2 lbs lean ground beef
1 cup dry breadcrumbs
2 eggs, beaten
1 chopped onion
1 chopped bell pepper
1 cup chopped mushroom
3/4 teaspoon salt
1 teaspoon leaves oregano
1 (15 ounce) can tomato sauce
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
2 (8 ounce) cans crescent rolls

Steps:

  • In large bowl, combine beef, crumbs, egg, onion, salt and oregano. Stir in 1/2 tomato sauce; set aside.
  • Cut 2 pieces of waxed paper 15 inches long. Unroll crescent roll dough and don't separate. Lay end to end on top of wax paper and place second piece of wax paper on top. Now take rolling pin and roll the dough out till it's half the thickness that it was originally .
  • Place meat mixture in center and spread out over dough. Sprinkle meat with cheese, bell pepper & mushrooms & top with remaining tomato sauce.
  • Roll up meat, jelly-roll fashion, starting at narrow end; use wax paper to help.
  • Place seam side down in non-stick 9-1/4-in. x 5-1/2 inches x 2-3/4-in. bread pan.
  • Bake at 375 degrees F for 30 minutes. Drain off any fat that accumulates & then return to oven for 30 minutes.

This meatloaf is extremely juicy, and the potential variety of different flavors is as big as your imagination. I've done American cheese with ketchup and mustard on top and served with dill pickle chips. Another one might be Swiss cheese and mushroom topping.

2 pounds ground beef
¾ cup fresh bread crumbs
½ cup minced onion
2 eggs, beaten
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
3 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.
  • Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

This recipe is a really nice change from regular meatloaf. It was made by the mother of "Steven", one of the co-hosts of a popular Canadian daytime lifestyle show called Steven & Chris. I hope you enjoy this comfort food as much as my family did.

2 lbs ground beef
1/2 cup dried breadcrumbs
1 egg, beaten slightly with fork
3/4 teaspoon salt
2 -3 cups mashed potatoes, doesn't have to be exact
2 eggs, hard boiled and chopped fine
1/3 cup Miracle Whip, if using 2 cups potatoes, 1/2 cup Miracle Whip for 3 cups potatoes
1/3 cup parmesan cheese, grated
1/3 cup celery, very finely chopped
1 green onion, finely chopped
salt and pepper, to taste
1 cup Miracle Whip
1/3 cup whole milk
1 green onion, finely chopped

Steps:

  • Combine meat, crumbs, egg and salt and mix well.
  • On wax paper or parchment paper, pat meat mixture evenly to a rectangle about 12" x 14".
  • Combine mashed potatoes, finely chopped hard-boiled eggs, salad dressing, parmesan cheese, celery and green onion.
  • Mix and season with salt and pepper.
  • Spread potato mixture evenly over meat and roll up jelly roll fashion, starting with the narrow end.
  • Chill several hours or overnight in fridge.
  • Slice the roll in 10 slices, approximately 1 1/4" for each slice.
  • Lay meatloaf slices on a cookie sheet sprayed with Pam or lined with parchment paper.
  • Bake at 350 - 25 to 30 minutes.
  • Mix sauce ingredients together and heat over low temperature.
  • Pour over meatloaf and a side dish of veggies and enjoy!

1 teaspoon olive oil
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped celery
1 (14.5 ounce) can whole peeled tomatoes with juice
1 (8 ounce) can tomato sauce
1 ½ teaspoons Italian seasoning
1 teaspoon white sugar
1 ½ teaspoons dried oregano
¾ teaspoon garlic powder
1 teaspoon Worcestershire sauce
2 cups water
¼ cup chopped fresh parsley
1 ½ pounds ground beef chuck
½ cup Italian seasoned bread crumbs
1 teaspoon garlic powder
1 teaspoon Creole seasoning
1 pinch cayenne pepper
½ teaspoon salt
1 ½ cups shredded mozzarella cheese
¼ cup chopped fresh parsley
2 teaspoons Italian seasoning

Steps:

