
  • SALAD:.
  • Bring a large pot of water to a boil.
  • Add asparagus and boil 2 minutes, until bright green.
  • Drain and chop asparagus.
  • Place asparagus, shrimp, lemon, and prepared dressing in medium mixing bowl.
  • Toss to combine and refrigerate.
  • Meanwhile, combine red pepper, green onion, and parsley in small mixing bowl.
  • To serve, drain shrimp mixture and arrange on plate with lettuce and cheese.
  • Serve with bell pepper mixture on top of shrimp and asparagus.

Steps:

  • Partially fill a large frying pan with water. Bring to a boil over high heat.

  • Slip asparagus into boiling water. Cook until tender-crisp, 2 to 3 minutes. Drain. Plunge into ice water. When cool, drain. Pat dry with paper towels.
  • Place greens on salad plates. Top with a few asparagus spears. Loosely fold salmon over spears. Drizzle dressing over the top.

6 cups loosely packed mixed greens, washed and dried

Steps:

  • Prepare a charcoal grill or preheat a gas grill to medium. Toss the asparagus with enough oil to coat and sprinkle with a little salt. Put the asparagus on the grill and cook, rolling frequently to avoid burning, until brown and crisp-tender, about 5 to 7 minutes, depending on thickness; remove. Arrange mixed greens on chilled plates or a large serving platter.
  • To prepare the vinaigrette: Whisk together the lemon juice, zest, chives, garlic, sugar and salt and pepper. Whisk in the oil in a slow, steady stream.
  • When ready to assemble the salad, toss the asparagus with enough vinaigrette to coat. Arrange on top of the mixed greens. Sprinkle with the shredded Parmesan and the snipped chives. Pass any additional vinaigrette alongside.

Number Of Ingredients 11

60g unsalted butter
½ tsp sea salt
½ tsp cayenne pepper
½ tsp ground mace
¼ tsp pink peppercorns , lightly crushed using a pestle and mortar
500g asparagus spears, woody ends trimmed
200g peeled brown shrimp (or see tip below)
2 wild garlic leaves , plus a few to serve (optional), or handful finely shredded chervil or chives
1 lemon , juiced
a few chive flowers (optional)
chunks of crusty white bread , to serve

Steps:

  • Put a large platter in the oven to warm up. Gently melt the butter in a small saucepan over a low heat, then stir in the sea salt, spices and peppercorns. Remove from the heat.
  • To cook the asparagus, bring a little salted water (about 5cm deep) to the boil in a saucepan, making sure the saucepan is wide enough to fit the asparagus laying flat without crowding it. Add the asparagus and poach for 2-3 mins, or until a knife inserted into the thickest part of a spear can be pulled out with no resistance.
  • Meanwhile, return the spiced butter pan to the heat, then add the shrimp, wild garlic or herbs and lemon juice, basting the shrimps well. Taste and season, if necessary. Drain the asparagus and pile onto the warm platter, then pour over the shrimps and spiced butter. Garnish with the flowers, if using, then serve with chunks of crusty bread.
