1 pound linguine
¾ cup freshly grated Parmesan cheese
½ cup freshly squeezed lemon juice
¼ cup extra-virgin olive oil
1 tablespoon grated lemon zest
¼ cup unsalted butter
1 ½ tablespoon minced fresh garlic
1 pound large shrimp, peeled and deveined
1 teaspoon sea salt
freshly ground black pepper to taste
2 (14 ounce) cans artichoke hearts in water - drained, patted dry, and quartered
¼ cup minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine in boiling water until al dente, 8 to 10 minutes. Drain, reserving 1 cup water. Whisk Parmesan cheese, lemon juice, olive oil, and lemon zest together in a large bowl until lemon sauce is smooth. Melt butter in a skillet over medium-low heat. Saute garlic cloves in melted butter until fragrant, for 1 minute; add shrimp, season with salt and pepper, and sauté until the shrimp begins to turn pink, for 2 minutes. Stir artichoke hearts in with the shrimp; continue cooking until the artichoke hearts are warmed, for 2 minutes more. Toss cooked pasta, lemon sauce, shrimp, and artichoke hearts together in a large mixing bowl. Add reserved pasta-boiling water, ⅓ cup at a time, and toss until well mixed. Garnish pasta with parsley.

1 lb linguine (reserve 1 cup cooking liquid)
3 Tbsp olive oil
4 Tbsp unsalted butter
3 large or 4 medium garlic cloves (pressed or minced (about 1 1/2 Tbsp))
1 lb large shrimp (21-25 count, peeled and deveined)
1 tsp sea salt for shrimp
1/4 tsp black pepper (freshly ground)
Two 15-oz cans artichoke hearts (not marinated, well drained and quartered)
1/4 cup fresh parsley (finely chopped)
1 tsp grated lemon zest
1/4 cup freshly squeezed lemon juice (from 2 small lemons)
1/2 cup freshly grated parmesan cheese to serve

Steps:

  • Prep: Grate lemon zest from the first lemon then squeeze juice from both lemons. Drain artichoke hearts, cut into quarters and pat dry with papertowels.
  • Cook linguine in a large pot of water with 1 Tbsp salt (8-10 minutes) or according to package instructions. Reserve 1 cup pasta cooking liquid then drain pasta (no need to rinse).
  • Meanwhile, In a large (12-14 inch) heavy-bottomed pan over medium heat, add 4 Tbsp butter and 3 Tbsp olive oil. Once butter is sizzling, add 4 pressed garlic cloves an stir 1 minute. Add shrimp in a single layer and sprinkle with 1 tsp salt and 1/4 tsp black pepper. Saute shrimp 1-2 minutes per side, just until pink and not translucent.
  • Add artichokes and toss to combine for another 2 minutes, or just until warmed through. Remove from heat and stir in 1/4 cup chopped parsley, 1 tsp lemon zest, and 1/4 cup lemon juice.
  • Pour shrimp and artichokes over drained pasta and toss to combine. If juicier pasta is desired, drizzle with reserved cooking liquid from pasta (I added 1/2 cup pasta liquid).

Steps:

  • Make the shrimp: In a medium saute pan, heat the olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. Cook for 2 to 3 minutes per side, or until pink and cooked through. Set aside.
  • Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain, reserving 1 cup pasta water. Meanwhile, whisk the olive oil, parmesan and lemon zest and juice in a large bowl to blend.
  • Toss the pasta with the lemon sauce, shrimp and the reserved cooking liquid, adding it 1/4 cup at a time as needed to moisten. Season with the salt and pepper; stir in the basil. Garnish with the fried capers and more parmesan, if desired.