  • To make tomato sauce, heat olive oil in a saucepan over medium-low heat; cook and stir the onion, green pepper, and celery in the hot oil until the onion is soft, about 5 minutes. Pour the undrained whole tomatoes, tomato sauce, 1 1/2 teaspoons Italian seasoning, sugar, oregano, 3/4 teaspoon garlic powder, Worcestershire sauce, and water into a blender and blend until smooth. Pour the tomato mixture into the saucepan and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in 1/4 cup parsley. Set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together the ground beef, bread crumbs, 1 teaspoon garlic powder, Creole seasoning, cayenne pepper, and salt until the mixture is thoroughly combined; spread into the bottom of the prepared baking dish.
  • Scatter the mozzarella cheese over the meat; spread 1/4 cup of the sauce over the cheese. Sprinkle the sauce with 1/4 cup chopped parsley and 2 teaspoons of Italian seasoning. Pick up one end of the meat layer (short side), and gently roll the meat around the filling. Reposition the meat roll in the center of the dish, and pour the remaining tomato sauce over the roll.
  • Bake in the preheated oven until the roll is no longer pink in the center, 45 minutes to 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

This is an awesome meatloaf recipe that I just made up working with ingredients on hand. It may sound odd, but once everything is baked together it turns out delicious!

1 lb ground beef
1/2 lb hot pork sausage
1/4 cup breadcrumbs
1/2 cup milk
1 egg
2 teaspoons red pepper flakes
2 teaspoons thyme
1 tablespoon basil
1 teaspoon paprika
1 teaspoon garlic powder
salt and pepper
1 small onion
1 cup fresh parsley
3/4 cup golden raisin
3/4 cup ketchup
1/4 cup red wine vinegar
1/4 cup honey

Steps:

  • Heat oven to 375.
  • Mix meats, bread crumbs, milk, egg and seasonings together. Lay out a large piece of waxed paper, lightly sprayed with cooking oil.
  • In a food processor mix onions, parsely and golden raisins. (raisins may stay whole, that's ok!) If you do not have a food processor just chop onion and parsley. Mix sauce ingredients together, set aside.
  • Spread meat onto waxed paper in an 11 by 9 inch rectangle.
  • Spread parsley onion mix evenly on top.
  • Start on one of the 9 inch sides and begin rolling the meat tightly. (Like a jelly roll) Lift into a lightly greased loaf pan.
  • Bake for 1 hour at 375. Add sauce to top of meatloaf 1/2 way through cooking time.

1 lb ground turkey (or use 2 lbs ground turkey)
2 eggs, beaten
2 slices fresh bread, blended to coarse crumbs
1/4 cup ketchup
1/4 cup milk
1/4 cup instant minced onion
1 1/2 teaspoons sodium-free salt or 1 1/2 teaspoons salt
1/4 teaspoon fresh ground pepper
1 teaspoon dried oregano
1/2 teaspoon onion powder
1/4 cup wheat bran
1/4 cup flax seed meal
4 turkey slices (packaged lunch meat)
5 slices swiss cheese
2 cups fresh spinach
1/2 cup brown sugar
1/4 cup Dijon mustard or 1/4 cup spicy brown mustard

Steps:

  • Preheat oven to 350°F.
  • In a large bowl mix all meatloaf ingredients together EXCEPT turkey, cheese and spinach.
  • Pat onto a 12x12 sheet of aluminum foil pushing to edges.
  • Lay turkey slices on top, keeping 1 inch (2.5 cm) in from edges.
  • Spread spinach over ham. Roll up starting from long end, removing foil as you go.
  • Carefully transfer to baking sheet with sides or a jelly roll pan. Pat in sides of meatloaf roll to smooth them.
  • Mix topping ingredients in a small bowl and pour over the meatloaf, covering all parts.
  • Bake for 1 hour.

This meatloaf is quite different from the other 1261 (at time of posting) meatloaf recipes. I got this recipe from Jean Pare's Company's Coming for Christmas cookbook. I have made this several times for company and also for "freezer shower" contributions after friends have had babies. So far, everyone who has tried it really likes it. I hope you will, too! Enjoy!

10 ounces frozen spinach, thawed and squeezed dry

  • Place first 9 ingredients in large bowl. Mix well. Pat out on sheet of foil to 10 x 12 inch (25 x 30 cm) size.
  • Lay ham slices on top, keeping 1 inch (2.5 cm) in from edges. Spread spinach over ham. Roll up starting from long end, removing foil as you go. Carefully transfer to baking sheet with sides. Pat in sides of meatloaf roll to smooth them. Bake in 350°F (175°C) oven for 1 1/4 hours.
  • Put grated mozzarella cheese on top of meatloaf. Return to oven for 1 to 2 minutes until cheese starts to melt. Cut into slices to serve.
  • NOTE: I frequently will place a wire rack in the baking sheet and transfer the meatloaf, foil and all, to the rack. I then poke holes in the foil to allow the fat to drain away from the meatloaf.
