2 tablespoons oil, divided
1 lb raw shrimp, peeled and deveined
2 teaspoons chesapeake bay seasoning
6 oz sausage
½ cup water
½ yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 zucchini, chopped
½ cup corn
1 carrot, diced
2 cloves garlic, minced
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
fresh parsley, chopped, for serving
rice, cooked, for serving

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add shrimp to skillet and season with Chesapeake Bay seasoning.
  • Cook shrimp 3-4 minutes, or until opaque. Remove from skillet and set aside.
  • Heat oil in a large skillet over medium-high heat.
  • Add sausage to skillet.
  • Cook until browned, turning links frequently.
  • Reduce heat to medium-low and add water to skillet.
  • Cover and simmer for 12 minutes. Remove from skillet and set aside.
  • Add onions and bell peppers to the same skillet and cook for 2 minutes.
  • Add chopped sausage, zucchini, corn, and carrot and cook for additional 2 minutes.
  • Stir in shrimp and garlic.
  • Pour chicken stock into pan and stir until well-incorporated.
  • Add salt and pepper.
  • Remove from heat.
  • Top with parsley and serve over rice if desired.
  • Enjoy!

2 cups carrots, sliced
3 cups cooked rice

Steps:

  • Slice sausage, carrots and broccoli.
  • Cook rice according to package, making enough for three cups.
  • Spray pan with cooking spray, add sausage and saute until lightly browned.
  • Add vegetables, stir and cover to let simmer for five to seven minutes until vegetables are tender.
  • Serve over a generous portion of cooked rice and enjoy.

2/3 cup flour
1/2 cup olive oil
1 large bell pepper, chopped
1 medium sweet onion, diced
3/4 cup carrot, diced
3 stalks celery, chopped
6 garlic cloves, minced
1 tablespoon jalapeno, chopped
1 (10 ounce) package frozen okra, thawed
2 (16 ounce) cans diced tomatoes
1 (16 ounce) can corn, drained
6 cups chicken broth
1 teaspoon thyme
1 teaspoon basil
4 bay leaves
1 1/2 teaspoons hot pepper sauce
1 teaspoon salt
1 teaspoon cumin
1 teaspoon black pepper
4 tablespoons Worcestershire sauce
2 cups wild turkey breast, cubed
2 cups shrimp, cooked
1 cup kielbasa, cubed
cooked rice

Steps:

  • Add oil to skillet, heat over medium heat slowly mixing in the flour to make a roux. Keep cooking and stirring until it is a dark golden brown. Be patient it can take awhile, if you burn it start over.
  • Keeping the pan on medium heat stir in the onion, bell pepper, garlic, carrots, celery and black pepper. Cook for about 3 minutes or just until the vegetables start to turn tender.
  • Transfer to a large soup kettle, use medium heat, gradually stir in the broth, tomatoes, salt, worcstershire sauce, hot pepper sauce, basil, thyme, cumin, bay leaf, corn, jalapenos and okra.
  • Bring to a boil then add the turkey and sausage, when it reurns to a boil, reduce to heat to a simmer.
  • Cover and simmer for about 30 minutes.
  • Add the shrimp during the last 5 minutes.
  • Serve over hot cooked rice (basmati).

It was originally a "random stir-fry" because I simply used what I had in my refrigerator. I also experimented with Worcestershire sauce this time. It's not a traditional ingredient that we would use for stir-fry. I did love the outcome. The combination of onions, bell peppers, turkey sausage and shrimps makes this dish look colorful and go very well with rice. Plus, it is healthy!

4 tablespoons grapeseed oil
1/2 onion, chopped
3 teaspoons ground black pepper
7 ounces turkey sausage, cut into small pieces
1/2 cup yellow bell pepper, seeded and chopped
1/2 cup red bell pepper, seeded and chopped
1 large green pepper, seeded and chopped
12 shrimp, peeled and deveined
1 tablespoon Worcestershire sauce
1/2 teaspoon sea salt (to taste)

Steps:

  • In a wok, heat grape seed oil over medium high.
  • Stir-fry onion and ground black pepper until onion becomes transparent. Add turkey sausage and stir-fry for about 3 minutes.
  • Stir in all bell peppers, Worcestershire sauce, shrimps and sea salt. Stir-fry until peppers turn soft and shrimps are cooked and turn red.
  • Serve hot with rice.
