Steps:
- In a large, heavy pot combine the first 7 ingredients; bring to boil.
- Meanwhile make meatballs with beef, rice, Worcestershire sauce and add to pot; reduce heat to low and simmer for 2 hours.
- If desired, add raisins and cook an additional 15 minutes.
UNSTUFFED CABBAGE
This is adapted from a Family Circle recipe. If you like Stuffed Cabbage Rolls, you'll LOVE this. I have made this low-sodium, but you can make alterations to add that salty flavor.

- 1. In a large stock pot, brown ground beef (and Italian sausage, if using it) until no longer pink. Drain fat. Stir in onion and cook for 4 mins. Add garlic and cook for 1 min.
- 2. Add diced tomatoes, tomato sauce, and tomato paste. Add water and all seasonings. Simmer for 5 mins. Add cabbage and simmer, covered, for 90 mins., stirring occasionally.
- 3. Some people prefer to add rice as is true to Stuffed Cabbage Rolls. Some serve over mashed potatoes. I prefer to eat mine as a soup or stew.
'UNSTUFFED' CABBAGE WITH A KICK
This is an alteration on a typical stuffed cabbage recipe. It's healthy, low-fat, low-carb, and a bit spicy. You can't go wrong with this recipe! You may omit the red pepper and cayenne if you do not like spicy foods, or increase like we do! We serve this over brown rice to make it more of a whole meal. We love it! I used roasted garlic-flavored tomato sauce for extra 'kick.'

- Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer cooked turkey to a bowl.
- Heat olive oil in the skillet over medium heat; saute onion in hot oil until translucent, about 5 minutes. Add garlic to onion; saute until fragrant, about 1 minute.
- Pour diced tomatoes and tomato sauce over the onion mixture; season with Italian seasoning, basil, red pepper flakes, cayenne pepper, salt, and black pepper. Reduce heat to medium-low and simmer tomato mixture until the tomatoes are softened, about 10 minutes.
- Stir cabbage into the tomato mixture; continue cooking until cabbage is tender, 20 to 25 minutes.
- Stir ground turkey into the mixture; cook to reheat the turkey, 1 to 2 minutes.

- Cook the ground beef and onion in a large nonstick skillet on low heat until meat is no longer pink.
- Add rice, sauce, cabbage, and water.
- Salt and pepper to taste.
- Bring this up to a boil, lower heat and cover and simmer on low heat for 20 minutes.
- Being Italian, I usually use my own homemade sauce when I make this.
- I just measure 26 oz.

- Pour 1 cup of water into a large pot, bring to a boil. Place cabbage strips into the pot.
- Cover the pot. Steam cabbage over medium heat for 15 minutes, stirring occasionally to make sure it doesn't burn.
- Meanwhile, combine paprika, garlic powder, onion powder, ground cloves, 1/2 tsp of salt, 1/4 tsp of black pepper, and 1/4 the can of tomato sauce at the bottom of a large bowl. Stir until well blended.
- Add the ground beef and chicken, egg, bread crumbs or matzo meal, and fresh minced parsley. Adding the bread crumbs will help bind the meatballs and will allow you to make a few more meatballs (stretching the meat), but if you're on a low carb or gluten free diet you can omit them and still get very tasty results. They'll just be a little harder to form smoothly (the meat will be sticky) - but the meatballs will firm up as they cook.
- Mix with a fork or knead with clean hands until all ingredients are thoroughly blended and meat is evenly seasoned.
- Uncover the cabbage and reduce heat to low. Form the meat mixture into 2-inch meatballs and place them in a single layer on the surface of the cabbage. Take care when adding them to the hot pot-don't burn your arm!
- Pour remaining tomato sauce into a mixing bowl with the diced tomatoes, lemon juice, and sugar (the sugar is optional - it cuts the acid in the tomato sauce). Stir until blended, then season the sauce with salt and pepper to taste.
- Pour the sauce over the meatballs.Bring mixture to a simmer and reduce heat to medium low. Cover pot and cook for 75-90 minutes hours over medium low heat until the meatballs are cooked and cabbage is very tender. Stir every 20-30 minutes. If the cabbage seems dry towards the end of cooking, add a little hot water to the pan.
- Give the pot a gentle stir at the end of cooking to blend the sauce, cabbage, and meatballs.
- Serve meatballs on top of the soft cooked cabbage. Garnish with more minced fresh parsley, if desired. Crushed red pepper flakes may be added for spice, according to taste. Serve.

- Preheat oven to 350F.
- Place chopped cabbage in bottom of 8x8 inch baking dish that has been sprayed with cooking spray.
- Brown meat and onions together and drain off all fat.
- Stir in rice and salt and pepper.