Steps:

  • Tear off 4 large sheets of heavy-duty foil. Divide the artichoke hearts among the sheets. 1 (14 ounce) can artichoke bottoms, rinsed and drained
1 1/2 lbs medium shrimp, peeled and deveined
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 tablespoons olive oil
1 cup chopped onion
6 garlic cloves, thickly sliced
2 teaspoon lemons, zest of, grated
1/8 teaspoon red pepper flakes
1 cup white wine
1 cup chicken broth
2 tablespoons fresh lemon juice
2 tablespoons chopped parsley
1 lb spaghetti or 1 lb angel hair pasta
1/2 cup diced tomato (optional)

Steps:

  • Rinse and drain artichokes, slice into 1/4 inch slices.
  • Pat the shrimp dry and toss with 1/4 teaspoon each of salt and pepper.
  • In a large sauté pan, heat olive oil over medium-high heat until sizzling.
  • Add half of the shrimp and quickly brown on both sides, about 1 minute per side.
  • Remove the shrimp to a bowl with a slotted spoon.
  • Brown the remaining shrimp and remove to bowl.
  • Decrease heat to medium-low.
  • In the same pan sauté the artichoke slices, onion, garlic, lemon zest, and red pepper flakes until the artichoke slices and onion start to brown,about 10 to 12 minutes.

  • While sauce is cooking, Cook the pasta.
  • Drain pasta and return to pot.

  • Pour sauce over pasta and simmer over low heat, stirring constantly, coating pasta with the sauce, about 2 minutes.
  • Turn pasta out on to warm serving dish.

8 small or 5 medium-size artichokes
Juice of 1 lemon
3 tablespoons extra-virgin olive oil
1 tablespoon Italian parsley
3 large cloves garlic, chopped
2 tablespoons flour
Salt and freshly ground black pepper
16 jumbo shrimp, peeled and de-veined
1/2 cup dry white wine

Steps:

  • If the artichokes are small, trim the stem to within a half inch of the base and remove the tougher outer leaves. Cut each artichoke in eighths and place in a bowl. Toss with the lemon juice and cover with water. Set aside for 15 minutes. If you are using medium-size artichokes, trim the stem flush with the base and remove all the leaves. Using a sharp knife, cut away the center choke, leaving just the fleshy bottom or heart of the artichoke. Cut each in eighths and treat with the lemon as previously described.
  • Drain the artichoke pieces.
  • Heat half the oil in a heavy skillet over medium heat. Add the artichokes, parsley and garlic, reduce the heat to low and cook, stirring from time to time, about 20 minutes until the artichokes are lightly browned and tender when pierced with a sharp knife.
  • When the artichokes are tender, remove them from the skillet. Season the flour with salt and pepper to taste and toss the shrimp in the flour to coat them lightly. Add the remaining oil to the skillet and increase the heat to medium.
  • Add the shrimp to the skillet and stir-fry a minute or two, until they turn pink. Pour in the wine. Cook, stirring, until the wine just films the bottom of the pan. Return the artichokes to the pan, stir, season to taste with salt and pepper and serve.

1 pound frozen halved artichoke hearts (thawed in a strainer), or 2 (14-ounce) cans halved artichoke hearts in water, drained
5 tablespoons extra-virgin olive oil
Kosher salt (such as Diamond Crystal) and black pepper
1 pound spaghetti
6 ounces Parmesan, very finely grated
1 large lemon, zested (about 1/2 heaping teaspoon) and juiced (about 3 tablespoons)
1 tablespoon unsalted butter
1/4 cup torn basil leaves, plus more for garnishing

Steps:

  • Heat oven to 425 degrees. Line a baking sheet with parchment paper.
  • Gently pat the artichoke hearts with a paper towel to remove excess moisture. Place the artichoke hearts in a mound in the center of the baking sheet. Add 2 tablespoons oil and 1 teaspoon salt, season with pepper and gently toss to combine. Scatter the artichoke hearts in an even layer and roast for 20 minutes.   • 1. Pat shrimp dry with pape towels and season with salt and pepper. Combine shrimp, 1 T. oil, garlic and pepper flakes in medium bowl. Cover and refrigerate for 15 minutes.
