Shrimp and Zucchini Fritters with Yogurt Sauce image

This healthy Shrimp and Zucchini Fritters with Yogurt Sauce recipe is a delicious way to eat your veggies! The yogurt sauce is garlicky with lemon, and the zucchini and shrimp stand out in the simple fritters and are a match made in heaven.

3 medium zucchini (grated)
1/2 lb. shrimp (peeled and deveined and roughly chopped)
2 eggs
1 cup panko breadcrumbs ((plus more if needed))
zest of one lemon
2 tablespoons fresh parsley (minced)
kosher salt (to taste)
black pepper (to taste)
2 tablespoons extra-virgin olive oil (plus more if needed)
lemon wedges (for serving (optional))
3/4 cup Greek yogurt
juice of one lemon
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 clove garlic (minced)

Steps:

  • Spread grated zucchini out on a clean kitchen towel (preferably NOT a paper towel, as they are too fragile) with a pinch of salt sprinkled on top. Allow to sit for 5 minutes for liquid to be released.
  • Using the kitchen towel, squeeze out as much liquid from the grated zucchini as possible.
  • While you are waiting for the zucchini to sit, mix together all ingredients for yogurt sauce. Set aside.
  • Combine squeezed out zucchini, chopped shrimp (1/2 lb.), 2 eggs, panko breadcrumbs (1 cup), kosher salt and black pepper to taste, lemon zest (from 1 lemon), and minced fresh parsley (2 tablespoons) in a large bowl. Mixture should hold together well- if it seems too wet, add some more breadcrumbs.
  • Heat the olive oil (2 tablespoons) in a cast iron or other heavy skillet over medium-high heat. Using a large scoop or a 1/2 cup measure, scoop mixture into hot oil. Flatten tops slightly with a spatula.
  • Cook for 3 minutes, flip, and cook for another 3 minutes, or until golden brown on both sides. Remove and place on a paper towel lined plate.
  • Continue until all of zucchini mixture is used up, adding more oil if necessary.
  • Serve fritters with the yogurt sauce and lemon wedges, if desired. Great on their own or in a pita pocket sandwich.

1 cup mayonnaise
1/2 cup finely minced cornichons
2 tablespoons Dijon mustard
1 teaspoon mustard powder
1 teaspoon finely minced fresh tarragon
1 lemon, juiced
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
2 eggs, separated
8 ounces peeled and cleaned small shrimp (26/30 count), chopped
1 cup finely sliced scallions
1 cup small diced zucchini
1 clove garlic, minced
1/2 jalapeno, minced
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon smoked paprika
About 2/3 cup buttermilk
Kosher salt and freshly ground black pepper

Steps:

  • For the cornichon dressing: In a medium bowl, mix together the mayonnaise, cornichons, Dijon mustard, mustard powder, tarragon and lemon juice. Season with salt and pepper.
  • For the shrimp fritters: Heat about 1 1/2 inches vegetable oil in a heavy-bottomed pot until a deep-fry thermometer inserted in the oil registers 350 degrees F.
  • In a small mixing bowl, whip the egg whites to medium peaks; set aside. In a separate bowl, combine the shrimp, scallions, zucchini, garlic and jalapenos and set aside.
  • Whisk together the flour, baking powder and paprika in a medium bowl. Whisk in the egg yolks and enough of the buttermilk so the mixture is thick and not runny (adjust the amount accordingly). Season with salt and pepper. Fold the shrimp mixture into the batter, followed by the egg whites just to incorporate.
  • Drop the fritters into the oil in batches using a small scoop or spoon, about 1 tablespoon each. Cook until golden brown, about 5 minutes, then drain on paper towels. Immediately season with salt. Serve with the cornichon dressing.

These are a lovely appetizer or snack, but they're so good (and good for you) that I inevitably have more and make a delicious, vegetarian meal of it!

3/4 cup Greek yogurt or 3/4 cup sour cream
2 tablespoons prepared yellow mustard
2 tablespoons water (a little more may be necessary)
2 tablespoons fresh parsley, minced (or cilantro or dill or spearmint or a harmonious combination of any of these fresh herbs)
1 tablespoon lemon juice
1 garlic clove, mashed to a paste
salt and white pepper, to taste
2 lbs zucchini, coarsely-grated with skin on
1 large purple onion, finely-minced
3 garlic cloves, finely-minced
1 tablespoon olive oil
3/4 cup feta, crumbled
1/2 cup fresh parsley, packed minced (or cilantro or dill or spearmint or a harmonious combination of any of these fresh herbs)
1 1/2 teaspoons ground cumin
1 egg, beaten to blend
salt and pepper, to taste
1 cup all-purpose flour
flour, for dredging
oil, to shallow fry (I prefer olive oil)

Steps:

  • For Sensational Dipping Sauce: Combine all ingredients in a mini-processor and whiz to combine. Check for seasoning and add salt and pepper to suit your taste. Thin with a little more water, if necessary. The sauce should be made first to allow flavours to blend and mingle and cool in the refrigerator. (can be made up to 2 days ahead).
  • For Zucchini Fritters: Lightly salt the grated zucchini and put in a colander to drain excess water for ½ an hour to 45 minutes. Squeeze out excess water by pressing on handfuls of zucchini at the end of this time.
  • Wilt the onion and garlic in the 1 tblsp olive oil, in a small saucepan, for 4-5 minutes, or until translucent and softened.
  • Combine all the fritter ingredients in a large bowl to make a uniform mixture (this includes the zucchini and wilted onion mixture). Season to suit your taste with salt and pepper (careful - the feta cheese will already be quite salty, and there will also be salt in the zucchini from the initial draining). The mixture will be soft and sticky.
  • Take a generous tablespoonful of the dough and form (delicately) into a patty. Dredge in flour. Repeat, using up all zucchini mixture.
  • Heat oil in large skillet, over medium-high heat, and shallow-fry patties until they are golden brown. Flip over and repeat on other side. Remove as they are fried to paper towels to drain while you continue with remaining patties in the same manner, topping up oil, if necessary.
  • Serve the patties with the dipping sauce and enjoy!

1/2 teaspoon spice essence or 1/2 teaspoon creole seasoning, plus more for dusting fritters
2 tablespoons unsalted butter
1/2 cup chopped yellow onion
1 pinch salt
3 large eggs, beaten
1 1/2 cups milk
1 tablespoon baking powder
1 1/4 teaspoons cayenne
4 cups all-purpose flour
1 tablespoon chopped fresh parsley leaves
1 lb fresh zucchini (using the small holes on a box grater)
vegetable oil, for deep-frying

Steps:

  • Season the shrimp lightly with the Essence and set aside.
  • In a medium skillet, melt the butter over medium-high heat.
  • Add the onions and cook, stirring, until soft, 2-3 minutes.
  • Add the shrimp and pinch of salt and cook, stirring, until the shrimp turn pink, 2-3 minutes.
  • Set aside to cool.
  • In a large pot or deep-fryer, heat the oil to 360°F.
  • In a large bowl, make the batter by whisking the eggs, milk, baking powder, salt and cayenne.
  • Add the flour 1/4 of a cup at a time, beating and incorporating until all is used and the batter is smooth.
  • Stir in the parsley.
  • Add the shrimp mixture and grated zucchini to the batter and fold to mix.
  • Using a small ice cream scoop or a tablespoon measuring 1-1/2 tablespoons, drop the batter into the hot oil.
  • When the fritters pop to the surface, roll them around with a slotted spoon in the oil to brown them on all side, about 3 minutes.
  • Drain on paper towels and season with additional Essence.

1 lb about 2 medium zucchini
1 teaspoon coarse salt, plus extra to taste
2 scallions, split lengthwise and sliced thin
1/2 teaspoon fresh ginger
1 garlic clove, minced
1/4 teaspoon lemon zest
1 large egg, lightly beaten
fresh ground black pepper
1/2 cup all-purpose flour
1/2 teaspoon baking powder
oil, of your choice for frying
1 cup sour cream, full-fat yogurt or 1 cup plain full-fat yogurt
1 -2 tablespoon lemon juice
1/4 teaspoon lemon zest
1 pinch salt
1 teaspoon honey

Steps:

  • Trim ends off zucchini and grate them either on the large holes of a box grater or, if you have one, using the shredding blade of a food processor. The latter is my favorite as I'm convinced it creates the coarsest and most rope-like strands and frankly, I like my fritters to look like mops.
  • In a large bowl, toss zucchini with 1 teaspoon coarse salt and set aside for 10 minutes. Wring out the zucchini in one of the following ways: pressing it against the holes of a colander with a wooden spoon to extract the water, squeezing out small handfuls at a time, or wrapping it up in a clean dishtowel or piece of cheese cloth and wringing away. You'll be shocked (I was!) by the amount of liquid you'll lose, but this is a good thing as it will save the fritters from sogginess.
  • Return deflated mass of zucchini shreds to bowl. Taste and if you think it could benefit from more salt (most rinses down the drain), add a little bit more; we found 1/4 teaspoon more just right. Stir in scallions, ginger, garlic, lemon zest, and egg and some freshly ground black pepper. In a tiny dish, stir together flour and baking powder, then stir the mixture into the zucchini batter.
  • In a large heavy skillet - cast iron is dreamy here - heat 2 tablespoons of oil over medium-high heat until shimmering. Drop small bunches of the zucchini mixture onto the skillet only a few at a time so they don't become crowded and lightly nudge them flatter with the back of your spatula. Cook the fritters over moderately high heat until the edges underneath are golden, about 3 to 4 minutes. If you find this happening too quickly, reduce the heat to medium. Flip the fritters and fry them on the other side until browned underneath again, about 2 to 3 minutes more. Drain briefly on paper towels then transfer to baking sheet and then into the warm oven until needed. Repeat process, keeping the pan well-oiled, with remaining batter. I like to make sure that the fritters have at least 10 minutes in the oven to finish setting and getting extra crisp.
  • For the topping, if using, stir together the sauce ingredients and adjust the flavors to your taste. Dollop on each fritter before serving. These fritters are also delicious with a poached or fried egg on top, trust me.
